  1. Couldn't wait until Thanksgiving. Succeeded with my first ever gumbo since going gluten free..... Recipe: Cut up chicken into 2-3 inch pieces, season with favorite seasonings and fry until browned in 1 cup canola oil. 2 # smoked sausage cut into bite size pieces and fry in same oil as chicken until browned. Discard grease but do not clean pot. This...
  2. Thanks for all the advice. I'll give these a try around Thanksgiving (One of our staple foods on the table for Thanksgiving Dinner!) Wenmin
  3. It's been 16 months now and I am still looking for a recipe to create a "roux." I am craving a good old fashioned chicken and sausage gumbo, especially since the last few cold snaps we've had here in Louisiana. I've already tried brown rice flour and find it does not taste like a roux and also makes the gravy jell-like. I'm not quite sure if I am using...
  4. I use Bruce's Yams. They are gluten free. Empty canned juice, add butter, brown sugar, and if you'd like a little glutten free vanilla. Bake for about 30 - 45 minutes. YUM!
  5. Here's a great recipe that I've used to make treats with Karo syrup: Peanut Butter Corn Chex Treats Ingredients: 6 cups Corn Chex 1 cup light Karo corn syrup 1 cup sugar 1 cup peanut butter Directions: Combine corn syrup and sugar in large saucepan. Over medium heat, stirring frequently, until sugar dissolves and mixture comes to a...
  6. This is not Larrymac's recipe, but it's one I have available and have used for years. I skip the corn in the recipe, becasue I can't have it. Taco Soup Ingredients: 1 lb. ground beef 1 pack taco seasoning mix onions, bell peppers, shallots, etc. 15 oz. can corn (undrained) 15 oz. can green beans (undrained) 15 oz. can kidney beans (undrained...
  7. I never used it in a cookie recipe, but I substiute unsweetened applesauce in lots of cake mixes when baking. I do this for nutrition reasons and it makes the cake much more moist than regular margarine. Wenmin
  8. Ricola Natural Herb Cough Drops and Tussin Diabetic (salt, dye, sugar, etc free) are both Gluten free. (I think) I've been using these for quite some time without any side affects. Both can be found at CVS. Wenmin
  9. I just recently used Whole Foods 365 Gluten Free Pancake and Waffle mix to make Pancakes. They were very good. I would imagine if the pancakes are good, the waffles would also be good... Wenmin
  10. Ancel coconut is the name brand. It is a grated coconut in a heavy syrup. Found in the can around the pie fillings. Lots of juices to moisten the cake. Pour and spread over cake after it is baked. Wenmin
  11. I use Nature Made Multi Complete (found at my local CVS store). On the bottle it says: No Artificial Colors, No Artificial Flavors, No Preservatives, No Yeast or Gluten. However at the bottom of the bottle it does say: Manufactured on equipment that also produces Peanuts and soy. Wenmin
  12. My mom tells this story to almost everyone. Guess I could share it here. ( I vaguely remember it) I was about 7 years old. Used to be persuaded by my dad to bake sweets or fix ice cream. So one night dad persuaded me to make some brownies. I read the directions and got all the ingredients right. Except, the directions said 200 strokes by hand. Well...
  13. I find Gluten Free cake mixes bake up kind of dry. Therefore, I use Ancel Coconut on top. This helps to "moisten" the cake and it is good either on a yellow or chocolate cake. Wenmin
  14. Not quite sure of your gender, but when I wear a panty liner or maxi pad for any extended amount of time, I get really irritated in the private area. I am guessing it is the glue used to make the pads. They must have gluten in them. I also cannot wear tampons. I tend to get really bad headaches when I wear them. I also attribute this to the glue used...
  15. Ate there last night. Always get the mixed grill. It is a shish ka bob of chicken and steak with grilled zuchini, onions, and potatoes. Never had problems with this dish before. Wenmin
  16. I can answer the joint pain question because this is usually the most severe symptom I get when I am accidently glutened. The doctors diagnosis is costocondritis. This is the inflamation of the cartilidge in your joints. Causes severe pain in my ribcage and just recently having joint pain and muscle pain in my upper left arm and left leg. Also, I think...
  17. My sister's gluten eating family always made their own corndogs from scratch. I bet this recipe could be adapted using gluten free cornbread mix. (There are lots of them out there) 1 box corn bread mix - mix according to package directions 1 pound of hot dogs - cut into small slivers (small bite size pieces) cubed cheese - usually velveeta Place...
  18. Hey! Just remembered this topic because I fixed this for breakfast. Make the smothered potatoes and the next day, heat a small portion (1/2 cup per person) in a skillet sprayed with Pam. While potatoes are heating, scramble 1-2 eggs and salt and pepper to your liking (You could use egg substitute in place of eggs). Once potatoes are heated, add egg...
  19. You could make smothered potatoes. Start with about 2-3 onions, dice and sautee in large pot with a little oil (about 1/8 cup). Dice 8-10 potatoes to about 1/2 inch thick. Once onions are tender add potatoes and cover. Stir often becasue it wants to stick. Cook until potatoes are tender and a little browning from the sticking is present.(about ...
  20. To make a long story short, I am an undiagnosed celiac, with positive results on the diet. Have been to a GI doctor who specializes in Celiac, said that I did not need testing because I would test negative anyway because I was already on the Gluten-Free diet for about 1 year. I was just approved to donate a kidney to my mother who has poly-cystic kidney...
  21. This was probably one of my worst symptoms....Costochondritis in the rib cage...Even after one year of being gluten free (July 15) this is a sure sign for me that I have been glutened. The pain is very intense and can make you believe that you are indeed having a heart attack....Once the gluten is out of my body, things get back to normal. Question: ...
  22. Costochondritis This was probably my worst symptom, before going gluten free. I kept visiting doctors (sometimes 3-4 time per month). My doctors kept diagnosing me with Costochondritis. I would repeatedly ask what was causing this, with no real help from the doctors. They would give me anti-inflamatory and send me on my way. Finally decided to quit...
