Yes, there are several gluten-free certifications out there (one is the GFCO), and the usual standard they claim is 10ppm, however, recent findings indicate that even the GFCO's higher standards may not ensure that foods they certify are gluten-free: @Lauraferleo Simple Mills may have issues and is included in this article:

I don't believe in the "weak positive" classification--it is a positive test, and your immune system is likely reacting to gluten in an abnormal way. This article might be helpful. Although there may be medications that reduce or eliminate the symptoms of celiac disease, the bigger issue is that there are many known health risks associated with those who have celiac disease but are not on a 100% gluten-free diet. It would be good for you to encourage her to stick to that diet, and support her with that approach...

I don't believe your doctor can make a blanket statement like "the diarrhea from celiac disease would not be stopped by the medications," because everyone is different.
