+1 good post. also good to know that i'm not the only one who can't eat in resturants. i agree that symtom free is not the same as damage free, as far as we know. i've heard bad advice on the board before that "; it's ok to eat in resturants that have gluteny kitchens, i'm soooo sensative and i do it all the time, no prob" it's frustrating to hear... -

i wouldn't call DH a 'mild form of a rash'. maybe it's not DH? there are lots of other skin problems that gluten seems to have an effect on; that is, it improves when removing gluten from the diet. apparantly, people have had psoriosis and eczema improve on a gluten free diet. I don't trust products that claim 'gluten free' to be gluten free, so why would i trust one that doesn't?? i trust sweet potatoes and meat and vegetables (especially with skins) to be gluten free, thats it. even then i'm not 100% sure. someone could have injected it with a syringe!! a study showed that 1/60th a teaspoon of wheat flour a day was enough to prevent intestinal healing in celiacs. that makes the amount of gluten in 1/60th a teaspoon super tiny, as there are 100s of protiens in wheat besides gluten. this is the good part: they havent done studies with even smaller amounts, so it is possible that it's ditto for 1/2 that... -
if you are just beginning the healing process, i think it's best to be ridiculously careful about avoiding even the faintest hint of gluten in your life. since the damage is coming from your immune system creating antibodies, you have to stop it from doing so to give yourself a chance to heal, and that only happens if it doesn't sense the presence of gluten...

ya, the orginizers were really nice. I learned that cyrex labs is now doing testing for more than just IgG, and IgA, but for an array of related antibodies, gliadins 15, 17, 33, glutenin, gluteomorpins, ect... the more limited tests could explain false negatives. also about wheat deamadization, which is pretty scary, what they do to wheat chemically...

thanks, it was a while ago. i had eaten the same thing at several other PF Changs in the past with no problem. at this point, i just try to look at it from a risk/reward perspective; i know i'm capable of bringing my own food with, so i don't have to eat out, so the reward is small, and the risk is great, even if it's not likely, getting glutened is too... -

i went to PF Changs, ordered nothing but steamed chicken and spininch, with no salt, no nothing. just 2 ingrediants. i was really emphatic with the server that i was really sensative to gluten, no sauce, no nothing, and i still got severely glutened. you explain it to me, if it's not CC?? that was my last experience at a resturant, and they are supposed... -

i googled it, and kale has 1,3 micrograms of iodine per 100g, and cod has 99 microgrmas for a 3oz serving, which is @ 100grams. green beans, (another one of the few ingrediants i even eat) has 3 micrograms. looks like spinich has even more, and i eat that. i'm going crazy, do i have to stop eating vegetables now??? i am so mad right now. i have no idea... -

i've wondered about that myself; i'm being told to avoid what is considered a nessisary nutrient. i've noticed an improvment since i cut out iodine, and actually remember having bad flare ups in the past when i was in mexico eating fish every day. i take a little fish oil that has a tiny tiny amount of iodine. how much do you really need?? -

thanks, i checked the website for the laundry soap i use, ecos, and they claim gluten/casien free. i only use soap from gluten-free savonnirie, which i love, and toms from maine toothpaste as body care products. thats why i'm racking my brains, because i feel like i'm going way way further than most ppl, and the DH keeps flaring up. eating out anywhere... -

I really only eat a limited amount of ingredients for over a years now. meat, (beef,lamb, chicken) ; greens like kale, mustard greens, squash, carrots, sweet potatoes, lettuce, avacado, lemon, olive oil, cocunut oil. no nightshades, no broccoli, asparagus, no high fructose fruit like stonefruit, bananas ( and i love bananas) i don't make any exceptions... -

thanks. I've actually never had a biopsy, and have no formal diagnosis for celiac either. I'm still not clear on if a DH biopsy would even be reliable if you're not consuming gluten.? In any case, you could not offer me a sum of money big enough to get me to consume one iota of gluten if that was nessisary for the test. I know what happens when i get...
