  1. I'd definitely open up a bakery because that's whatI love to do. But I think I would also start something like being a "baking coach." I would forsee going to people's houses and help them learn to bake stuff, as well as develop the basic fundamentals for understanding how you can tweak any recipe for your needs. Cookbooks are really one sided.
  2. yeah, I am sorry. That totally happens to me. I really wish recovery was linear and not so sigmoidal.
  3. I've found that with dating, how they respond to celiacs is sort of a screen. Luckily most guys have been really understanding about it, and always checking with me first about food etc. If they don't respond well then they are losers and will need to be chucked anyway (they will be insensitive in other ways I am sure). When it comes to first dates, etc...
  4. I am so sorry you are feeling badly. I've been through the same thing before and it's really frustrating because it also takes me 4-6 weeks to recover. But you have to remember that you are human and not perfect and sometimes you are going to make mistakes. Sometimes others are going to make mistakes and it will cost you too. It TOTALLY sucks but it's...
  5. grades 1-3? come on...! You aren't even done developing at this point. Places also are highly dependent on who is in the field that day. Likely it IS related to diet and/or hydration, but you don't need gluten do be fast. You need to eat an appropriate balance of carbohydrates, fats, & protein as well as fruits and veggies. There may also be something...
  6. Me too. I had a vit D deficiency that was spotted 2 years ago. I was tested again just recently and it revealed that I was just below normal. I was all excited and happy but the screener just hollered at me for being low - she didn't know my history. Hopefully next time I will be in the normal range.
  7. There is an old chinese proverb that my boss told me years ago: a full bottle makes no sound. a half bottle sloshes around. This was in light of the idea that sometimes people make a lot of noise even though they don't have the full story. The actual article listed as a reference above studied the differences between the reactions of celiacs to wheat...
  8. I BBQ'ed last night with my boyfriend and he got something new and I didn't see that it was rolled in panko. So although there is a slim chance that I was not cross contaminated, the likelihood is pretty high that I was. It usually takes a few days for my system to shut down and then it takes weeks for it to right itself. In march there was a crouton in...
  9. Since I don't have kids I can't help with the explanations to others - but there are many on here that can help with that. I can tell you that I was diagnosed later in life so I know what you are saying about not wanting to turn away from gluten. I know this might not be what you want to hear, but you just have to take a deep breath and take the plunge...
  10. I think that everyone is different. I have been casein free for quite a while (and historically quite sensitive), but now I can eat a piece of real cheese now and then, (and casein is a major component in cheese, apparently). However, I haven't yet bothered to really sort out the lactose intolerance from the casein intolerance. I was avoiding it all to...
  11. Hi Scott, I don't know much about the official journal studies on the subject, but I can tell you that I have 2 full marathons, several half marathons, five half ironmans, and two full ironmans under my belt. All of these were done *after* I was diagnosed as a celiac. Looks like we were diagnosed around the same time! This year I have two more...
  12. Vomiting 2-3 times a week for a year is a serious problem. I know it's a pain but I would probably keep the follow up as well. It's few hours gamble for some possibly useful info.
  13. I realize the anti grain people are going to yell at me for this, but I'm sticking to my guns: it sounds like you need starches in your diet. Rice, potatoes, corn, gluten free bread... something. Those starches are still really important for athletes. One thought on the bloated belly - it might be the raw veggies that are still going it. Raw veggies...
  14. a. I'm with sb2178. never try new stuff before a big ride! gluten-free Bagels? jelly? b. triple bypass??? please tell me that this is a RIDE, not a procedure.
  15. Where's the "like" button??
  16. 1. Ok, Mr/Mrs "I miss cookies," first thing you should do is go out and find some gluten free cookies from liz lovely. They are fantastic, not just "fantastic for being gluten free." Make sure you get the gluten free kind as they make some gluten ones too. 2. I am pretty sure if you want to be a meatless celiac, you can do that just fine, provided...
  17. Last time I was exposed to gluten (from a lone crouton in a salad), it took 3 days for my body to start to fall apart. it took 5 weeks for me to get back to normal. However, the problem was not fatigue, it was straight up D. (which, after a while, did lead to fatigue of course) The D is usually my problem but most likely related to a colitis flare up...
  18. I really like this post! To add my own observations: I nearly shot my dad when I was diagnosed and in trying to cheer me up, he said "it's just a diet change." Now I am grateful that "it's just a diet change." My alcohol tolerance is crap too. I am grateful that the "starving because I am afraid to eat" phase is largely over. I too, am...
  19. A) good, god NO. That's because you are empty! We've got to help you adjust your DIET. You are working out on a diet like this? Your approach at the end of the post seems like a reasonable start. Get more little nibbles in more often. ID more protiens. If you have to go back to meat you will surely, surely, have to nibble at it otherwise...
  20. I really thing the best thing for you to do would be to see a dietician. Your diet is alarming - especially if you get so hungry that you can't cope. That's a big fat red flag right there. You need to get protein from somewhere, and a good dietician can examine your current diet to make sure you are getting everything you need. I highly highly doubt you...
  21. is it your fingertips or your whole hand? is it constant? (like no break over a span of days...)
  22. So, I think three things: 1) I guess I would say that if you have a predictable routine that maybe you aren't eating enough after your harder workouts, especially if you wait to refuel. I've heard that you want to get in some calories within a certain time frame after you finish a workout to help improve recovery. If you are waiting to do so, that may...
  23. ok so a few questions. Do you only exercise once a month? What kinds of exercise is it? How long do you go for? What do you consume during the exercise? It might be because you are not eating the right foods, but it also depends on what you are eating. How are your meals throughout the day...?
  24. If it's bad, your body will get rid of it ASAP via puking or D. I don't advise making yourself puke. Just take care of the symptoms as they arise...
  25. I pretty much agree with previous posters. Just listen to your body. It sounds like you way is serving you pretty well.
