  1. I love Mark Bittman's cookbooks! And this thread has me wanting soup, so today I will make some potato soup and broccoli soup.
  2. Yes, I agree. When the OP wrote they have no choice, I was actually thinking perhaps this person is trying to get out of an abusive relationship and is planning on surviving off the kindness of others for a few months until they can get on their feet. That's the only situation I could think of where you might know in advanced you will be forced into it...
  3. Let me assure you as the daughter of a Marine I have great respect for what our military goes through. However, my opinion remains the same that it's not worth it to risk long term health for the short term. If the military does not accomodate celiac than that is awful. At the same time I don't see anything "honorable" about lying about a medical condition...
  4. Hmm...Have you tried Chebe? I've only had their pizza crust but it's so dense I don't think it would disinigrate. They also have a bread mix: Open Original Shared Link Not sure it would tear really well because the pizza crust is sort of chewy, but perhaps you could just make small enough peices that you could dip the whole piece or cut it with a knife...
  5. I don't mean to be rude, I can't think of a single situation that would force me to eat gluten again. I can think of lots of situations where it might be difficult to remain gluten free, but none where I would just give up and plan on being sick for two months--especially if I knew in advance that that time was coming and I could make arrangements for gluten...
  6. I would actually be interested to know this too, not for communion but for other types of sandwiches I have been craving lately. I used to love to make a French dip or homemade philly cheese steak with au juice for dipping. Last week I had leftover meatloaf and tried to do a meatlof sandwich on Udi's. The bread disinigrated and fell apart when the tomato...
  7. Stir fried beef with snow peas inspired by this recipe: http://thepioneerwoman.com/cooking/2010/10/beef-with-snow-peas/ Although I will use Coconut Secret in place of the soy sauce and onion instead of the scallions.
  8. My favorite is the King Arthur recipe: Open Original Shared Link It does take a lot of ingredients and it takes about two hours because of letting dough rise, but it's so worth it. My second favorite is the Chebe pizza mix because it's fast.
  9. I had unexplained seizures before going gluten free. Actually they weren't sure if they were seizures or if I was fainting. My husband found me on the floor a couple times right after it happened (he heard the thud as I hit the floor once) and I usually had no memory of the minutes prior to it happening. I was tested for narcolepy, epilepsy, sleep apnea...
  10. I second this. Since I found this store I haven't had trouble finding anything. It did say on the website, she was sold out of gluten-free stuffing around Thanksgiving. If you call though she will be able to tell you what she has and can probably even put together an order for you to set aside for pick up when you get there.
  11. Thanks for posting your experiences. I'm so glad to see I wasn't the only one that had problems with the recipes. I think I will go review it on that giant site selling books that cannot be named here to warn people not to bother buying it.
  12. We had chicken parm and steamed green beans with almonds.
  13. What brand of yogurt? Activia has a warning on it that it may contain wheat. Also is it possible that you are casein intolerant? For the almonds did you buy a brand that is not processed with wheat? Many nuts have a warning that they "may contain wheat" or are processed on equipment that also processes wheat. But that warning is optional in the US, so...
  14. Sure! It's really easy, I don't really follow a recipe but I can tell you how to make it: 1 can (or about two cups) chicken broth 1-2 eggs 1 green onion, chopped gluten-free Soy sauce (optional, I used Coconut Secrets instead, but I have left out the soy in the past) Heat broth to a slow rolling boil. Beat eggs in a bowl with a wisk or fork. ...
  15. The problem is that it's usually someone who is not a regular member here doing a google search that finds an old post here and revives it. Then a few people on the board see it and comment without realizing it's old. It would be better to just comment on it that "this post was started in 200X..." to let people know it's old and the info may have changed...
  16. Tonight I'm planning chicken fried rice and egg drop soup.
  17. Well as I predicted I didn't feel like cooking last night, so we had burgers and sweet potato fries instead. One good thing, my DH went to the store and bought me some Schar gluten-free buns. It was my first time trying them and they were pretty good. I usually just do the burger without a bun or use lettuce wedges. Tonight is meatloaf if I can get my...
  18. My primary doc wanted to diagnose me with fibromyalgia, but she wanted to run a ton of other tests first. From what I understand there is no exact test (like a simple blood test) they can do for fibro. They diagnose it based on your symptoms and by ruling out other things first. Apparently that makes it controversal in the medical field. I went to the...
  19. Navan would be your easiest stop for everything you need gluten free (minus fruits, veggies and meats). You can browse the website and see what all they have. It's a small family run store with only allergen free specialty items (I think everything she has is gluten free, but some items are also dairy free, soy free, etc.) but there's so much variety there...
  20. I've had great results using just rice flour for pancakes. I've done this recipe: Open Original Shared Link And last week when my DH wanted banana pancakes I did a search and found this: Open Original Shared Link I liked the banana pancakes even better than the plain ones. I used almond milk in both recipes and for the banana ones I used my blender...
  21. Yep, it really makes a difference! I have a local grocery store where I love to go and get organic meats and they have the best selection of fruits and veggies and the customer service there is the best in town. BUT they didn't have very much in the way of gluten free stuff. I did a survey at this store about six months ago and when asked if there was...
  22. Hi, I'm in Virginia Beach. The Trader Joes here is really small and not a lot of gluten-free options. Their brown rice pasta is good and I like their gluten-free pancake mix. They also recently started carrying Udi's bread, so that's exciting. I mostly go there for the produce, though. If you want a really good place to go for gluten free stuff in Virginia...
  23. I had good results using coconut milk (from the can) in place of evaporated milk in my pumpkin pie recipe for Thanksgiving. If it's something sweet I would try coconut milk before I tried coffee creamer just based on texture. The coconut milk is thicker than creamer, IMO. I couldn't even taste the coconut with the pumpkin. Coconut milk also makes great...
  24. I haven't seen those yet in my store but I know I've seen other Hodgson Mill products. I've had great success making the Betty Crocker gluten-free chocolate chip cookies. And you can also make a really good peanut butter cookie without even buying any special flours: Open Original Shared Link
  25. Ugh! Went out to Olive Garden last night and got glutened somehow. I got their gluten free pasta to try for the first time. The pasta was actually good, in fact I suspect they gave me regular pasta because this did not taste like any gluten free pasta I have tried. My first clue should have been when the waitress asked if "gluten free" was the same thing...
