I do that. I'm stalking a gluten-free meal, much as a hunter stalks a doe. Sometimes I come back empty-handed but I've gotten pretty good at it. I was on a short vacation recently, found a group that lists restaurants in the area, and had some really good gluten-free meals. -

You may need to try a very strict diet where you're not eating processed foods. Also, some celiacs react to oats and casein as if they were gluten so stop eating oats, and consider removing dairy from your diet as well. I'm not diagnosed so no experience to share, but I generally feel better if I don't eat processed "gluten free" cookies, breads, and so...

You could be feeling the quick drop. Everything you're measuring sounds like you do not have diabetes or a dangerous blood sugar issue. Fasting should be below 100, hypoglycemia is below 70. Rises to 140 or 150 after meals are pretty normal. A quick drop back to the 70s might be a little unusual but not an indication of diabetes. That doesn't mean you... -

Meat can have a lot of free amino acids that cause people trouble. Fish in particular can have histamine. I was going to link you info on the RPAH failsafe diet website, but it seems to be gone. What they suggest is trying freshly slaughtered meat (cook no more than seven days past slaughter, three is better), or freshly killed fish and avoiding leftovers...

If your insurance covers it your doctor can order it, but please understand that the genetic test is not diagnostic for celiac. It also does not rule it out. Your symptoms sound very much like mine. GI trouble, deficiencies (I had anemia), major depression with a lot of fatigue, and carpal tunnel syndrome. Hi there. I got some relief from the "IBS" by the end of two weeks on my elimination diet. Like many celiacs I was also initially sensitive to casein and soy. It took a few months for my energy to return, the canker sores to go away, the anemia to resolve, and so forth. -

I'm sorry you're feeling so sick. Yuck. Thing is, if you go gluten-free now and the tests come back negative you'll always wonder. It's only two more days, you go to the doctor, and you can stop eating the stuff for good! -
Baker's is the brand name. For the pure chocolate with no additives, you want the unsweetened chocolate. It's usually in the baking section of the grocery store and the box is brown and orange. Be careful you don't get anything but the unsweetened, because the bittersweet and semi-sweet will probably have soy lecithin.

If you're unwilling to go strictly gluten-free, your only option is to challenge four slices of bread worth of gluten/day for at least 4 weeks; a couple months is better; and go to the doctor for a celiac workup. LOL! No worries. Cocoa powder is what's left of the cocoa beans the cocoa butter is pressed out. Hershey's cocoa powder is a one-ingredient item and all mine says on the label is "cocoa". Depends on how sick gluten makes you. I self-diagnosed have no problems at all turning down gluten or explaining myself, as I'm sick for a couple days after eating traces of it.
