  1. My dd is coming home for an overnight visit and is going with me to the church/potluck.   2. yep, I have lasagna in the freezer now and put some cooked chicken in there to add to some rice later on. I make freezer meals in serving sizes for my dd's all the time. Today I made a stack of mini pizzas, wrapped them individually and froze them in plastic containers. And I froze some leftover refried beans that they can thaw out and eat with tortilla chips...
  3. I made 1/2 a recipe to try it, very easy. I asked my dh if he liked it and he said he wasn't crazy about corn. I ate one serving and he ate the rest...go figure...I think he was after the bacon b/c I seldom buy it
  4. I made vegan/gluten-free muffins today while making pumpkin bread. They turned out just right. Soft, fluffy, yummy and pretty on top. I only made 6 with 1 egg replacer. Not sure how 12 would be with 2 egg replacers. Vegan/gluten-free Pumpkin Muffins 1 egg replacer, Ener G 1/4 cup + 2 T. sugar 1/4 cup + 3 T. pure pumpkin 3 T. applesauce ...

  6. Gluten Free Quick and Easy by Carol Fenster is a good book for gluten-free/df/ef recipes. My dd is a gluten-free/vegan so here are some recipes that will help. Our fav waffles: Open Original Shared Link tips: I use 1 1/2 cups milk and keep a banana in the freezer, just thaw and mash, spray waffle iron and don't over fill it, wrap and freeze...
  7. To add to this be sure you are taking your vitamin B and magnesium, it helped my dd alot and she has normal periods now. No sign of endo but she's not a celiac, allergic to gluten though.
  8. My 2 cents says, when you know the right thing to do, b/c your body is telling you, then that is the answer. So it must be that the others are wrong but only b/c they don't know the truth. If they were celiac their body would tell them the truth and then they would understand. So meanwhile, be understanding of where they are coming from, then do the best...
  9. Many others on here have stated to give up dairy also, it might help with her tummy pain I hope!

  11. Yep, I saw those nasty ingredients, maybe I will take it back. I am not a coffee drinker/buyer. What kind of expresso do I get? And do I just freeze my dh leftover coffee that I throw out every morning? He makes it and I toss it... I like that idea...recycled coffee! Thanks Rachelle!

  13. I was thinking about that. I just tried them with cereal. It works. I used a mixture of Cocoa Pebbles, Rice Chex, Kix and 3/4 cup chopped nuts with 1/4 cup Quinoa flakes. My problem was I made 1/2 recipe with the recipe posted, BUT, I forgot to only use 1/2 the oatmeal replacement and I forgot to use 1/2 the peanut butter so they are a bit dry and crumbly...
  14. Thanks for your reply. My dd is not in college this year. She doesn't know of anyone that could take over her lease thru the end of April. We tried to get finacial aid but they said they would only help if my dd lost her job or if she continued to live in the apartment. The amount of rent the roommate owes is about 2 3/4 months of rent/fees. My dd is caught...

  18. I finally bought oil for my dd. She wont be starting for awhile b/c she has alot of major stress right now. I will post when she gets normal again.

  21. I found this recipe in my file and haven't tried it yet b/c I don't like coffee. My dd loves iced coffee but they are so expensive if she buys them often and she does. I want to get her a blender so she can make her own. I was wondering if anyone has any tips, suggestions...and if the coffee I bought is gluten-free. It doesn't say on the can but looks safe...
  22. Speaking of chili, some brands of canned chili or chili beans have wheat flour and my package of chili seasoning had it too, so now I make my own.

This choc. cake is gluten-free/df and easy: Open Original Shared Link I frost it with Pillsbury choc. frosting, not milk choc, so be sure to check the label and I add 3/4 cup of choc. chips but you don't have to. I use either sorghum flour mix or rice flour mix. Be sure to test it with a toothpick.

  25. That is my dd's favorite, I usually make it every Christmas. I forget about during the year...duh! I bought the "stuff" for the corn, bacon and pepper salad. The red peppers were $1.50 at Walmart...WOW...so I went to a diff store and got them for 68 cents. Your "bacon" salad got me hungry for this one too: Open Original Shared Link
