  1. Not all soy sauce has wheat in it. Some are gluten free. Unless you are avoiding soy too you may be able to eat there. You just have to find out if the soy sauce has wheat or not. Or do what pp suggested and get a salad with olive oil and vinegar.
  2. I use Coconut Aminos in place of soy sauce for my Asian cooking. I found it subs very well in most recipes. A good doctor would be testing you for other things if it's not celiac related OR talkign to you about the possibility of refractory celiac, which is very, very rare but I have seen at least one person on here have it.   7. Thanks Rice Guy. Yeah, I have fresh ginger root, not powdered or crystallized. I use it to make tea and for cooking stir fry type recipes. I'll have to do a search and see if there are conversion rates between the different forms. The fresh stuff is much more potent than ground ginger. I've never tried crystallized ginger so I don't know how they compare...
  8. Thanks I'll have to try it sometime then. Arrowroot is usually used in very small amounts because it can be bitter if you use too much. That's really all I know about it. It sounds like you could use any gluten free starch to thicken it.
  9. Thank you, this is closest to what I am looking for. I do have fresh ginger and that's what I want to use. I have everything else except the agave. I think I will try using honey instead. That way i can make these this weekend without a special trip to the store. I'll try to come back and update if I try it.

    I have had lots of frustating doctor's visits too. Don't give up. There are some good doctors out there they are just few and far between, especially when you don't have insurance. How recently did you have your thyroid checked? you should be screened every year and they should not just do the typical screening but should order a more in depth panel....
  11. Are you looking for meal type recipes or recipes for baked goods? For cooking I don't really use many speacial gluten free flours. I use corn starch or rice flour to thicken gravies and things like that, but most of my meals are just things that are naturally gluten free anyway like tacos with corn tortillas, chili, stirfry over rice, steak, baked potatoes...

    Have you had your thyroid checked? I was reading somewhere recently that there is a correlation of people with celiac and type I diabetes also having thyroid diseases, especially if the celiac disease went undiagnosed for many years. Make sure you get the full, indepth panel not just the regular screening.

Found lots of recipes but every single one has molasses and dairy too. It's good to know I can try subbing other sugars if need be.

  19. I do the same thing. The Asian rice noodles work well in things like chicken noodle soup or Tuna noodle casseroles. I have found that they don't have much flavor, though. And they can fall apart easily. I still buy Tinkyada brown rice pasta for my spaghetti and lasagna noodles. The Asian rice noodles don't seem to asorb flavors easily and they get hard...

  22. Yesterday I made ground nut stew over rice. Tonight I'm going to make some chicken fried rice with the leftover rice. Also thinkign about making some cabbage spring rolls with rice paper wrappers. Will depend on how ambitious I get. Chicken fried rice with lots of veggies is a meal in itself but I'm really craving spring rolls too.
  23. I also use LIGHT olive oil in everything I bake. I get the big jugs of Bertolli Light Olive Oil from BJ's warehouse. It has very little flavor and things don't have that woody olive taste that Virgin Olive oil or Extra virgin Olive oil have.
  24. I know, but finding one that ACTUALLY believes they work for me is a challenge. This one actually was not very pushy. She was nicer and more attentive than many that I have dealt with over the years. She just doesn't seem to know anything about celiac testing.
