I agree with the fact that the body must be super sensitive to many other things if one has been celiac for a while. The DH rash seems to react to the smallest amount of gluten (maybe the villi are damaged and the antibodies are concentrated in the skin to a point that set backs are frequent. I am not giving up. I feel better. I am starting to sleep... -

What I am puzzled about and it makes me very wary, is the verbal speech I got from Oscar Mayer/Kraft foods today. If they are so confident of the products, why don't they say Gluten Free? They say they will break down an ingredient in parenthesis or say wheat. Same with chip manufacturers. If the chip has corn, sea salt and oil, where is the gluten... -

REad up up on liver and gallbladder health and flushes. Then do this under the supervision of a Dr. that has some concept of preventative and holistic medicine. I would try this before doing surgery, unless it is an emergency. High fat and bad diets contribute to these problems. -

I think I have been glutened by Garden Fresh Gourmet and Margaritaville Tortilla chips as well as Cheetos. Trying to be pure about gluten-free is not easy. What about tricky teas and coffees, cooking oils, tomato sauces,, etc. -

I just bought a soy version from Trader Joes - gluten free. It is not bad - it is pre-cooked. I don't know what real chorizo tastes like. It is red and spicy - you take it out of casing. -

Originally from Lafayette, LA. I was wondering the same thing...how to make a darn roux. I have thought about just trying to do a flourless roux with the Holy trinity very well browned. I have also thought about writing to a chef like Emeril or Chef Paul to ask them how to convert some receipes.

How could I forget PAIN. It is like sitting on rocks. I am currently sitting on a tempurpedic pillow. Jeans hurt. The outline of the pocket is like sandpaper. Elastic in underwear is unbearable. pants behind the knees hurts loose, babysoft cotton clothing is all I can wear, my uniform is a long cotton tea shirt or gown , whe home alone.

I have some that are fading, but others that seem to be reacting worse, hot, angry, red, weepy. I wonder if it is a get worse before it gets better detoxing type reaction.
