  1. There's no place to get gluten-free pizza where I live... in very rural northern Arkansas. I buy Namaste pizza crust mix and make about 5 crusts (it's supposed to make 2 large ones) and freeze them after baking. That way I can let one defrost, top it, and have my very own yummy pizza. White sauce, pepperoni, peppers, cheese, and chopped pineapple is my fave...
  2. How awfully frustrating to feel so crappy and have doctors ignore you or tell you it's in your head! My poor youngest daughter was diagnosed w/ celiac (I have it and middle daughter has it... oldest daughter was diagnosed last year), went gluten free... she was very well versed in the process having been around me for years... and proceeded to get worse...

  6. It was a WHAM moment for me. I had NO symptoms until I was 48 years old. Out of nowhere came unrelenting diarrhea and belly noises that I used to say sounded like wolverines trying to fight their way out of my gut.... no pain, just constant "runs."   7. I was the first and only in my rather small extended family. My doc told me that celiac was common in Irish people... the whole family came from Ireland in the mid 1920s. Since then, all three of my daughters have been diagnosed, but none of my siblings have, altho I believe they could benefit from being on a gluten-free diet.
  8. By the time I got in touch w/ the hospital dietician (about a week after diagnosis) she told me I already knew way more than she did about celiac. That was 10 years ago. One can only hope they're more informed about celiac now!! I've had some bad experiences w/ Trader Joe's gluten-free stuff... be careful.
  9. I used to buy Shaklee's breakfast powder... similar to Instant Breakfast but w/o all the additives and crap.   11. I'd read about the great stuffing EnerG bread makes and bought a loaf of their tapioca bread last year. I cut it into cubes and set it on a sheet pan to get stale... and it smelled so strongly (and BAD), I ended up tossing it!! Is there another EnerG bread flavor that you use?

  17. I use my Pampered Chef pizza stone all the time that's been used for gluten foods. I just put my pizza on a piece of parchment paper and still enjoy the crispness of the stone.

  19. I read a whole bunch of Oprah's book club books and liked every single one. Jodi Piccoult is an author I love. LOVE the Bronte sisters and any English fiction. Right now I'm reading Stranger in a Strange Land by Heinlein for the 3rd time.
  20. I've been using their pizza crust mix for more than a year w/ no problems at all. This last time, I made up the whole bag (rather than one crust at a time) and baked 5 smaller crusts... froze 4 and can't wait to try them!
  21. We go out to eat very rarely. We live so rurally that there's only a Chilis and, of course, all the fast food places.   23. I really like the idea of saying your doctor said... whatever... Telling them that you're fairly new to the diet/lifestyle and that your doctor strongly recommends not eating at other's homes for a (long) while is brilliant! I think telling the boss to make chicken parm like he always would and bringing your own gluten-free portion is a great idea too...
