  1. Food for Life Tortillas. They are thick and sturdy, do not break or fall apart, they're made from brown rice and they are awesome! I just heat them up in microwave about 30 seconds, but you could probably eat them right out of package. I eat them almost every day, they replaced bread for me.
  2. I have the same exact thing.......well, the pounding heartbeat, not the bloating though. And it does jolt me awake on occassion. The weird thing for me, is that it's almost an enjoyable feeling, not the jolt, but the moments just before the jolt, like a very deep peaceful type of sleep. I know, very weird! I'm sure I have other food intolerances also...
  3. I am so jealous! I've been trying to convince nearly everyone in my immediate family that they should look into testing or try the diet as they all seems suspicious for gluten intolerance to me.......it would make things so much easier at holiday time just to have a "partner" (or two) so to speak. Good for you though! Just curious, did you convince them...

  5. Well, my daughter being diagnosed with celiac was the first I ever heard of gluten, that was a little over two years ago. The more I read and learned, the more it all made sense. I had negative blood testing, but was still convinced I was probably gluten sensitive. Started gluten free/dairy free anyway, that was in June (09)....then did the enterolab tests...
  6. I called enterolab myself with this question, because I want to know of course should I have hope? Anyway, the nurse I talked to said that there really is no definitive answer to this: some people are able to eventually heal and add foods back in, BUT she recommended eliminating for at least 18-24 months......then maybe retest, that's what I was thinking...

  13. No, butter is out due to the no dairy......but maybe I could use that Spectrum organic shortening.   14. OK I just learned in another thread that you could substitute unsweetened applesauce for oil in recipes, this may help me as I can no longer have soy (veg oil). I was thinking maybe peanut, saflower (sp?) or another type of oil may also work, anyone tried this in baking? What types of oils work/don't work when making say cake or brownies (either homeade...

  16. That's a hard one when they're not your kids you don't choose what foods to buy for them. It may be difficult for you being a nanny.....it's much easier when it's your own house, you make the rules. Maybe with older kids who aren't covered in food, but it's so hard with little ones.   17. OK, I can handle being free of all these foods myself, not a problem. Problem is will my hubby and kids eat what I make and I do enough cooking I can't cook two meals for every meal.....so I need lots of ideas to experiment with. The criteria are gluten-free, DF, soy, egg & yeast free.....we love rice, corn, and nuts. Also tomato and potato are welcome...
  18. Yes, I was satisfied with the enterolab results even though I had tested negative by blood test. This is the first time I had used enterolab, so no I had never gotten a negative result from them. Yes, I have heard that the stool test is much more sensitive and accurate than the blood test that is why I did it.

I don't know the exact percentage answer to your question, but we were told that our daughter with the same genes as our other daughter diagnosed with celiac, has a 40% chance of developing the disease.
