  1. What are you typically eating? Have you considered dropping dairy or soy for a while to see if it makes a difference?
  2. Thanks Skylark! I'll have to look for Nature's Bounty.
  3. I've been wanting to try this but I can't find a fish oil capsule without soy. Can you recommend one?
  4. I don't know anything about that company, but I have read on here of people reacting to wheat grass in vitamins that were labeled gluten free. IMO, those shakes would not be safe at all even if they say they are "gluten free".
  5. Thanks I have frozen regular bell peppers, but wasn't sure if I could freeze this type of pepper. I might freeze a few to see how they work for recipes.
  6. Thanks for the tip on how to dry them. Yes I live in Virginia and it has been in the upper 90's for the past three weeks. They are not quite ready to pick, but I think many will be this week at the rate they are growing. These are just like the ones you are describing, long and skinny. They start out green and turn red. Here's a picture to give you an...
  7. If you still have tests to do for celiac then you should NOT go gluten free until those tests are done. Doing so could make the tests inaccurate. Yes, many do find they are better without dairy. Some react to casein in the same way as they react to gluten. Others have a problem with lactose becaus eof the flattened villi in the small intestine. If the...
  8. Last year I grew jalapeno's and my hubby said they weren't spicy enough for him. So I'm growing Kung Pao Peppers this year. My only problem is that I have three huge plants that are about to yield me dozens and dozens of these long red peppers that are very spicy. I plan to make Kung Pao chicken a few times and use them for stir fries, but I'm sure...
  9. Yes, this is a good reminder. I think both Bumblebee and Starkist make tuna without soy, but you have to get their more expensive premium tuna in the gold cans.
  10. I have not found a safe Mexican place yet and my husband loves Mexican food as well. There are just too many places that wheat can be hiding. They could put it in the beans or even the meat (I'm still upset that Taco Bell puts wheat in their meat ). Most corn shells or corn chips should be safe, but I have even seen corn chips with wheat as an ingredient...
  11. That's pretty much how I cook now too and I feel great when I stick to it. I am dabbling in gluten free baking, but very slowly. I spend a lot more time planning meals and cooking, but it's so worth it to feel good. BTW, do you make your own broth with the chicken bones from the roast chicken? It's really easy to do. When I find a deal on whole chickens...
  12. That's hard to answer because I didn't just go gluten free to start with. I had been reading a lot about food intolerances as well as gluten. Before that I went through so many tests in addition to the sleep studies--I had and MRI, a heart monitor, tons of bloodwork (tests for everything from Lupus to Thyroid Disease). I got frustrated with the doctors...
  13. In addition to the social aspect everyone has mentioned, the need to always plan ahead to have food you can eat at all times is really tiring. I plan my days around food, there is no just going out someplace and picking something up from where ever when you get hungry. This past week I relearned it the hard way. We went to visit some friends for what should...
  14. I have made good banana bread with the following recipe. It would probably make good banana muffins too. Just reduce the baking time for muffins. 1/2 cup buckwheat flour 1/2 cup potato flour 1 cup tapioca flour 1 teaspoon baking soda 1/4 teaspoon kosher salt 1/2 cup butter, slightly soft 1/2 cup honey 2 large eggs, beaten 3 large overripe bananas...
  15. Thanks for this tip. I used glutenous rice flour to fry some eggplant and it was really yummy that way. I just dipped the eggplant slices in egg and then in a mixture of crushed gluten-free cornflakes, rice flour and Italian seasonings, then fried until golden brown. I tried it both with and without the rice flour and the glutenous rice flour made a better...
  16. Congratulations! Don't worry about your mom. She'll get over it when you show her that precious new baby.
  17. Well said. I call myself gluten intolerant because I self diagnosed, but if using the words "disease" or "allergy" will make people who have to prepare my food take my request for gluten free more seriously I will use those words instead. An "intolerance" sounds like a mild inconvenience or a matter of preference rather than something that will make me...
  18. I could have written you post 6 months ago. My primary symptoms were fatigue, tingling in my legs and arms, muscle weakness, muscle pain and brain fog. I went through multiple sleep studies that found nothing. I started getting the bloating and stomach problems last. First, as far as the blood test results go they are not very accurate. Many people get...
  19. I'm so glad to hear you are feeling better and making progress! When you challenge with gluten again be sure to try it with something that doesn't contain soy or other possible problem foods.

    ARCHIVED Eggs

This thread is really old, but I was wondering if you have gotten new pans since going gluten free? If you pans are non-stick or cast iron, especially there is a huge risk of glutening your gluten free food with them. Fried eggs are really likely to pick up gluten from any scratches in the pan. I'm not saying you don't have a problem with eggs, you might...
  21. Now I'm dying to know what happened? Were the gluten free bread and bagels legit? I would given her another chance if she sounds sincere. Just be cautious.
  22. What are you typically eating? My joints hurt more when I eat anything with soy. And if you are eating a lot of processed gluten-free foods they often contain soy. Cross-contamination is another problem with gluten free substitutes. If you are super sensitive you could still be reacting to trace amounts of gluten.
  23. I answered your question here: BTW, according to the Udi's website Navan Foods is now carrying Udi's bread. If they are this is something new (it's been a few months since I checked there). You might want to contact them to verify.
  24. This post is old, but I live in Virginia Beach and I have yet to find Udi's anywhere here. The only pre-made breads I have seen are EnerG and Food For Life. The FFL is at Trader Joes. EnerG breads are at Farm Fresh and a local allergy free shop called Navan Foods. You can see what else Navan foods has available from their website here: Open Original Shared...
