  1. This was my first time using gluten-free cookie crumbs to make a crust with. My crust was too firm so I will use less butter next time. I am so glad many people said to use ginger snaps for the crust...WOW! I will never use a graham cracker crust again (we are not all gluten-free) 100 percent BETTER! I have some questions???   5. Yeah, I couldn't get the link to work so I gave up on trying to figure it out. I don't DO computers very well. YES....That's the cheesecake! I don't have a spring form pan so I am making it in a deep pie dish. I have 2 pies lined up for Thanksgiving and a df/gluten-free apple crumble. Its so much fun making new things (that turn out well anyway)....
  6. Meats- cook and freeze. You can microwave frozen food w/o defrosting. If you are not in a hurry and would rather not use the microwave, you can just heat it on low in a pan with a lid, stirring often. I add a little water. Spaghetti, soups or taco meat would heat well this way but not pot pies or layered foods, just foods you can stir. You can also take...

  8. Sorghum flour by Bob's Red Mill. If the pie is just for your family, I would use rice flour and no xanthan gum just to try it since you only need 1/2 cup. If making it for guests go with Pamela's, it has xanthan gum in it. If you read the links I posted, on the one, most everyone said they reduced the butter.   9. My 19 yr old dd had pms so bad I took her to the doc and found out she is allergic to gluten. I thought she was going to bleed to death. The pain was unbearable. She was in college at the time and exhausted. She had middle of the month pain too. He put her on Vit B's with magnesium and she never complains much any more.
  10. Thanks for the info. Darn...we don't have a Whole Foods...but I saw it advertised on T.V. the other day! All we have is a co-op with about 6x6' of gluten-free items and few here and there. Nothing fancy but the prices. I can't order Chebe but one day I am going to...it sounds like the perfect thing!!!

  12. I don't need to freeze for the ones at home but I freeze for my gluten-free dd that moved into an apartment.   13. You may need to reduce a liquid a bit b/c of the moisture in the applesauce. Applesauce can be part of a replacement for vegetable oil. I like to read the comments people write in before I make something new. Recipezaar is great for that, here too. Then I make 1/2 a recipe or the whole thing. Trial and error.   14. I am sorry about the cereal but how about muffins? I don't buy premade gluten-free cereal (I have big kids now). Kids love mini muffins and I am sure they would be better for you than cereal. Make a couple of flavors and freeze them. There are so many varieties to make and you can add all kinds of good things like pumpkin, berries, coconut, chocolate chips...

I found this recipe today: Chocolate Cookie Crust Stir together 1 cup vanilla wafer crumbs (gluten-free), 1/4 cup Hershey's cocoa, 1/4 cup powdered sugar, and 1/4 cup (1/2 stick) melted butter in a medium bowl. Press mixture firmly onto bottom and 1/2" up side of a 9" springform pan. Bake 8 minutes @ 350 degrees.

  21. I used to make gluten play doh all the time. I sometimes put peppermint extract in it to make it smell good. One of kiddos best amusements that uses their creativeness.

  23. Yum, I love pumpkin and chocolate chips. I used to make them often for my daycare kids. I saw a recipe today for pumpkin chocolate chip cheesecake I want to try next. Thanks for posting the gluten-free cookie version!
  24. Cut up some chicken strips ahead of time or use leftover cooked chicken and make a stir fry with fresh or frozen veggies and add some instant brown rice and water. Cook enough for leftovers.
