ARCHIVED Getting Over Other Food Intolerances
dbmamaz replied to Laura Wesson's topic in Food Intolerance & Leaky Gut
I kinda want to try NAET, but havent gotten there yet. Lots of people insist it sounds like quakery (and it does sound like quackery) but others swear it worked for them. -
ARCHIVED Hard Time Finding Something
dbmamaz replied to mcs1984's topic in Parents, Friends and Loved Ones of Celiacs
The book gluten free baking classics has a cheese puff recipe - i havent tried it because we dont do dairy any more (/cry) but it might be worth checking out. It looked more like a cracker, i think -
I have Annalise Robert's Gluten Free Baking Classics and her sandwhich bread has been my biggest success. I had a total failure w lorka's bread as well, and we didnt even like the flavor. The first time I made Robert's sandwhich bread, it fell badly, but my son still ate 3 pieces while it was warm. I finally gave in and bought a smaller (8x4) pan and a...

Wow, i'm so glad people are using this recipe! I've been making them all summer, and i vary it a bit here and there, but I havent actually done chocolate chips yet - my son sometimes gets a rash around his mouth from chocolate (tho i did make him brownies for the first week of school ) -
ARCHIVED Newbie..need Help With Bread Please
dbmamaz replied to Mandy2's topic in Gluten-Free Foods, Products, Shopping & Medications
If you want to try baking - just be patient! I was an avid baker for my whole life (i'm 43) and my first dozen bread attemps (well, at least half dozen) were totaly flops. I finally have had success with the sandwhich bread recipe in Annalise Robert's book, 'Gluten Free Baking Classics'. I did buy a thermometer, and at first, a smaller bread pan. Now... -
ARCHIVED Chebe!
dbmamaz replied to HeartofGlass224's topic in Gluten-Free Foods, Products, Shopping & Medications
I was using chebe for rolls for my son when we first went Gluten-free Casein-free, because my earliest yeast breads were flops. He was happy w the chebe shaped as sub rolls - i did not use cheese, kneaded in the machine a long time, added the baking soda, and they came out kinda flat and somewhat chewy in the middle. I read on this forum that you should... -
ARCHIVED Good Tasting gluten-free Bread For Sandwiches?
dbmamaz replied to Lpa's topic in Gluten-Free Foods, Products, Shopping & Medications
After 8 mo of trying, i've managed to make bread. Well, I cant eat it, but my son says its absolutely the best gluten-free bread he's had (he's been gluten free for about 3 months). I used the sandwhich bread recipe from gluten free baking classics, no bread machine, but i did have to buy a bread pan and a thermometer. He's been eating cinnamon toast ... -
ARCHIVED Allergic To Tapioca And Soy
dbmamaz replied to Johanne's topic in Gluten-Free Recipes & Cooking Tips
I've been subbing soy for garfava flour, for my garbanzo-allergic son. I've only managed to make a few bread items i can eat w/out tapioca, but i cant eat yeast either. You can try various other starches - but tapioca seems to be one of the best. Any specific recipes you need help w? -
ARCHIVED One Year Old Has Her Third Bout With A Urinary Infection
dbmamaz replied to sandpiper's topic in Parents, Friends and Loved Ones of Celiacs
My sister had them, had surgeries and tons of antibiotics and nothing cleared it up. She was also allergic to corn, but never really went corn free. I recently read that corn allergy can cause utis. I'm a big fan of a sensitivity test called A.L.C.A.T (if you spell w/out the dots, it gets altered ...) you could use that to look for problem foods and see... -
ARCHIVED Good Chocolate Chip Cookie Mix Or Recipe?
dbmamaz replied to munchkinette's topic in Gluten-Free Recipes & Cooking Tips
I made the recipe from the book gluten free baking classics, and thought it was the best chocolate chip cookie i'd ever had. You do have to make sure to use extra-fine rice flour. -
ARCHIVED Inability To Properly Absorb Water?
dbmamaz replied to Woolygimp's topic in Coping with Celiac Disease
I drank gatoraide for years when I got that really bad thirsty feeling. I discovered it fairly late in life, and was just thrilled how much it helped. When i met my 2nd husband, he was kinda thrilled becuase he'd never met a woman who drank it I was also noticing that i'd gone thru this summer and only wanted gatoraide one or two times and was really... -
ARCHIVED Anyone Have A Recipe For Sub Sandwich Bread?
dbmamaz replied to GlutenGalAZ's topic in Gluten-Free Recipes & Cooking Tips
How funny, as sson as I tear myself away from the computer, I plan to make rolls (from the sub sandwhich roll recipe in the gluten free baking classics) in the 4-inch cake pans I bought at target. I did try making french bread once (we hated the taste and texture tho) - i took tin foil and shaped pans out of the foil, folding the ends over to make them keep... -
ARCHIVED Some Of Your Favorite Things?

top gluten-free snack .. . corn chips and hummus! I also like to eat pecans out of the bag. cereal - my son really missed the cereal w used to get - a generic called oats-n-more, which is one of those flakes and nuggets cereals. We recreated it by combining gluten-free corn flakes (I cant remember the name, but they say gluten-free on the front, and... -
My withdrawal was different, i felt dizzy for 2 weeks. Well, not exactly dizzy but sort of dizzy, i couldnt find anything that sounded like it on line, it except someone describing how they felt when they had withdrawal from a psych med . . . I also had dark circles under my eyes for a few days. However, my stand-by snacks for when I'm feeling hungry...

ARCHIVED Pizza And Bagels: Can Non-gluten Types Compete?
dbmamaz replied to celiachap's topic in Gluten-Free Recipes & Cooking Tips
I tried buying gluten-free frozen pizzas for my son twice - one he ate and one he didnt. THen we had more testing done and realized he's allergic to tomatos, and even tho it didnt show up on tests, I swear dairy makes him stammer more. I made a from-scratch pizza with gluten-free crust (recipe from gluten free baking basics), home-made nomato sauce (base... -
ARCHIVED Gluten-free Poptarts Substitute?
dbmamaz replied to Ashley's topic in Gluten-Free Foods, Products, Shopping & Medications
Me too! I totally gave up ... i only tried three times, but i'd read something on line about how many times she'd scraped a perfectly good pie filling off an inedible pie crust. I did read that you can just make a crumb crust instead, which i didnt get around to trying. but i was tempted to try using my sugar cookie recipe (but of course, I make it for... -
ARCHIVED Question About Removing Dairy And Soy
dbmamaz replied to leadmeastray88's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
However, you can also have some random symptoms while you are healing, as your intestines rebuild themselves. You might just try to keep better track of the dairy and the soy, and see if the cramps seem related to these foods. You could keep a journal, or avoid them for a week or two and then add them bcak one at a time - to see if YOU have a problem with... -

ARCHIVED Peach Cobbler - Family Loves It!
dbmamaz posted a topic in Gluten-Free Recipes & Cooking Tips
I started putting this recipe together for my birthday, based loosely on an old recipe from my childhood. Its not the kind where its all mixed together, tho - this is more like a deep dish pie with a sweet but dry cake-like top. I buy the peaches and let them get over-ripe before cooking, so they are very sweet and juice. Peel by dunking in to boiling... -

Yes, boars head meats are safe. Dairy is fine if she can handle it. Many celiacs have trouble digesting dairy until they start to heal.
