  1. Wow -- how did I miss this thread? I haven't got anything to add today as I'm mourning the closing of my favorite gluten-free pizza place. I'm not sure how anything will take its place.
  2. I can't compare it to DisneyWorld as I've never been there, but I do know there are a lot of gluten-free options at Disneyland (if you do a google search of the terms "gluten free Disneyland" you'll see several reviews). You'll be best served if you call them in advance of your visit or at the very least visit Town Hall as you enter the park in the morning...
  3. I finally got some today. It's nothing short of amazing!
  4. I usually just go with popcorn.
  5. It's interesting that you mentioned coconut milk as a problem. I, too, react strongly to it though there seems to be no gluten at all (I read and reread the label). It's happened twice, both times on days where I only prepared foods in my gluten-free kitchen and used products I'm familiar with. A lot of other people develop intolerances besides gluten, so...
  6. Sounds like you've had good reason to be stressed. The good news is that, in my experience, once you've experienced being happier and healthier it's easier to return to that state. Congratulations on not having any evidence of Celiac anymore -- that means you've been doing quite well. I hope you get all the answers you need about any deficiencies you...
  7. I went through that freak-out stage, too. Before I had to start eating this way, I was addicted to artisan bread -- I made a loaf every couple days. I still dream of making a gluten-free artisan bread successfully, but I don't pine over the real thing anymore: I want to be able to eat artisan bread; I do NOT feel tempted at ALL to eat the gluten-containing...
  8. I make gluten-free fried rice all the time. All you need to do is use wheat-free soy sauce. As far as what I would eat if there were a magic day when I'd have no reaction -- I'm pretty sure it would be fresh sourdough bread. Yum!
  9. I'm looking at the Au Lac menu online right now and it looks delicious. Do they have an actual gluten-free menu, or do you just order carefully? Do their soy meats have gluten in them like every other fake meat I seem to come across?
  10. Thank you! I bought a can of gluten-free cream of mushroom and it was awful. This is just what I need.
  11. PapaCicio's in Long Beach has excellent gluten-free pizza. I haven't tried their pasta yet (because the pizza is so good), but it's nice that they offer it. I recently tried Native Foods in Costa Mesa (it's a vegan restaurant and I'm a vegetarian, so it was a good match for me). They have a gluten-free menu, and while it's limited, it's quite good....
  12. Will you be going to Disneyland while you're here? There's some great gluten-free options there. I don't eat in Anaheim often, but I'll ask around and see if there's anything good besides what was already mentioned.
  13. Same here. I react at Regal/Edwards, but not at AMC, oddly enough. I have no idea why there would be gluten in popcorn or the butter flavor, and maybe I'm reacting to something else entirely, but I won't touch it anymore. I wonder if they would let me bring my own popcorn in if I explained the problem?
  14. My family also had a gluten-free Christmas -- something we've been doing for a while, but this was the first year where I personally benefited from it. Isn't it the best to have a supportive family?
  15. I get a little gut-ache very soon after ingesting gluten (it's the same gut-ache I got after eating every meal of my pre-gluten-free life), but the bad stuff doesn't start for about four hours. Sometimes it's over in a day, sometimes it hangs around for several days. No fun.
  16. The only benefits I can think of for an official diagnosis are these: 1. Some people might think they can cheat on the diet if they don't have the official diagnosis. You don't sound to be one of them. 2. You can get a tax break on your gluten-free food expenditures (I looked into it -- it didn't look like a big enough break to go through the trouble...
  17. Regarding heartrate: I honestly don't know if it has anything to do with weight loss or not, so I'm not going to try to go there, but I DO know that if I stay within a certain range I am more likely to be able to exercise longer and to look forward to exercising again, so that's something. My heart rate monitor died, but I like the "not breathing so hard...

    ARCHIVED Insomnia

Ambien gave me heart palpitations, made me dizzy all day, and made me hallucinate. No fun at all.
  19. So... now I've been doing this since June and the insomnia only comes back when I get glutened. It generally lasts about three days before I can get a good night's sleep again. To think solving this lifelong problem could be so easy (relatively). Good stuff.
  20. Have you been to the vegan/vegatarian celiac site: vegiac.com? You might find some help there. I've managed to remain vegetarian since going gluten-free, but I won't say it hasn't been hard. It's definitely a limiting diet.
  21. My husband continues to drink normal beers, too, and I don't blame him -- there are slim pickings in the gluten-free category. I have found a few that I like: Greens and St. Peters both make good ones that are more like the ales I enjoyed before I had to stop ingesting gluten. Anyway, I just wanted to commend you for being so supportive of your wife. My...
  22. I've been going the route of not needing to be officially diagnosed, too. Yesterday I met my new doctor (my old one moved away), and she was awesome. I told her about how Celiac runs in my family and my own experiences with being gluten-free since June and what happens when I accidentally ingest gluten. She said, "Well, you probably have Celiac, but if...
  23. I practically grew up in a dance studio, so I feel your pain. Even without allergies, it can be tough to get fed AND finish homework AND attend a bunch of dance classes. I basically lived off ramen at the studio. Have you tried the Thai Kitchen rice-noodle packs? They're cheap, fast, and don't have any peas. Supplement that with some fresh fruits and...
  24. Oh no! They were my favorite even before going gluten-free. Last time I was there, I noticed they were out (so I got their plain gluten-free waffles which are unfortunately nasty), but I was hoping they were going to reorder them. I'll write to them, but I doubt that'll do much good.
