  1. He might be able to get some lactose back, but first he's going to have to go off of it for a while, because the same part of the intestine lining that got damaged by gluten, is the part that digests lactose. If he's really sensitive to all dairy now, there are lots of non- dairy alternatives, as mentioned above. And there is no reason I can think of that...
  2. Adalaide, you can freeze the milk into ice cubes, and use that.
  3. They are just going to have to suffer with the Lara bars, the Kind bars, the coconut macaroons, the enjoy life chocolate chips melted on crumbled rice cakes with coconut flakes, the bananas, apples, etc. Cookies sound so horrible right now. Something other than gluten is kicking both me and my spouse's guts a bit from the salads we had for lunch. I...
  4. It took me longer than 6 to 8 weeks to get rid of it, it was a long, hard slog, but I had had this damage for decades and it was getting blamed on something else.
  5. I hate to say this because it sounds trite, but, I think maybe you are going to need counseling, because given your health relies on your being gluten free, it seems that this is really irresponsible behavior on the part of your spouse to throw another wrench into the family meal planning process, which seeks to eliminate another entire category of proteins...
  6. Celiac causes malnutrition..... your body just woke up to it. Try eating more good fats, such as olive oil, coconut products such as coconut milk, nuts, avocados, etc, and more protein, less carbohydrates. That will help keep your blood sugar from going on a roller - coaster. Also, taking a B vitamin complex and a calcium/D/magnesium supplement helps...
  7. If you want it to be tasty, the best thing to do is to figure out which ones you like, then make a mixture or blend. In general, it takes a minimum of three gluten free flours, mixed, to get something that tastes okay and performs sort of like a regular flour, as the better tasting ones tend to be higher protein but low starch, and the starchier ones are...
  8. Yup. There are as many ways to work around eggs as you can imagine. Just add some other sort of fruit, seed, or vegetable matter with the ability to firm up to add structure when it's cooked, plus a little fat and maybe a little bit of lift from a leavening ingredient such as baking soda and an acid such as vinegar, and it works. I have played with soaked...
  9. Open Original Shared Link Where you can check out the ingredients on these new products, plus the other items they make. As long as they don't mess up and put flax in the bagels, I'm okay.
  10. If you are celiac, then you have to stick to the gluten free diet. That is your first priority, because not doing so will otherwise give you food cravings. Gluten is addictive. If you fall off the wagon or cheat, you start the cycle all over again of having an auto immune reaction, damage, and malnutrition/poor absorbing of nutrients. The second priority...
  11. The nuts are pretty small in them and not real hard, but yes. Maybe some medjool dates, then ? Maybe put some peanut butter in them, they'd be like a homemade soft textured Lara bar. Or a banana ? Plain sugar after plain cereal chex, I would be unconscious. You need protein & fat.
  12.  This ^. Try presoaking the rice pasta in cold water, drain, then boil for a much shorter period of time. He needs to SUAMHOP. Hand him the bag of noodles, smile, and point to the refrigerator as you head out the door for a pedicure or something. Easiest thing to do is take the supposedly too mushy leftover...
  13. Can you do Lara bars ?
  14. Oh, and I told current doc hell would freeze over before I would ever touch gluten again, and at that time I had been off of it about 5 years. Don't even think to mention "gluten challenge" to me. Or I will go get my old cane out of the car and start thwacking an insurance rep with it.
  15. I was several years into having it and being told it was probably an MS flare, (but previous MS testing was negative, also) and went thru several doctors and insurance plans before the neurologist from hellâ„¢ finally condescended to do a brain scan, and lo and behold, I had brain lesions- but not the MS kind. I got the test reports from her office after s...
  16. 1. Yes. Anytime. 2. Yes. 3. Yes. 4. Try to eat a little bit of gluten each day before any tests, if possible. (Beginning of January? 2 months? R-U-KidN-Me ? Any primary care doctor can request a celiac blood panel. Draw blood, send to lab, tah- dah. No need to wait that long, esp. if you have debilitating symptoms.) Then, no matter what the outcome...
  17. There's so many..... where would I start. The waitress last weekend, at a restaurant which has a gluten free menu, that we eat at once in a while, who proudly announced that the brand of beer they carried was gluten free. It wasn't. Fortunately I have the knack of remembering details AND I don't drink beer anyway, but imagine how many others she...
  18. I kept reading this, and am bemused by doctor claiming that most celiacs are undiagnosed, but he is acknowledging that there does seem to be a much large population of the merely gluten intolerant, successfully eating gluten free without the official diagnosis, but he can't quite give up the "it could be for the wrong reasons" yet. I was snooping...
  19. Sigh. It's as if the cross contamination issue is always forgotten in one of these pieces.
  20. As love2travel says, you can learn to make freshly baked gluten free bread and baked goods, even pizza crusts, that are acceptable. Tasty bread type items can be made out of almost anything if you find yourself with further restrictions, such as tapioca, seeds, nuts, coconut, beans, bananas, sweet potatoes..... You know that you have done a major score...
  21. Do you sit with your chin resting on your hand, by any chance ? Topical transfer of some unknown is possible.
  22. There is a 100% chance of dying sometime during your lifespan ! OMG ! Buy this supplement and buy this book ! And I say that as a person who's eaten a Specific Carbohydrate Diet and who is probably lower grain carb than a lot of gluten intolerants.
  23. You graze in the refrigerator. You eat enough of the stuff without sugar that you are full.
  24. Not sure why you are questioning the celiac disease theory, if the tTG changes when he is on the gluten free diet. He could have additional food intolerances. He could be sensitive to cow dairy, all dairy, soy, even the gluten free oats. I had to quit using a certain brand of gluten free flours because of the oats issue about 10 months ago, but it made...
  25. I am not trying to be sarcastic, but.... whatever the h*ll is wrong with your boyfriend's mother ?! Okay, now that we got that out of the way, you need to take charge of your own shopping, preparing, and eating, and if they can't cooperate a bit, you will need to find another set of humans to co-habitate with. I suggest you immediately have...
