Be sure to wear gloves, change them frequently and wash your hands frequently and don't touch your face while working. I'm super sensitive and I know I could not work there but some people might be able to do it. It's going to be very hard to not get cc'd by all the crumbs you have to clean up and by filling orders but it might be doable if you are super... -

You are correct since gluten is not a germ it is a protein. Hand sanitizer does not kill or destroy it. They only way to get it off the hands is by washing with soap and water. -

Sweet rice flour is more sticky when you mix it and gives sort of a stretchy texture in baked goods. If you use plain rice flour the crust may be more crumbly or grainy. Sweet rice flour IS the same as "glutinous" rice flour however (which is glutne free despite the name). Do you have an Asian food store in town? I can always find glutinous rice flour... -

Both my husband and I have been in food service in the past so we have always tipped well for good service, gluten-free or not. Maybe instead of editing the top post you could just make a new post with all the answers given and ask the mods to make it a sticky? For baking try Palm oil shortening. It's just like Crisco in texture and has pretty much no taste. I have used it for cakes and cookies with good results. And it's great for greasing pans too. Lara bars are $1.99 - $2.19 each regualr price in my area. They do sometimes go on sale for 10 for $10 and that's when I buy them. I have do a scale I use for measuring flours. DO you measure by weight when making falafels? I did not know that. I've never attepted them. That's why I wouldn't try them first with out a recipe. But I do make a lot of other things without recipes or take recieps I find and alter them slightly to make them fit my restrictions and preferences. -

Thanks! That soup recipe looks like it has a lot more flavor and structure (with the potatoes) than the one I tried. I think being a split pea soup perfectionist qualifies you as a chef, at least in my world it does. -

This is similar to what I tried and it didn't work for me but I was doing it mainly vegetarian (or only with chicken broth no meat). I think I will try it again and use smoked meat. Smoked salmon sounds wonderful actually. Thanks for the suggestion! -

Why don't you just cut out BOTH gluten and dairy for a few months then test him by trying one or the other for one week? He may end up having trouble with both. And when you say he had a celiac panel, did you get the test results and read them for yourself to see which test the dr did? There should have been more than one number with reference ranges... -

Be careful about the Hamburger Helper if you eat that. They have recently stopped making the gluten-free ones because they are manufacturing them on the same lines as wheat products. The boxes won't have gluten in the ingredients but they will now say "May contain wheat" on them. Here's a blog post about it: Open Original Shared Link
