  1. As I sit everyday at work and eat my delicious gluten free food that I prepared, my coworkers are eating those boxed up lunches (Healthy Choice -yeah right!). One of my coworkers swears when she wins the lottery she will hire me as her personal chef to cook dinner every evening at her house!!!! I think this is so funny! Wenmin
  2. Maybe your doctor didn't know enough about the gluten intolerances to answer your questions and this was his quick escape. Find a doctor that specializes in Celiac Disease, maybe you won't feel so neglected as you did this time and he/she will feel more confident answering your questions... Wenmin

  7. Antibiotics kill the good and the bad bacteria. When the bacteria begins to grow back, the bad may overtake the good. This is called C-Diff (google this). It is tested simply with a stool sample. Really hard to get rid of. My mother is a transplant patient and has been fighting C-diff since March. She finally got to see a infectious disease doctor and...
  8. I have never had clam cakes but from the deep south have had many fish patties and crab patties. I am hoping that this recipe will help you. We make these with seasonings (onions, bell peppers, shallots) one raw egg, potato flakes, salt, pepper and cooked crab meat or boiled fish. Mix well and shape into patties and coat outside with corn flour or...
  9. When you find a canned/jarred sauce that fits your requirements use the following method....time saver and does not heat the house..... 1 jar favorite sauce, 1 onion (chopped), 1 green/bell pepper (chopped), 1 can tomato sauce, 1 can diced tomatoes, 1 teaspoon of sugar and salt and pepper to your liking. Place all in a slow cooker in the morning and...
  10. The only thing I've been able to find is Health Valley Organic Cream of Mushroom. I find this at Whole Foods. I have not had any luck finding others that I see posted in this forum. There is one that I am searching for right now. It is Progresso Vegetable Classics French Onion. I used to make a quick jambalaya with the beef broth and Campbell's French...

  12. I've never tried the cookies, but the brownies are to die for. Chocolate cake is great topped with Ancel Coconut (canned coconut that has liquid), yet the yellow cake is very dry. Have not yet found a recipe that I like with the yellow cake. I tried making pineapple upside down cake and carrot cake with yellow cake and was not all that impressed.
  13. I'm 5'2". I was always the smallest person in class through grade school.
  14. I use deBoles Corn Pasta and usually cook it the night before and store in a ziploc bag overnight when I need to make loads of macaroni and chhese for family gatherings. It has never turned hard on me. I boil until tender and rinse with cold water and allow to drain for 5-10 minutes before placing it in the ziploc bag. I am almost positive that this would...
  15. Sorry it took so long for me to reply. I place the crumbs in a shallow pie dish and melt two tablespoons of butter and pour it sparingly over the crumbs. Then I take a fork and mash the crumbs in with the butter and it kind of moistens the crumbs some. I don't know if this is the correct way to do it, but it worked for me... Wenmin

  17. I just recently found and started using this product. On the directions, it states to combine 1 cup of Southern Home Style Corn Flake Crumbs with 2 tablespoons of melted butter or margarine. You must do this for the breading to get crunchy. It also says to moisten meat (chicken, pork or fish) in lightly beaten egg. Then roll in corn flake crumbs. It also...
  18. Welcome to the forum! I am from the U.S. not S.A., but can offer little bits of advice. This board was really helpful when I first started with the diet almost 3 years ago. 20. I just posted an oatmeal cookie recipe in GLuten Free Recipes-Baking and cooking Tips under the thread No Bake Cookies. They are awesome, but just found out they have issues with the humidity. Tried to make some yesterday and it was raining here in Louisiana. They did not turn out crunchy, they were kind of chewy instead. Wenmin
  21. Just recently found an amazing breading by Southern Homestyle: Corn Flake Crumbs for Oven style breading. On the package it indicates Gluten Free. It is distributed by: The SoyNut Butter Company Telephone Number is 1-800-288-1012. I've used it to make baked chicken tenders, it was awesome. Just thought I'd share... Wenmin
  22. My favorite quick go to breakfast food is a lundberg farms rice cake with peanut butter and honey. If time allows you can cook up some hash browns. 24. Try the website below. I ran across this recently and hope it helps... www.liveglutenfreely.com click on the recipes link. It has a plenty of recipes to choose from... As for the pots and pans, try scrubbing by hand and then putting in the dishwasher for a cycle before each use...until you can get your own set. Wenmin
  25. I've eaten at many salad bars without any problems. Be sure to be careful of where you are getting your food. I usually try to take the lettuce from the back of the pan, where there is less risk that something might have fell in and CC'd it. Be especially careful around the dressings. Many times, I see crutons and egg noodles dropped in the dressings...
