I actually wonder if it's what you are eating instead that is making you so miserable. Are they things that are out of the ordinary for you? Are you eating enough & is it balanced...? I hope you can get it sorted and start improving soon. Being so unhappy sucks, and I'm so sorry!!

I had almost the exact same thing happen to me at Claimjumper. It should SAY on the menu that the dish comes with onion rings. It didn't when it happened to me either. I've started using other utensils on the table to alter the food if I have to send it back, that way I know whether or not I am getting the same dish with the gluten removed or an entirely... -

My system doesn't like the lentil flour in the gluten free versions mac & Chreese. At this point I would go back to really basic things (steamed rice, plain baked potato, bananas, etc) for a few days until you can at least get the gas to go away and then slowly start adding foods in one by one, and give yourself a few days betwen each food to see how... -

I'd stay away from the laxatives as well. Once the gluten is in the reaction will be triggered, and that is that. It takes 6-8 hours for food to get through your small intestine, which is where our reaction occurs, according to the mayo clinic (link below). Oh man. That does really sound like you are stuck between a rock and a hard place. Stupid insurance rules. Ultimately you are doing the right thing anyway, even if you actually had a good doctor. Nobody can watch out for your health like you can, so doing your own research is for the best. I am glad you have found a way to get by, and have a good support...
