I can't compare it to DisneyWorld as I've never been there, but I do know there are a lot of gluten-free options at Disneyland (if you do a google search of the terms "gluten free Disneyland" you'll see several reviews). You'll be best served if you call them in advance of your visit or at the very least visit Town Hall as you enter the park in the morning... -

It's interesting that you mentioned coconut milk as a problem. I, too, react strongly to it though there seems to be no gluten at all (I read and reread the label). It's happened twice, both times on days where I only prepared foods in my gluten-free kitchen and used products I'm familiar with. A lot of other people develop intolerances besides gluten, so... -

I went through that freak-out stage, too. Before I had to start eating this way, I was addicted to artisan bread -- I made a loaf every couple days. I still dream of making a gluten-free artisan bread successfully, but I don't pine over the real thing anymore: I want to be able to eat artisan bread; I do NOT feel tempted at ALL to eat the gluten-containing... -
I make gluten-free fried rice all the time. All you need to do is use wheat-free soy sauce. As far as what I would eat if there were a magic day when I'd have no reaction -- I'm pretty sure it would be fresh sourdough bread. Yum!

PapaCicio's in Long Beach has excellent gluten-free pizza. I haven't tried their pasta yet (because the pizza is so good), but it's nice that they offer it. I recently tried Native Foods in Costa Mesa (it's a vegan restaurant and I'm a vegetarian, so it was a good match for me). They have a gluten-free menu, and while it's limited, it's quite good.... -

Same here. I react at Regal/Edwards, but not at AMC, oddly enough. I have no idea why there would be gluten in popcorn or the butter flavor, and maybe I'm reacting to something else entirely, but I won't touch it anymore. I wonder if they would let me bring my own popcorn in if I explained the problem? -

I get a little gut-ache very soon after ingesting gluten (it's the same gut-ache I got after eating every meal of my pre-gluten-free life), but the bad stuff doesn't start for about four hours. Sometimes it's over in a day, sometimes it hangs around for several days. No fun. -

The only benefits I can think of for an official diagnosis are these: 1. Some people might think they can cheat on the diet if they don't have the official diagnosis. So... now I've been doing this since June and the insomnia only comes back when I get glutened. It generally lasts about three days before I can get a good night's sleep again. To think solving this lifelong problem could be so easy (relatively). Good stuff. -

Have you been to the vegan/vegatarian celiac site: vegiac.com? You might find some help there. I've managed to remain vegetarian since going gluten-free, but I won't say it hasn't been hard. It's definitely a limiting diet. -

I practically grew up in a dance studio, so I feel your pain. Even without allergies, it can be tough to get fed AND finish homework AND attend a bunch of dance classes. Oh no! They were my favorite even before going gluten-free. Last time I was there, I noticed they were out (so I got their plain gluten-free waffles which are unfortunately nasty), but I was hoping they were going to reorder them. I'll write to them, but I doubt that'll do much good.
