ARCHIVED Hosting Bunco - Need Some Ideas
Jenny (AZ via TX) replied to Jenny (AZ via TX)'s topic in Gluten-Free Recipes & Cooking Tips
Great ideas everone. I'll have hubby make the guacomole and chips and salsa are always good. WendyG, in the Buffalo dip, what is Buffalo sauce? I have never heard of this. The dip sounds good though. Is Buffalo sauce a brand name? Think I can sub ranch dip for the blue cheese? Ooh, rotel dip is good too. I haven't had that in a long time. Darn 210, what... -
ARCHIVED Hosting Bunco - Need Some Ideas
Jenny (AZ via TX) posted a topic in Gluten-Free Recipes & Cooking Tips
It's my turn to host Bunco and I need some ideas for some goodies. I'll have nuts and chocolate. I think I'll make Cocoa Pebbles rice crispie treats. I need some salt. Any ideas are appreciated. This will be a gluten-free bunco and I think some of the ladies are wondering what I eat so I need some good ideas to show them how normal I am! -
ARCHIVED I Love This Board!
Jenny (AZ via TX) replied to Mtndog's topic in Coping with Celiac Disease
I love this board too! Without it, I would still be wondering what I could eat and where I could eat. Also, the recipes are great. I don't even need a cookbook! -
ARCHIVED When A Recipe Asks You To Make A Roux
Jenny (AZ via TX) replied to Gibbo's topic in Gluten-Free Recipes & Cooking Tips
I think it depends on the kind of roux you are making. I made gumbo a while ago and used flour. But, I did it on the stove top without the butter (we didn't want the extra fat). My aunt in New Orleans told me how to do this. Anyway you cook on low stirring constantly (PIA), until it gets that pretty caramel color. Then I added the chicken broth. It... -
ARCHIVED A Few Good Recipes
Jenny (AZ via TX) replied to JNBunnie1's topic in Gluten-Free Recipes & Cooking Tips
Thanks for posting. I love, love mac n cheese. I'm going to try this. By the way your directions on the milk made me laugh. "not above the noodles but not too much below the noodles level either". I'll do my best on this. No measurements? How do you know how to do this. Wish me luck. I just saw the banana nut recipe. Looks good, but I have to... -
ARCHIVED Banana Nut Bread
Jenny (AZ via TX) replied to Jenny (AZ via TX)'s topic in Gluten-Free Recipes & Cooking Tips
Thank you all so much!! Everyone is so nice to help. I'm going to make another one this weekend and see what happens. It was so funny when I made this one. It came out of the oven so pretty and smelled so good. Hubby and I both just stared at it (he was practically drooling) and I thought, this is easy. Then later in the night it deflated. We both... -
ARCHIVED Against The Grain's Baguettes
Jenny (AZ via TX) replied to Mountaineer Josh's topic in Gluten-Free Foods, Products, Shopping & Medications
Anyone know if Whole Foods or TJ's carries this? I have tried so many different kinds of breads and don't really like any of them. I miss good bread! -
ARCHIVED Banana Nut Bread
Jenny (AZ via TX) replied to Jenny (AZ via TX)'s topic in Gluten-Free Recipes & Cooking Tips
Thanks for the info. I'll order the flour and see how it does. I was using a flour that I got from a gluten-free bakery here in AZ, but that didn't work so well for me. Happygirl, maybe we could put a hotline in to your mom's phone (hee hee . I'm so jealous that you have your own personal baker! Does your mom use the smaller pans as Purple and wonka... -
ARCHIVED Testing Results
Jenny (AZ via TX) replied to holiday16's topic in Gluten-Free Foods, Products, Shopping & Medications
I should also add to this that because of Mike's testing, I will be switching my OJ. I'll still read the label each time I buy it. I always, always read labels. As I mentioned in a previous post, I think the strips can be beneficial if I am trying to rule a food out. I don't want to go through a challenge and get sick again. Yeah, I know they may not... -
ARCHIVED Testing Results
Jenny (AZ via TX) replied to holiday16's topic in Gluten-Free Foods, Products, Shopping & Medications
I agree that we are all responsible for what we eat. We absolutely still have to read labels. Just because Mike's negative list has fritos doesn't mean I'm going to eat them. You can't always tell just by reading the label. I believe Fritos has only 3 ingredients. If you dig deeper, Lays tells you that only the stax are made on dedicated lines, but you... -

