IMO, you can bring a pizza into the kitchen and you can cook pancakes in the garage. There are many here who share a kitchen without problems. I had the genetic testing done through my HMO via Prometheus. It was the last step in my diagnosis: first endoscopy, then celiac blood panel, and lastly genetic test. The genetic test was done only to confirm my doctors' suspicion; it cannot diagnose celiac in and of itself. I personally would not bother with this testing as I don't think it really tells... -

An interesting theory but I don't think it has relevance to the immune system; it has more to do with rats and stored grains. Stored grain tends to attract rats. Hi Anthony: I hope you start to feel better soon. 2 1/2 months is not really that long to expect results. You are going to have to be more patient and wait for at least 6 months if not longer. I also notice that you have never been diagnosed with celiac disease . . . perhaps you don't have celiac disease and that is why going gluten free hasn't helped? -

I agree with the previous poster - if you think it might be celiac then get to your doctor and have him/her run the celiac panel. That would be your starting point. But just a quick thought or two . . . the headaches, dry skin, joint pain, even fatigue could all be due to lack of proper hydration so be sure to drink the correct amount of water each day... -

I haven't made any gumbos but I've had great success with sweet rice flour for gravies and white/cream sauces. Seems that for a gumbo you'd heat some margarine and oil in a heavy bottom pan, sprinkle the rice flour over and let it sit for a minute. I think about 1 heaping tablespoon for two+ cups liquid). I get excessive flushing/blushing (embarrassing, isn't it?) But it is not a symptom of celiac disease for me because I still have it even after going gluten free. In my case I believe it is due to hyperhidrosis but it's also typical of rosacea. You might research both and see if either applies to you. -
