  1. Oh, yeah, I was thinking about the cookies when I replied, but I have used pumpkin puree in place of the butter/oil for the cake mixes.
  2. Is fat the only reason you don't want to use butter? Because butter realy works best if you don't have a dairy/casein allergy. I did see someone suggest using coconut oil in another thread, but that is still high in fat.
  3. Are your parents generally supportive of your decision to eat glutne free or have they given you a hard time? As long as they are really supportive and you don't suspect they would try to "test" you by slipping some gluten in I say let them cook for you. Maybe you could just hover and act very interested in the ingredients/recipes so you can make it all...
  4. I've never tried EnerG bread. It was the first type of gluten free bread I ever saw in a store, but when I picked it up and it felt like a brick I quickly put it back on the shelf. Several times when I was browsing the gluten free section I would go pick up a loaf again to see if it had changed (maybe the first one I felt was bad? ). Everytime I put...
  5. You could try keeping a food diary to see if you can see a pattern. Be sure you check all ingredients carefully on any processed foods you buy. A lot of the veggie alternatives have wheat in them (Like Boca Burgers) and not all soy milk is gluten free (I think Soy Dream is processed with barley water, but I might be wrong on the brand since I don't drink...
  6. Trader Joes has a good brown rice pasta for around $2 a bag. I like the corn pastas for use with tomato sauces. For other things like casseroles or chicken noodle soup I like to get rice pasta from the Asian food store. I can get Asian Rice Pasta in different sizes and shapes (I even found one shaped liek macaroni) for around $1 a bag. It also doesn't...
  7. I buy a brand called Chaokoh at my local Asian store that does not have guar gum in it. I'll try to give a link, but this may not work: Open Original Shared Link .com/gp/product/B0002YB404?ie=UTF8&tag=boofyu-20&linkCode=as2&camp=1789&creative=9325&creativeASIN=B0002YB404 copy and paste the link and type amazon between the www. ...
  8. Hence the reason the rest of my sentence said "but I have never seen it in the store so I don't know if it is true."
  9. Is it possible the chef thought you couldn't have cheese on your salad because it was bleu cheese or a commercial shredded cheese with flour dusted on it? I have heard some shredded cheeses have wheat flour put on them, but I have never seen it in the store so I don't know if it is true. Or perhaps their cheese is cross comtaminated. I went to a pizza...
  10. The thing is you need to always be thinking about it in order to plan ahead and take precautions. The only thing that might be unhealthy is if you find yourself stressed out while thinking about it. If you are always worried and having nightmares constantly then that's not good. I had some gluten nightmares when I first went gluten free and I find I sometimes...
  11. Yes, I am obsesed for sure. However I don't think it's a bad thing at all. I have always loved food and I have always loved cooking. Having to eat gluten free, soy free and mostly dairy free completely changed my relationship with food. In some ways it's like I broke up with a long time lover, but in other ways it's like I have discovered a bunch of new...
  12. You could make a trail mix from some nuts, dried cranberries (or other types of dried fruit like raisins), and M & M's (they're gltuen free!) or some chocolate chips if you don't like M&M's. I'm just thinking a little chocolate in your diet won't hurt you and nuts and dried fruit is really good for you. If you like coconut you can add shredded coconut...
  13. Here's the thread I was thinking of, although keep in mind one person's worst product could be another's favorite. There are, however, a few repeating worst products throughout the thread and many people post their favorites to balance it out.
  14. It really depends on the person. I have only been gluten free for 10 months. In the begining I tried more ready made products and mixes for the convinence factor. Now I am finding I can get a better or just as good of a result for less money using gluten-free flours and baking from scratch. Some people though may never be adventourous enough to try scratch...
  15. Where did you go on your honeymoon and what did you eat? Any chance of food poisioning instead of gluten?
  16. Are you trialing a low carb diet? I don't know if this is what's happening, but low carb dieters go through a carb withdrawal period/detox period they call the induction flu. One of the symptoms is fatigue. It lasts from one to two weeks, and then the symptoms lessen and go away for most people. However it's not a good thing if you are having pain over...
  17. It does take some time to learn the basics. Malt is derived from barley, which has gluten. The best thing you can do is try to eat fewer processed things and things with fewer ingredients. You can get a list of gluten containing ingredients here: /celiac-disease/forbidden-gluten-food-list-unsafe-ingredients-r182/ When I was new I printed this list...
  18. Xanthan Gum is a must for gluten free baking She also may want to stock a variety of gluten-free flours: Almond Flour Buckwheat flour Coconut Flour Tapioca Flour Garfava bean flour Potato flour Rice flour(s) (there are multiple types) etc. And, please tell her if things are spread out throughout the store do not put the gluten-free flours on...
  19. Ah, that makes sense now. I could tell someone was clueless in your story, but I wasn't sure if it was the just the woman or the baker too. I would hope a baker would know what flour is, but I've heard some crazy things so who knows. It's kind of like the people that think white bread doesn't have any wheat flour in it. ETA: I meant to also say, I...
  20. I'm confused, were the cookies REALLY flourless or did they misunderstand and think you were asking about flowers? Or are bakers really that uninformed about what flour is? I have seen some flourless cookie recipes. Peanut butter (or sunbutter) are really easy to make flourless. So I wouldn't be surprised if they were flourless, but I think I wouldn't...
  21. Really? I thought Mellow Mushroom's gluten-free pizza was yummy! But then again it was only my second time eating a gluten free pizza in a restaurant. I have made some good pizza at home, but I'll go to MM again if I'm ever in an area with one. For future reference, MM uses "Still Riding" Pizza crusts, so if Papa John's or any other pizza place starts...
  22. I'm wondering, since you said your fiance is picky and makes his own food, could you be dealing with cross contamination issues? Do you have an area of the kitchen dedicated to preparing gluten free foods only? Do you have all your own cookware or do you share? Does he use your condiments and other food? The reason I'm asking is I can easily imagine a...
  23. Sorry you found out the hard way that rice Kripsies are NOT gltuen free. You really should check the ingredients of things everytime you buy because they sometimes change the formula. Something that used to have no gluten added may change at anytime to include gluten. Although I don't think that's the case here. I think they have never been safe. ...
  24. The only ones I have tried so far are King Arthur's and Bisquick. With the King Arthurs you do have to add Xanthan gum. I've only made their pizza crust recipe but it was really, really good. I have had good success with Pamela's other mixes--(cake mix, cookie mix, etc) I haven't tried the all purpose mix but everyone seems to like it.
  25. I say we all bombard Papa John's with requests for gluten free pizza. If they don't have it yet, maybe they will start making it.
