It sounds like you may be in the non-celiac gluten sensitivity group, and unfortunately there is no test for it. If you have symptoms when you eat gluten which go away when you eliminate it, then you have all the confirmation you need. -
Have you tried lidocaine creams? Many over the counter ones are in the 5% range and have been helpful to others with DH. As I understand it, Dapsone can have some serious long-term side-effects, and ultimately rooting out all gluten in your diet my be the best approach.

Welcome, you may want to get your blood levels checked, as 10,000 international units daily of vitamin D seems high to me. I also take daily vitamin D, but closer to 4,000 units a day. Welcome to the forum! The recommendations from the Mayo Clinic are to eat at least 2 slices of wheat bread worth of gluten daily for at least 6 weeks before your blood test for celiac disease. It's likely you will still have higher antibodies after being gluten-free for 2 weeks, however they will be lower than if you had continued eating gluten... -

If you have a Costco near you look for Franz Gluten Free bread. Here in California they sell 2 loaves for ~$9, and it is a good multi-grain gluten-free bread. -
There may be ways to speed up gut healing, for example taking supplements like the amino acid glutamine and/or collagen. Just make sure they say "gluten-free" on their labels.

Were you diagnosed with celiac disease, and if so, how long have you been gluten-free? I ask because greasy floating stools are a common issue with the malabsorption that is cased by the flattened villi. It can take a year or two for your gut to fully heal.

Do you eat meat, fish, or eggs? These would be high in protein. If you don't nuts and tofu might be good options. Also, some people who have issues with cow's milk may be able to tolerate sheep's or goat's milk and their related products. -
Many celiacs have additional food intolerance issues that may eventually go away after their guts heal, for example I had around 5-6 foods I had to avoid for a couple of years, including casein/cow's milk, corn, chicken eggs, tomatoes, etc. I think @knitty kitty is right, you should be keeping a food diary to see if there is a link with certain foods. Is there any chance gluten has been sneaking into your diet? The would also explain the sudden change. If you eat at restaurants it is likely you could be getting regular cross-contamination.

I really like a lot of Trader Joe's options, but I've been gluten-free for 26+ years, and recall when there were zero prepared foods available and you had to make or buy GF flour mixes and make everything yourselves. -

Giving the time frame with you eating out and then your symptoms coming back, I think it would be safe for you to conclude that you likely got some cross-contamination when eating out, especially because you were doing so well for so long when you avoided eating out.
