  1. I hadn't really thought about it in a comparison sort of way vs. years past. Same thing, I don't really "need" anything other than I need some underwear replaced because I destroy socks (don't ask.... , I sort socks into several categories of failure, of what could be worn in public if I were to suddenly have to take my shoes off, or not ) or my washer...
  2. Your son will be starting school soon. You can't imagine what it is like to have had the neurological problems of gluten intolerance, and be stuck in that situation trying to concentrate and focus, without the diagnosis because the stereotypical symptoms are only gut problems and weight loss. Gluten can cause brain damage and vision damage and loss of coordination...
  3. Watch out for the Splenda, especially the bulk splenda which may have fillers in it, which might not be entirely gluten free. That was one of the things I had to give up last year, switched to a gluten free stevia for low sugar baking. Also, Crisco has soy in it, and some people don't do well with soy, but there are many other oils such as palm shortening...
  4. I'm sorry, but.... I really just don't understand this, you say you have villous atrophy but you're back on a gluten FULL diet for testing, yet you're low on iron ? Uh, no wonder. B Vitamin malabsorption causes anemia sometimes. You know, these doctors get paid for testing you, they don't get paid if you just eat gluten free for long enough, (and supplement...
  5. Sort of goofy title, very good writing about celiac, quoted paragraph is reaction to a loaf of gluten free bread. Denseness happens, it's not the end of the universe .
  6. These are symptoms of ataxia, dear. It's a neurological condition that goes along with celiac. Cheer up, once you stick to the diet strictly, it starts to go away, as long as you are careful and diligent, and secondly, it's the best motivator I've ever had to stay on a gluten free diet. Sometimes this means we are really sensitive to cross contamination...
  7. Fear not the nuts if it "ever comes to that" or if you gain more energy and want to experiment some time. Nuts are the easiest to grind (into a meal that can be used for baking) in a blender, I have used the same (dedicated, as this is all it does) blender for doing this for going on 9 years, and it still doesn't have a problem other than I need to...
  8. Can you do chia seeds soaked in room temperature water to make "chia gel" to replace gums ? About a teaspoon per cup of gluten-free flour mixture. The flours that are good without gums are amaranth, buckwheat, almond meal, and tapioca, all are naturally "sticky." If you can find a source of them that is not corn- contaminated, you can mix them in 1/...
  9. You would be surprised with what you can make with "just" olive oil.
  10. For reasons unknown, those with real gluten problems, who quit ingesting gluten for a period of time, then resume, frequently feel the bad effects much worse than before they quit. This is called a "gluten challenge." It is also done with other foods, you stop eating it, then reintroduce it and see what happens. A normal person, say, someone like my spouse...
  11. Agree about the buckwheat, the only buckwheat I don't react to (knock on wood) is one brand, Pocono, which I then take the plain "cereal" and grind myself in a coffee grinder. The ingredients for the Julian zero carb bread are water, gluten free oat fiber, egg white, psyllium, olive oil, apple cider vinegar, baking soda. There is no way a beginning gluten...
  12. If these researchers are so brilliant at creating a future "cure," then why don't they work on finding a "diagnosis" that doesn't make patients deathly ill why they are at it, is this too much to ask ? Otherwise, considering that the Orig. Poster is in the UK and on the NHS, plus has other auto immune thyroid problems, she has to deal with THAT system...
  13. Gluten free food isn't as expensive as slowly dying of malnutrition because the auto immune reaction is destroying your intestinal lining. If you want your kid to have a healthy and functional parent, you will do this. It merely requires one to make some substitutions on what brands of foods are purchased, tweaking a few recipes, and becoming a fanatical...
  14. I don't have roseacia but do have super sensitive skin, and am still entranced that my hair grew back in much thicker since the diet change. But it is also curlier. The grey grew in a LOT darker, much darker than I've had my normal hair be, so it gets colored. We are also on well water here, and I notice several of the neighbors (without my saying anything...
  15. You noticed that all the corporate entities we had during the last election on Nov 6 2012 here in CA that were flooding the airwaves and innertubals with their anti - GMO foods labeling invective against Proposition 37 were already using GMO's (mostly in the form of Corn- sourced) in their food and ingredient products ? The (Traditional) Food Industry...
  16. This is a press release from what traces back to the wheat lobby pushing changes in the school lunch program so they can continue to get U.S. Federal Ag subsidies and have product placement in a captive market. By the way, there goes Shelley Case, "registered dietician" again, trying to have her status as "the" gluten free expert and pushing the...
  17. This article seems to contradict what I have recently read from the WSU researchers that they would "like" to create a GMO wheat, but they think they would have to quote, jump thru too many regulatory hoops to do so. The article also does not give the source for the statement for the false claim that a wheat- free diet damages the composition of gut bacteria...
  18. It's never clear which one of them is actually in need of the gluten free special occasion cake, or if they are sharing it with someone outside the family, but it's nice that they are doing it.
  19. One should not start to read this thread with a mouthful of coffee...... unless there is a protective cellophane barrier on the keyboard. The ultimate "to hell with it" option is to just skip the bread and use pecans and sauteed zuchini and mushrooms, maybe some butternut or pumpkin chunks or eggplant. I had some chebe biscuits I was going to...
  20. I had to break the processed cereals habit, altho I was sort of entranced with some of them when they first came out, and went thru several boxes of them. The only "cereal" type thing I eat now is a plain Lundberg brown rice cake. Otherwise, it is plain cooked rice, to which many different things can be added, oil, butter, garlic, nuts, raisins, pumpkin...
  21. It sounds like inflammation of the connective tissue of the ribcage, aka costochondritis, which can go along with certain forms of auto immune diseases and arthritis. I have had this really badly in the past, and oddly enough, less badly after getting kicked squarely in the chest years ago by a rather ornery young horse (it didn't kill me, but for about...
  22. Well, when the doctor tells you to take a vitamin..... iron absorption is helped by the consumption of proper nutrients, all working together. So you should be taking a gluten free B complex, a multivitamin (you can buy these without iron, like the "senior" or "over 55 plus" versions) and a calcium/D/magnesium type of mineral supplement. You can take...
  23. Did they check your thyroid antibodies, as well as the levels of the thyroid hormones ? If they don't look for it, they can miss auto immune thyroid disease (Hashimoto's). This basically cycles your thyroid into periods of overdrive, so you "test out" with supposedly normal thyroid levels, but there is still a problem. Hormones- as women age, the levels...
  24. I get sick when I eat gluten, so I am highly motivated to avoid it. I don't have a formal diagnosis, either. I knew within 24 hours that I had found what was bothering me, but I wasn't taking a bunch of masking medications, and I pay close attention to how I feel and react to things. I had lots of non gluten food in the house, which is really important...
