  1. I am a teacher in the school system and we also follow strict attendance laws in my parish. I would recommend getting in touch with her doctor that treats her for Celiac and ask him to write excuses when you are absolutely sure it is a glutening. In my parish, if the absence is doctor excused, we cannot hold this against the student for unexcused absences...
  2. Align probiotics says on the package "This product does not conatin lactose, soy or gluten" So they are safe. I've taken them before, but just started a new treatment today based on some issues that I've been experiencing. Wenmin
  3. I want to make and Chicken and Vegetable Pot Pie but I need a chowder. The recipe calls for corn chowder, but I cannot have corn due to diverticulitis. Does someone have a recipe that I could substitute for the corn chowder? Wenmin
  4. I work in a school environment also. Try wiping the table down before you sit to eat. I have been glutened by this before. So, now I carry a wet paper towel and wipe the table down and then wash my hands before I sit to eat. Could be leftover crumbs from food they served to previous visitors or from breakfast. Wenmin

I was not impressed with the biscuits from the Gluten free bisquick mix because of all the shortening used to make them. I have to cook with a very strict low-fat diet in mind because my significant other has already had heart blockage and had stints put in at age 45. ...

  8. I have been taking Benicar for my blood pressure for many years. Recently I have been informed by my Pharmacist that I can save $300 annually if I switched to Losartan Potassium.   12. We eat lots of egg and rice. Start with a little oil in a frying skillet. Crack and season several (4-5) eggs into skillet just like you would fry them. When the egg whites start to turn white, add your rice and stir until yellow covers the rice. Yellow Rice. This is great with bacon and hot cocoa as a side.   13. I am from the south and yes we ate lots of grits. Cheese grits, grits with butter and milk (like a hot cereal), grits and gravy (any meat with a gravy just as you would have rice and gravy), grits mixed with "soft" egg, fried grits. I have never heard of grits with sugar?!?!... Doesn't sound appetizing to me. Wenmin
  14. OH! I forgot to tell you, I use what I need and put the rest in a freezer safe container and freeze the rest. Take out when needed and spoon out what you need. It refreezes as many time as necessary. Wenmin

  16. I eat Olive Garden often enough. I have the salad without the crutons, then I order the Mixed Grill which is skewered chicken and steak served over roasted potatoes, squash and Zuchinni. Very good meal and I don't even ask for the gluten free menu! (The hardest part is not eating the bread!) Wenmin
  17. When you mentioned antibiotics this is what comes to mind: My mother just got over a bad case of C-Diff. This is a bacteria problem caused by antibiotics. In laymans terms, Antibiotics kill good and bad bacteria, and when you stop taking them the bad bacteria takes over. Very serious illness.   18. Hi MBrookes, I am from SOUTH Louisiana, Thibodaux. About 60 miles Southeast of Baton Rouge and about 60 miles Southwest of New Orleans. In the heart of it all!! I make a roux that I use in gumbos, stews, etc. but I cannot get it to brown either. However, it is the closest to a brown roux that I know. I usually get my color for gumbos from browning...

  20. Homemade hamburgers, fries, and gluten free oreo balls for dessert. Wenmin
  21. Peanut Butter Balls 2 cups peanut butter 1 cup softened buttter 16 ounces powdered sugar Chocolate bark for dipping (melted) Mix first three ingredients in a large bowl.   22. If you use regular chocolate chips you must add parafin wax or it will never harden. It is possible to do though. Will get the peanut butter balls recipe to you as soon as I can. By the way, you can buy the chocolate bark at any WalMart or food store that carries baking goods. Wenmin
  23. Basically it is the do it yourself candy coating. Mines is an off brand I buy at my local grocery store. Just be sure to read the ingredients, mine only said may contain soy and milk.
