The What's For Dinner Tonight Chat
mbrookes replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Y'all obviously are not in the South. We are having turnip greens (brings money), black-eyed peas (brings good luck) and pork tenderloin. Any kind of pork will do to bring more good luck. Round out with cornbread (just because it's good) and the end of the homemade fruitcake. Everyone I know is having some version of the same. We have a lot of food customs... -

I do a similar salmon, but add about a tablespoon chopped fresh parsley and juice of half a lemon. Squish up and shape into bales. Roll in cracker crumbs (I use Shaar entertainment or table crackers) and fry in a little Crisco oil. Very close to what Mama did when I was growing up. -
What People Say About Gluten-Free Airline Travel
mbrookes commented on Jefferson Adams's article in Gluten-Free Travel
Please contact Amtrak about the changes they are making to their available foods. In the past I had no problem eating on Amtrak, as the foods were prepared to order. Since Oct. 1, all meals are frozen "TV dinner" type meals. They do not have an ingredient list. This makes it impossible for me to eat. -
Brach’s Candy Corn

I ate a ton of candy corn at Halloween and had no problem, unless you count the jeans that won't zip. -
Pioneer gravy packet

I thought the law was that to be marked "gluten free" the product has to test to under 20 ppm. In that case, it would be safe for all but the most extremely sensitive people. -
Egg Rolls
mbrookes replied to mbrookes's topic in Gluten-Free Foods, Products, Shopping & Medications
Yes, I think that's it. Thanks. Try them. They are really good. Plus, you don't have to fry them. They cook in the oven. -
I used to buy a frozen pkg of gluten-free egg rolls. That store closed and I can't find them anywhere. The fact that I have forgotten the company that makes then doesn't help. I have found a store that will order them for me if I can get the name. Any body out there know who makes a good frozen egg roll?

Kareng, I do it just like I did before Celiac (BC?) Soak chicken in buttermilk about an hour. Shake in a bag with flour (I use King Arthur's gluten-free Measure for Measure with salt pepper and a little baking powder and paprika. Fry in a black iron skillet at about 350-375 until brown. Cover and cook until done (20-30 minutes depending on size of chicken... -

Tonight it's fried chicken, mac and cheese, field peas and cornbread. Yes, I am in the deep South! -
Benefiber
mbrookes replied to darlindeb25's topic in Gluten-Free Foods, Products, Shopping & Medications
I feel like it is probably best to get your fiber from unpeeled fruits and vegetables. If you occasionally need an extra bit, try Miralax, which has no taste, no grit and mixes with any liquid. -
Top Brands of Gluten-Free Frozen Pizza
mbrookes commented on Jefferson Adams's article in Gluten-Free Foods & Beverages
I live in Mississippi, and for some reason our choices here are limited. We don't have a Costco, I have never seen most of the ones y'all have commented on. I do love Freschetta and the Kroger gluten free ones. Steve, I don't have a special pizza oven, but I do use a pan that has holes all in the bottom and that works great.- 21 comments

The Kroger gluten free is just like the Freschetta, but several dollars cheaper. That is what I usually buy.- 21 comments

Ginger beer
mbrookes replied to mbrookes's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow. I hope y'all realize how lucky you are. I live in Jackson, the capital of Mississippi and although I dearly love MS and would not want to live anywhere else, we are a tad late on the "newest". We have wonderful restaurants, and most of them can feed me with no trouble. Unfortunately, Redbridge is about it for beer. (Yuck!!!!!) I have become a wine and... -
Ginger beer
mbrookes replied to mbrookes's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks, Cyclinglady. I do fine with regular vodka… in fact I'm having a vodka-diet tonic right now. I guess I am drawn to the cool copper cups, but I just wanted to try a Moscow Mule. Our regular bar knows me and my health issues and they take real good care of me. The work "beer" had me spooked. I used to be a bad beer snob, but Celiac has cured me of t... -

gluten-free in DC and Kareng, thanks. You might have guessed, I'm trying to see if I can drink a Moscow Mule. My buddies all love them. -
I have tried to check on my on, but I can't find out whether or not ginger beer is gluten free. Does anyone know?

Trouble shopping
mbrookes replied to mbrookes's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks. I just discovered thrive and made an order last night. I have been at this for 15 years, but lately it has bothered me more than ever. For the first time, I am feeling deprived and sorry for myself. I'm trying to improve my attitude. -
What's the deal with Gluten Free Mall? Every topic I clicked on said "no products available". This, combined with Amazon's new stuff (pay extra for A. Prime Pantry. Most of Amazon's gluten-free foods are not on prime or you have to buy a year's supply.) If I sound frustrated, it's because I am. The Whole Foods in my town carries very little gluten-free food...
