  1. And then there are diabetics (I know one) who don't make any lifestyle/diet changes and simply adjust their insulin dosage to accommodate the bad food choices and portions! Yikes!
  2. YES!! I don't know that it has to do with a glutening (for me) because I'm so seldom glutened, but occasionally I'll get a cramp near my toes on the TOP of my foot! It baffles me because there seems to be so little muscle there! I get cramps in my calves too, but way less often.
  3. I can imagine that people with UNTREATED diabetes and celiac disease might come to early ends, but with treatment... meaning a completely gluten free diet for celiacs... I don't believe people with celiac disease live any less long than anyone else. I know diabetes is a degenerative disease, but with proper treatment and lifestyle changes... I don't see why...

  5. I'd go w/ the private cooking teacher like mentioned above... only because if you're not a regular cook... substituting things might be daunting. I'd look thru some gluten-free cookbooks and look for a basic one... not one that's going to want you to have lots of different versions of flour mixes. Then experiment! I have friends who are really great about...
  6. Apparently... or else something else is going on! My youngest DD, who's had a terrible time and is being tested for things like refractory celiac... had repeat blood work to find her numbers went from an 83 to a 79 in 6 months! She is so completely gluten-free, total gluten-free house, all new cookware and an extremely limited diet! Now she's researching...
  7. Hi, thanks for your response to my post, I just wanted you to know I've put a post-it note on my fridge saying 'I'm gluten free because it's good for me!', it'll make me smile tomorrow morning when I'm feeling blue!

  8. I don't know why it matters that the "test" proves you have celiac? If eating gluten free makes you feel better, then what's the problem? I guess it wouldn't matter if it was never an issue... meaning you can simply bring your own food to anywhere away from home and don't eat out a lot or do your own research if you do. I've never had a problem w/ people...
  9. I found Namaste pizza crust mix and love it. The bag makes 2 big crusts (w/ only 1 tsp. of oil and 1 1/4 cups water for each crust!), but you can measure the mix out to just make one crust at a time and save the rest of the mix for another day. It spreads easily... I spread it out on parchment paper so I can pull the crust from the cookie sheet and slide...

My sister, who's had lifelong excezma and many food allergies, tested negative (she had to INSIST on being given the blood test), but admits that her gut and her overall wellbeing is SO much better when she simply cuts out obvious gluten (bread, etc). She's not willing to fully embrace a gluten-free lifestyle... she lives in France, where they make the best...
  11. I always take a sandwich (or several) and some fruit or snacks. Once I had the small freezer pack in my soft-sided lunchbox confiscated... even tho I'd called the airline before hand and was assured it would be okay.
  12. I don't know if you were responding to princess hungry above, but... because she's my youngest daughter... I can tell you that her kitchen is completely and totally gluten free. The child is down to about 10 foods... eggs, salmon, white rice, apples, and a few other simple things... NO spices whatsoever and very limited produce. If there's any CC happening...
  13. I'll admit that I couldn't wait to try this "schmoosh" breakfast and had it for supper last night. I was disappointed tho, cause the grits were pretty tasteless. Next time I'll add more salt and more cheese. Plus, I wish there was a way to get like quadruple yolks, as the runny part is the very best part of the egg!! ha ha
  14. I buy Pamela's bread mix... having tried too many times to bake my own, not liking any of my attempts... and ending up w/ lots of smalll bags of different flours. I buy Namaste pizza crust mix and Tinkyada pasta occasionally. The rest of my diet isn't hard... lean meats, fruits, and veggies. I'm not grain free but am grain seldom.
  15. I was a little disappointed in the Udi's bagels that I was thrilled to find in a health food store. They didn't have any of the density I expected in a bagel but were more like a toasted roll. I've made the bagel variation w/ Pamela's bread mix and found them much closer to the density/texture I remember. Will that stop me from eating them?? NOPE!!

  19. I've tried many different flour blends and ended up w/ tons of small bags of different flours! I found Better Batter and that's my flour from now on! I order it... w/ my Pamela's bread mix and Tinkyada pasta (shipping is free when you order a certain amount) from that company we don't mention on here ... ya know the one w/ the name of the long river in South...
  20. I make those all the time using Parmesan cheese. I don't use a muffin pan... I just drop blops on an ungreased cookie sheet. YUM!!
  21. My Irish descent was a clue for my doctor too. Please don't be afraid of the endoscopy! It's absolutely the easiest test I've ever had. You'll lie down on a gurney w/ nice warm blankets. They'll put in an IV so they can give you the anesthesia thru it. They'll shoot some lovely sleep medicine in there and you'll wake up when it's over. You might have the...
  22. I can't even remember the last time I was glutened... cause I'm THAT careful and we rarely eat out. Haven't intentionally eaten gluten since about a year into my gluten-free journey. I'd NEVER, EVER do it on purpose now!!
  23. I think gluten cooks, w/ the best intentions, want to cook for us so we feel included ... and become a little intimidated when they realize what's involved. It's easier for us as we're used to it, but it can be daunting when you have to think of minute details... about CC.
  24. You can go gluten free w/o any testing and if it makes you feel better than you've ever felt... perhaps a formal diagnosis isn't important!
