I saw some "gluten free" cookies at the health food store the other day, and on the back of the package it said "processed in a facility containing wheat" and it listed xantham gum as an ingrediant, which i understand contains trace gluten. I thought of e-mailing the company and asking them, "just what the deuce are you fools up to?" but figured i did'nt...
  2. now that i think about it, i had a near death experience in '95 with mushroom poisining, and @ 3 years ago i had a really bad staph infection on my knee. a lot of my symptoms got significantly worse after this I realize now.

From what I understand, DH can take up to 2 years to go away on a gluten free diet; this is because the antibodies which are attacking you and causing the inflammation are deposited between the layers of the skin in the case of DH.   4. Try finding ways to be as kind to your tummy as you can, I found that peeling my apples, and not eating the skin of my sweetpotatoes helped. When I phased out quinoa, the only grain I was still eating it definately got better, it's pretty rough on your guts!

  15. According to Robb Wolf who is a bio chemist and has done research on this, gluten is a gut irratant and it causes inflammation period. This doesn't mean everyone has full blown celiac, but it is harmful to everyone. Check out his podcast called paleosolution. Please don't be hard on yourself for not being able to follow through on this you will go through a lot of changes as you heal, and none of us are perfect still, I know you want to get better and be well you wouldn't be on this board if you didn't gluten is hugely addictive, I understand it mimics opiates to your body and brain.   18. the problem with any kind of processed corn is that is contaminated with gluten always. it is harvested with the same machinery as wheat, stored and processed in the same facilities as wheat is, so it's just always contaminated enough to be harmful.   20. Are you using dairy? I believe your body can confuse casien with gluten , and reacts to it the same way by producing the antibodies. I was off of gluten for over 2 years, but did'nt start getting better until i kicked the dairy @ 3 months ago.
