  1. Thanks for the reviews. I haven't tried this kind yet but I have seen it for 1.98 at Walmart. My Walmart doesn't have a gluten-free section, everything is just mixed in with the regular stuff.
  2. I don't think you're crazy. You just need to find something that you like better than (or as much as) gluten bread. Don't call it replacing bread in your mind. Nothing will 100% replace it (although IMO there are some decent subs out there). Instead look for something you can safely eat AND ENJOY whenever that craving for bread comes up. Have you tried...
  3. Indian pilaf and curry chicken.
  4. Unfortunately there are many things that are low carb but still have gluten she may be eating. Like regular soy sauce, low carb tortillas, low carb pasta (still made with wheat flour last I saw them). Many low carb prodcts use things like wheat bran because the fiber cancels out the carbs or something like that. Also if she is consuming more dairy when...
  5. I don't have kids yet and it's likely due to the celiac, but I have not given up yet. If we can't have them in five years we will look into adoption (actually I would like to adopt regardless but can't afford it right now). Anyway the mere threat of my kids getting this would not put me off because it's so easily treated with diet. I'm not saying it's...
  6. I just don't buy bread and pasta very often. I make most of my meals with rice, potatoes or corn instead when I'm eating carbs. I'm tryign to get back to low carb diet however I can understand that may not work for family. A bowl of chili and cornbread is cheaper and "normal" for a meal. I do a lot of stir-fried meat and veg over rice too. I also use...
  7. I can relate to your situation a bit. Mostly I have lived off my husband's income for the past 4 years and when I was really bad and he was working two jobs to make ends meet, we racked up quite a bit of debt due to the hospital bills. I am better now and always looking for little ways to bring in more money or save money. Some ideas for you I haven't...
  8. Tonight I'm making some "winter carnival", a recipe my mom always made in the wintertime. 1 lb ground beef 1 bell pepper chopped 1 small onion chopped 2 cans tomatoes with sauce (add water if no sauce) 1/3 cup Karo syrup 1 tsp kosher salt 1 tsp chili powder 2 bay leaves 2 cups cooked rice Brown ground beef until cooked, mix in peppers and onions...
  9. When you say sugar do you mean carbs? If not then there's always Rice Chex and Corn Chex cereals. Nature's path also makes some good cereals--gluten free corn flakes that are sweetened with pear juice and "Whole O's" (a gluten free cheerios knock-off). I use the corn flakes to crush up and bread my chicken parm.
  10. Thank you! Why have I not thought to look for tuna at Trader Joes before now?!? I've been getting the more expensive gold label stuff (I forget which brand, but both Bumblebee and Starkist have a gold can that is free of soy, but it's SO pricy). I'm putting this on my TJ shopping list now. Tuna and carrots is one of my go-to lunches too. Sounds boring...
  11. For those that don't have access to a gluten free worcestershire sauce you might try any number of things in it's place: gluten free soy sauce, liquid smoke, Coconut Aminos by Coconut Secrets, balsamic vinegrette, beef boullion, brown gravy made with corn starch etc. The recipe I posted above however does not have any W sauce or any of those things. You...
  12. I just wanted to say I hope you are feeling better soon! I have asthma too and get upper respiratory illnesses pretty easily, so I can imagine how miserable you are. Nothing's worse than the feeling of not being able to breath AND having to run back and forth to the bathroom. I drink lots of gatorade (I buy the powder canisters and mix in up a gallon at...
  13. I really like this recipe: Open Original Shared Link No flour needed
  14. When I'm sick it's usually egg drop soup. Otherwise I just throw a bag of steamer veggies in the microwave and do chicken or steak in a frying pan on the stove.
  15. Do speak to your pastor about it. You may be surprised at how easy it is to be accomodated. And you probably don't need to let everyone in the church know either. We also do not have communion every week (I think they do it once a quarter and on holidays only) and there is no announcement in the bulletin that it is coming up. However, my pastor now sends...
  16. I was sick with brochitis that turned to pnuemonia last year in November and I had this issue come up then. The ladies of the church offered to provide me and my husband with meals while I was sick. I simply replied that I had celiac and multiple food allergies and would prefer they not bring obvious gluten foods into my house (bread, crackers, pasta, etc...
  17. My two favorites are the King Arthur's gluten-free flour recipe posted above and Open Original Shared Link. King Arthur's is a yeast crust so it does take around 3 hours total by the time you add in rise time, but it's so worth it when you want an excellent crust. Chebe is very good when you want a fast crust mix. It's thin and chewy and unlike any gluten...
  18. I have friends of friends that are gluten free and few aquaintances that I met only a few times. Oh and my husband works with a woman that has celiac but she doesn't stick to the gluten free diet. She eats cake when they have the monthly office party. But none of these are good friends that I would ever end up eating in their home for a meal. And most...
  19. Do you own a crockpot? You can make lots of EASY recipes with a crockpot. Find a recipe that looks simple and follow it if you have never cooked before. It takes some practice to figure out what flavors go together to suit your personal tastes, but you can do it. To start with check out the crockpot lady's blog: Open Original Shared Link Everything she...
  20. I didn't have really bad Gi symptoms prior to going gluten free. But I had: Naseaua Unexplain weight gain joint pain joint swelling migraines unexplained seizures/fainting spells extreme fatigue--I used to sleep for 12 hours or more a day and still feel tired anemia muscle pain/cramping loss of strength in my hands constant sinus infections...
  21. Thta's strange. The last time I had it, it also said it was gluten free on the seal where it now just says soy free and dairy free. I did a search on their site and found this chart: Open Original Shared Link Which shows that the chocolate is gluten free (along with several other flavors). But if you are really worried you might want to e-mail them and...
  22. There will probably be directions with the dehydrator when you buy it, but a general rule is 1 tablespoon of chopped dried onion for every 1 small fresh onion called for in the recipe. Some thigns you will have to experiment with as fresh onion may taste better for some recipe, but for soups and stews it should be easy to use dried in place of fresh.
  23. Here's a chart on food safety that may help you out: Open Original Shared Link They recommend soups or stews with meat or poultry to be kept for 3-4 days max. I can't answer you on the protein shakes, perhaps they would be in the same category as vegetables? When you ask about options for reheating without a microwave--are you living in a dorm room...
  24. Enjoy Life makes some soy-free chocolate chips for baking and soy free chocolate bars: Open Original Shared Link You may also want to look at some high-end organic dark chocolates. I know I saw someone post a few companies that make organic dark chocolate with not much more than cocoa but I don't recall the names. They were really pricey though. ...
  25. I would not eat any of the ones that have gluten or "glucous sugar derived from wheat, but no gluten". I MIGHT eat the ones that have no gluten added if they were the only option and I really wanted yogurt. To tell the truth, howeever there's so many yogurt varieties that ARE labeled gluten free and don't have as many processing risks, I probably would...
