This is really interesting. When you were staying away from protein, do you know how many grams of protein you were getting from veggies and grains? I am on day 3 of a "low protein" diet, staying away from meats, dairy and legumes. I am still getting about 25 grams a day from fruits, veg and grains. I am wondering if this is low enough to help my body... -

I know what you mean. Since I went gluten free, I have been swollen like a balloon. The doc estimates 60 pounds of fluid retention. Ackk. It's horrible. His best guess right now is that I am not properly processing protein, and where protein goes, water goes. His prescription is "give your body time" to figure it out. I think I would go with the veggie mess, minus the cheese. Make sure they use a clean pan. Sausage, many times, has fillers, so stay away from that. Most restaurants use wheat in the hollandaise, so that's not safe. I think that's really your only option. Just make sure they use a clean pan! -

How old is she? The reason I ask is that my Tween son did the same thing when he "knew" it was gluten free. When I stopped telling him things were gluten free, he never said another word, and eats everything happily. Just a thought! -

Another challenge is that only celiac, not gluten intolerance, would show up on a blood test or biopsy. The symptoms can be the same, but no test is conclusive, other than positive dietary response. Give it a try, even if the biopsy is negative. -

It certainly sounds like you could have celiac or gluten intolerance. I had the unbearable itching too, which has since gone away! If you are going to be tested, you must stay on gluten for it to be accurate. One thing to remember is that testing is not foolproof. False negatives are very common. You can have gluten intolerance and never test positive... -
The NOW brand is very inexpensive. I think I paid $8 for about 200 capsules at Mothers Market. It costs a little more at Whole Foods, as does everything else. I hope you can keep coffee! Maybe I am deluded, but that iced coffee every day is my lifeline!

After the gigantic medical bills during my odyssey to find what is wrong with me, I couldn't afford the special testing for intolerances. I did it the old fashioned way, with an elimination diet and a food diary. It sucked. Peanut butter was the first food to come back, at about 2 months, then dairy at 4. Rice, beans at around 4, nightshades at 7. Woohoo...

I take NOW brand plant enzymes with lactase, protease, papain and bromelain. I find that I don't see undigested food in the "end" with these, and much less bloating and gas. I think I refuse to give up coffee Gosh, I sure do hope that's not it God can't be that cruel, LOL.

I had the same problems, and it turned out to be secondary food intolerances. It took some detective work and food diaries to figure it out. If that is the case, the most likely culprits are nightshades, dairy and soy. Good luck! -

My doc didn't do any testing, officially, just looked at symptoms. He said it's very common in Celiac. I was very ill for about 10 years. I developed about 25 different intolerances when I went gluten free, most of which have resolved. Stools still soft most of the time, sometimes food doesn't get completely digested, stuff like that. Nightshade vegetables include tomatoes, potatoes, eggplant and peppers. Many Celiacs, myself included, have secondary intolerances to nightshades. I, happily, can have them again after 6 months on the diet. It's very common for us to have temporary issues with them. -
I have leaky gut as a result of Celiac. For the last seven months, I have been taking probiotics, two capsules every morning. My question is: should I be taking more than two a day? Any other supplements that are definitely safe to take for Celiac? Thanks for the input! Janie

I like to make wraps out of lettuce, meats and cheeses. Standard sandwhich stuff in a wrap of lettuce. I also use rice paper wrappers- you can find them now in most grocery stores on the asian aisle. I like to wrap salad stuff or sandwhich things inside. They make great portable snacks! -
This is your lucky day because the cheese puffs ARE gluten free It's made wity yucca flour. I grilled them on every ingredient. All the meats, except there was some question on the sausage. Most are just marinated in gluten-free spices and olive oil. Have fun!

Laurie, looks like you are IGa deficient. Normal range is like 40-90. Iga deficiency means that the Celiac panel will not give you an accurate test result. I am not an expert on this,but put Iga deficiency in the search bar on this site to learn more. The big problem is that docs just don't understand Celiac. I am thinking you need to take another round of drugs to kill them off. The reason I say this is because last year I had a fungal infection of the GI tract. I had to take meds daily for THREE months to kill it off. The usual dose was like a month, max. Jason I just read a link about parasites and treatment and had an idea: since we Celiacs have difficutly absorbing nutrients, etc. and you were having active Celiac at the time, maybe the challenge is that the meds you took to treat the parasites were not properly absorbed and that is why you did not respond? I had these from age 18-21. I had them drained a couple of times, then had surgery to have them removed and haven't had a problem since. I am 43 now. I was on my stomach for a couple of days, but never had another problem. Worth looking into!

Rubios is great. Don't eat the chicken or the chips (contaminated fryer and spice blend on chicken). I like their salads with steak, carnitas or blackened fish.