Wow Mike. What a list. Thanks for posting. As Dilettentestef said "a positive list would be helpful though, hint, hint. -
ARCHIVED Banana Nut Bread
Jenny (AZ via TX) replied to Jenny (AZ via TX)'s topic in Gluten-Free Recipes & Cooking Tips
Thanks Susie, I'll try it. Do you use any of the flours that say you can use cup for cup? It is so aggravating when it doesn't come out right. I used to be a pretty good baker, so I get frustrated. -
I made a banana nut bread the other day. I converted a recipe I have that used wheat flour. I used a flour that says you can use cup for cup. Anyway, it looked beautiful when I took it out. Then a while later it collapsed and was really heavy. I like the recipe because it uses honey and molasses but the outcome not so good. Hubby still ate it. He said...

ARCHIVED Hard-boiling Eggs
Jenny (AZ via TX) replied to *lee-lee*'s topic in Gluten-Free Recipes & Cooking Tips
I put the eggs in a saucepan. I set the temp on high and cook for 20 minutes from when I first turn the stove on. Then put the eggs in cold water. To peel, I tap the top and bottom of the egg. Put a paper towel on the counter and roll the egg. The shell comes right off. I never knew there were so many different ways to boil and egg. -
ARCHIVED Tired, Frustrated, Scared
Jenny (AZ via TX) replied to Kit.DaMommy's topic in Coping with Celiac Disease
I think one of the hardest parts is going to the grocery store. I didn't know about the list that happygirl mentioned until I was into this diet for a couple of months. I still take the list from glutenfreeindy.com which lists the brands that do not hide gluten with me every time I go to the store. I also bought the book Living Gluten Free for Dummies... -
ARCHIVED Watson Pharmaceuticals
Jenny (AZ via TX) replied to SUZ42's topic in Gluten-Free Foods, Products, Shopping & Medications
Each pharmacy may have a different policy, but Walgreens lists the name of the manufacturer on the prescription bottle. I didn't realize it was there until I started calling on my meds. -
ARCHIVED Re-testing?
Jenny (AZ via TX) replied to Jenny (AZ via TX)'s topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
cruelshoes and cat3883, thanks for the replies. This does help. I was in a bit of shock when first dx'd. I thought she told me she would see me in a year unless I had problems. I thought that seemed a bit long. -
ARCHIVED Best Celiac/gluten-free/food-intolerance Publications?
Jenny (AZ via TX) replied to julirama723's topic in Publications & Publicity
The first book I bought was Living Gluten Free for Dummies. My hubby picked up a magazine already mentioned, Living Without. This magazine is great! I couldn't believe all the info in it. -
ARCHIVED Omg I Need A Vent!
Jenny (AZ via TX) replied to loco-ladi's topic in Coping with Celiac Disease
You did the right thing. Good for you! So sorry about your mom. It looks like you are taking control and things can only get better. Hang in there and vent as often as you need to. -
ARCHIVED Re-testing?
Jenny (AZ via TX) posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
How often are we supposed to get re-tested? Can the family doctor do this or do I have to go back to the GI to do it? My GI didn't really say much when I was diagnosed. Thanks. -

ARCHIVED Dental Floss (what Kind Do You Use?)
Jenny (AZ via TX) posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I've been gluten-free for about 6 months(hopefully). I never really thought about dental floss. What kind do you use? I couldn't find much info on it. Thanks.
