  1. I am considering going on the SCD diet, but have a few questions. I have been reading some on the Pecan Bread site, and some from here, trying to get my bearings (next stop is the library for the book that is recommended). It is somewhat overwhelming to me. I have a suspicion that I probably have some level of intolerance with too many foods (I think...
  2. If I have gluten-free oats (rolled) - and I give them a whirl in my food processor - will I have oat flour? I have not found gluten-free oat flour anywhere and shipping is too expensive. Any suggestions? Also, does Quinoa flour exist (already packaged)? Or would I need to put that through a coffee grinder or some other process to get that type flour...
  3. My daughter felt bad after eating some ham (it was lunch meat ham that looks to be okay). She really thinks it is the ham. My only thought is - are there nitrates/nitrites in it? Maybe the preservative is causing a problem? I'll have to check the ham we had. But since then I purchased some Hormel Naturals ham and turkey lunch meat - which seems to be...
  4. Hi Jenny, Thanks for the tips! I live in Fort Worth - so have Krogers and Tom Thumbs - both of which are fairly close by.
  5. I wish I didn't have to drive all over timbuktu to find decent products!! It always seems like better choices like Wellshire Farms bacon or Hormel Natural are only in specialty stores (not regular grocery stores).
  6. I am sorry to hear about your kitty. I will prayer that all turns out well. I do not have cats, but do have two dogs - so I know how that is when they are sick. I am thinking a dropper to get a few drops at a time of fluid (perhaps the pedialyte as suggested) would be what I would try.
  7. I found what looks like a great Pumpkin Pie recipe - and I think for the couple of ingredients you don't have, it is an easy sub for what you do have. I will post the link (you can look at the pictures and comments - plus there are other great recipes on this site) - plus I will copy/paste below. No crust needed for this pie! Open Original Shared Link...
  8. Thanks Josh! I have actually tried Kinnickinnick's crust - and I like it. I have a small stock pile in my freezer. For some reason it is not a favorite of my girls. They comment on the sweetness of the crust. Kinnickinnick gets my endorsement too for a purchased gluten-free product. I do notice the sweetness as well, but overall it was the...
  9. I also have not tried subbing flour mixes into regular recipes. Gluten free baking is different from regular baking. For example, you don't get bread dough per se, you get more of a bread batter. Mixes of flours work best. I would recommend looking at some other recipes of gluten-free baked goods you think sound good and compare to your favorite recipes...
  10. Thanks for the links purple! I did make this recipe tonight with modifications so thought I would post. I used Ener-G egg replacer and water (instead of eggs). In place of the chickpea flour, I used brown rice flour. Next time I would like to sub out some of the flour for a little bit of millet. I might even try using some gelatin - but making...
  11. In your opinion, does it work fine to sub Arrowroot for Cornstarch? It looks the same, seems to feel the same - but I know it seems to be a little different for use as a thickener - so I was just wondering... Thanks, Dawn
  12. Yum - rocky road treats! That sounds so good right now. I am craving something sweet. Except I think marshmallows have corn in them (corn syrup). I hope I am wrong, or I hope there is a substitute. Though peanut butter and chocolate sound really good as well. Dawn
  13. Hi Rachelle, Thanks for the answer on the flours. I just noticed the recipe uses eggs. I am currently avoiding eggs (have eliminated them and have not done a challenge yet to see what effect they are or are not having). I am thinking the egg would help with chewiness, holding it together? I am not sure if egg replacer would work in pizza dough...
  14. Thank you for all of the great ideas! I love seeing what other people are having for supper. I feel so un-imaginative so this is a big help. Dawn
  15. So many pie crust recipes, so little time! I am currently trying to avoid eggs, and I have Pamela's mix here - so I am thinking I will have to try Celiac Mommy's recipe. BUT - my only question is - if I am making a savory filling (like Chicken Pot Pie)...will it work okay to leave the sugar out? I am thinking yes - but sometimes you never know with...
  16. I don't recognize anything gluten in the ingredients (I don't have a can with me, will post later at home). I am trying to figure out what is causing a problem for my daughter. There is a big ? mark on these beans. I have quite a few cans. I'll post the ingredients because if I am missing something that contains gluten, I need to be informed. Meantime...
  17. dbmamaz, I have Annaliese Roberts book and also like her bread recipes (actually, I have only made her basic bread, I like it with the buttermilk). However, mine keeps falling in the middle when I removed it from the oven. The first time, I only had the rapid rise yeast (which she says not to use). So that explained that time. The second time, I used...
  18. Does anyone know if Van Camps pork n beans are gluten free? I have cans and cans of those on my shelves. Thanks, Dawn
  19. I have been following a mostly gluten free diet for the past 7 or 8 years (blood tests negative for celiac, but I had also been off of gluten for some time prior to the test, and at the time of the test had low levels of gluten back in my diet). I have 2 daughters who also have problems with gluten, the one more so than the other. Blood tests negative...
  20. Rice Dream is not gluten free? I just wanted to make sure. I am trying to make non-dairy choices. Thanks, DMarie
  21. Hi Kaiti, Thank you for your response. I will have to do some looking to see if I can't find a doctor in my area that is more familiar with Celiacs. I had been by and large gluten free for some time (not totally, but the amount of gluten that I ate was very small...usually if I had some gravy that used flour as a thickener, or condiments). I started...

ARCHIVED Celiac Dr In Fort Worth Tx?

Would there be anyone out there who could recommend a doctor specializing in Celiacs in Fort Worth TX? Are there any sites that anyone knows of for location doctors who specialize in Celiacs? I have seen 2 doctors who don't think it is Celiac, but the symptoms sure seem like what many describe on this forum. Mine aren't "typical" symptoms, so I think...
  23. Hi, I have had a host of medical problems for some time now (digestive issues/allergies/constipation, etc). Part of my problems likely stem from the fact that I was a Bulimic (eating disorder) for most of my teen years and sporadically into my 20's. When I eat wheat, I have a range of reactions (to minimal, to a headache within about 20 minutes after...
