  1. Definitely get an oven thermometer and see if your oven temperature is accurate. I had that problem until I purchased a thermometer and found out my oven was off by about 20 degrees. Once I compensated for that, my baking times are pretty much where they should be.
  2. Yes, I lost weight. I dropped 50 lbs over the course of the first year or so. The weight loss stabilized on it's own. I just stopped losing once I reached a certain weight, even though I didn't make any further changes. I've maintained for almost 2 years now.   3. My test was negative as well, but I react very strongly to gluten. Within 20 minutes, I am nauseated and in serious pain, and it lasts for several days.   6. I just obtained copies of my medical file, and in it was my results for my celiac test. I was given one blood test, described as TTG, Ab, IgA Reference range < 20 Interpretive Data: Tissue Transglutaminase Antibody, IgA Results: Normal That was the only test I was given.   8. I bring my own bottle of gluten-free soy sauce, and stick to nigiri sushi, sashimi or simple maki rolls that don't contain any extra mystery sauces.
  9. We ate at one in Colorado Springs and loved it. I had pizza. And they didn't have any bread for me, but we didn't call ahead either. Next time I will because I would have loved something to dip in that olive oil! I loved it and would definitely eat there again.
  10. I have had several very good experiences with RR at the Escondido mall, most recently in November. The staff actually seems to care about allergy issues and I have never been treated like I am a burden, which is a nice change! It is one of the few places I feel safe eating at.
  11. Yes, I have issues with this. The spasms are so painful that they double me over and take my breath away. They last about a minute for me, though it may as well be an eternity.   15. I actually have that kind of reaction to caffeine... and so does my mother. But as far as places that are easy to be accidentally glutened, I think McDonald's is around the top of the list. Sorry you are not feeling well.

  18. I have eaten the fries several times since being gluten-free, and have not had any adverse reaction. Of course that doesn't mean that I never will, since there is always a risk of cross contamination, but it is on my list of reasonably safe choices if I'm going to risk eating out. Hope that helps!

  20. Everyone is different. (I know, not very specific!) I felt much better within 24 hours. 48 was a huge difference. By the time I had been gluten-free for 6 weeks, it was like I was a whole new person. So if you feel better, stick with it! It is so worth it to have a life back!
  21. Update: the pizza is AWESOME. I would highly recommend it. It is just cheese with some parsley, so you can doctor it as you see fit. I just tossed it in the toaster oven until it looked done.   22. I went to my doctor's office to pick up my test results. I had been told they were negative, but I was hoping to see the actual values. Unfortunately, the print out doesn't give the actual values. It looks like the test was for tTA and IgA. Those are the only 2 listed.   23. I like to make stuffed peppers with a mixture of quinoa and hamburger (or lean ground turkey) and whatever other veggies you would like to mix in. You can also melt a little cheese on top if you want. They reheat very well.

  25. I don't even know what all the blood tests were for!! I know that my doctor laughed off the idea that I could be reacting to something I was eating. She put me on Prilosec, and I had vials and vials of blood drawn. I had an upper GI to test for reflux as well.Then they started "delicately" suggesting that it was all between my ears.
