A fine day of weather here, with much of it spent out on the deck. Much more of it spent in the kitchen. Welcome to the board. I'm glad you found us. I would tend to agree with the person on that other board. A celiac following a gluten-free diet will usually completely heal, and all symptoms will cease. Reintroducing gluten will cause the autoimmune response to begin again, and damage to the intestines will recur. If this takes place slowly, the result... -

This won't be a complete answer, but I can respond based upon my own experience with this procedure as an adult. Red food color can temporarily discolor the lining of the intestines making the appear inflamed when they are not, and by doing so mask real inflammation. Jell-o in flavors like lemon or lime is okay, as is clear apple juice. -

No to the first part--the oil is dedicated to potato products. The fries and hash browns are cooked in fryers at the front of the store by the window crew. Everything else that is fried is done at the back of the store by the grill crew. But the oil itself may be an issue for some of us. I eat the fries and hash browns and have never had an issue. Yeast extract is not a concern with respect to gluten, but it is a possible source of monosodium glutamate (MSG). MSG does not contain gluten, but does cause adverse reactions unrelated to celiac disease in some people. Without seeing the complete ingredient list, I can't guess what other ones might be of concern. -

Tis late on Sunday. Tomorrow will be the ninth anniversary of my appointment with the doctor to get the results of my biopsy. Not a surprise, but it did finally confirm what had been making me so sick for so many years. Things for celiacs today are so much easier than they were nine years ago. Welcome to the board. My first guess is the fryer oil. If they fry battered stuff in the same oil as the french fries, some gluten will transfer to the oil and then to the fries. If you are new to the diet, and have damage to the villi, then digestive issues are likely to continue until the villi heal, even if your diet is 100% gluten-free. Many of... -

The only time I worry about cheese is when it is a cheese spread, cheese sauce, or is flavored. Pure cheese, including cottage cheese and cream cheese, is not something where I worry about cross-contact, because a cheese factory isn't likely to process gluten products.
