Same here...I like to have on hand items for tacos/nachos or pizza. Precook the meat and freeze it, then just reheat it. Rice and beans are great for the nachos. Homemade mini pizza crusts stacked in the freezer. Freeze cooked meat ahead for fast spaghetti too. -

From what I have read, all the starches are interchangeable. If I didn't have what the recipe called for I would sub another starch. Potato starch and potato flour are not the same thing but tapioca starch and tapioca flour are the same thing. Try subbing 1/2 cornstarch and 1/2 potato starch(not flour) or sub all cornstarch. I like leftover, baked/fried potatoes with chili or chili beans on top with chopped tomatoes and green onions...with cheese, or leave it off. Very filling. Or yogurt with fruit and granola or nuts. My dd (19)is not a Celiac but she was having extreme PMS to the point she had all the symptoms of endometriosis...all cleared up with normal PMS on a gluten-free diet. She is still allergic to pet dander and dust at times. The bloating is gone and she is not sensitive. -

We use Bragg's Liquid Aminos. Its gluten-free and GMO free. Great soy sauce sub. Open Original Shared Link Also use their salad dressing and apple cider vinegar. -

I would increase the sugar, use less baking powder, add the xanthan gum, and add sour cream but if you don't want to increase the sugar...then skip the sour cream and use some applesauce. Sound confusing?! You need some sticky moisture. You might also switch the rice flour to sorghum too. One egg should be enough, all my muffin recipes call for only... -

Here is a great recipe for Banana Nut Waffles: Open Original Shared Link I use 1 1/2 cups almond milk and finely chopped almonds. I keep a banana in the freezer, thaw and mash it. Good with berries added too. -

Thanks for the pizza tip and the Chebe tip too, I haven't got to try it yet. My dd's are not Celiacs but are allergic to wheat. I used the above link for restaurants and googled Nampa which Darcy's bakery came up. Interesting, thanks for posting. My dd is trying to lose weight so she became a vegan 5 months ago which made her choose lots of veggies, fruits, low fat and low calorie foods. She does eat Rice Chex and Cocoa Pebbles (doesn't really like chocolate) on occasion and Fritos and tortilla chips with her mexican food and chili. Baked potatoes instead of greasy...

Thanks anyway...I have a hard time finding the time to stop at an Asian market (so many errands when we make it to Boise) and there are several to try. The co-op I find is cheaper then Fred's for flours unless you have to make a special trip. I wish we had a Whole Foods. Your mom posted a restaurant thread so I made a copy for my dd. Thanks to her. The book "Cooking Free" by Carol Fenster is great if you are cooking w/o eggs, gluten, dairy. She lists alternatives and uses sorghum flour. You might try some of her recipes and sub ingredients for the ones you can have. I use spectrum shortening with her recipes. The gingersnaps and vanilla wafers are great and make great pie crusts. Our case is the opposite. My 2 dd's are gluten-free and we are not. I think its a pain of course BUT we have never eaten this healthy before. Much less chemicals, additives, preservatives, artificial junk, etc... No more fast food, garbage food, poisoned food (like the super size me movie). I think you really care about your health and others health too and are willing to try everything to feel normal. However, trying so many things at once could be a "shock" to your body.
