You can't imagine what it is like to have had the neurological problems of gluten intolerance, and be stuck in that situation trying to concentrate and focus, without the diagnosis because the stereotypical symptoms are only gut problems and weight loss. Watch out for the Splenda, especially the bulk splenda which may have fillers in it, which might not be entirely gluten free. That was one of the things I had to give up last year, switched to a gluten free stevia for low sugar baking. Also, Crisco has soy in it, and some people don't do well with soy, but there are many other oils such as palm shortening... -

These are symptoms of ataxia, dear. It's a neurological condition that goes along with celiac. Cheer up, once you stick to the diet strictly, it starts to go away, as long as you are careful and diligent, and secondly, it's the best motivator I've ever had to stay on a gluten free diet. Did they check your thyroid antibodies, as well as the levels of the thyroid hormones ? If they don't look for it, they can miss auto immune thyroid disease (Hashimoto's).
