From past experiences, there is nothing wrong with freezing rice. The only thing when rice is defrosted, it becomes mushy. I very seldom freeze anything with rice. The only dish I freeze with rice is an eggplant dressing. -

Of course you should eliminate all corn products. My suggestion is to do a little research on corn intolerances, read the labels and get rid of those "corn based" items. Ceyannuzzi, Try Frozen Kinnikinnick Gluten Free White Sandwich Bread. It is the best I found yet. When I am ready for bread, I take it out of the freezer and put it in the refrigerator. It will last up to two weeks in the fridge. When needed, I toast before using (in a safe toaster of course). Sometimes I bake my own using Gluten Free Pantry Favorite... -
We use it all the time. Use a wet ingredient first, such as water, egg, hot sauce, etc. to base items you wish to fry, then pass in corn flour seasoned with your favorite spices, and fry as usual. I do this with chicken, pork chops, fish, crab patties, eggplant, shrimp, etc. It works wonderful and tastes good too!

I use corn flour to bake anything. Just marinate your meats with Italian Salad Dressing, hot sauce and spices of your choice ( I use Tony Chachere's commonly found in my area) for a few hours prior to cooking.
