I'm just reading your post for the first time, and while ED may generally refer to Erectile Dysfunction, in the context of celiac disease I would think of Explosive Diarreah. Been there, done that.

The snow has started here, but is not expected to be heavy until midday Saturday. That means that we should have an easy ride in in the morning, but coming home could be problematic. Modified food starch is not always gluten. In fact, it is usually corn. In foods in the US, if it is wheat it must say so, but this rule does not apply to drugs. -

"Latent" simply means hidden. Not everyone with celiac disease presents with visible symptoms, but the fact that you test positive for the antibodies means you have it. I think you already have your answer. I read it in your post: you feel better on a gluten-free diet, and problems return when you ingest gluten. You don't need a doctor, a biopsy, or a blood test to back that up, unless you need written documentation to show some bureaucrat why you need accommodation of your dietary requirements. As we use the term, neither corn nor rice contain gluten. As defined scientifically, the word gluten could refer to any plant protein, so you may see "corn gluten" or "rice gluten" in ingredient lists, but these plant proteins are not ones that trigger the celiac autoimmune reaction. -
