  1. I think that rather than regulate the use of the term "gluten free" they should require that all gluten ingredients are disclosed. They already have to disclose wheat in the US as it is one of the 8 major food allergens. It seems like it would not be too hard to require disclosure of barely and rye as well. I'm not so sure how I feel about shared facility...
  2. OMG I have had these thoughts as well! I went to see a pulmonologist today sure I had lung disease or cancer or something. He spent a long time basically telling me I have GERD and I need to lose weight. I already know I need to lose weight (and I have been working on it) but this doctor had no idea about gluten. I don't think I have GERD either after...
  3. I agree. Vitamins can have all kinds of fillers in them and it's better to skip them for that short time if you can. I did do iron pills on my elimination diet because I was anemic and didn't want to risk skipping them. But other than something like that I think it's better to cut out vitamins.
  4. I would call the organizer and ask about whether your would need to pay for a seat if you don't eat. A written RSVP could be misconstrued no matter how well you write it. I would want to know that info ahead of time because if they expected a payment I would choose not to go. Depending on how big the party is they may be getting a group discount on the...
  5. That's right! I knew that, but forgot about her. It seems like in the earlier seasons they didn't give as many food rewards as they do now. Eating just fish, rice and coconut would be like an elimination diet and getting a reward of pizza or a burger would be a gluten challenge.
  6. So I'm watching Survivor and they just opened up a box of food that had loaves of bread sitting on top of fruits and veggies. They cut the bread and had crumbs going everywhere. I started twitching just watching it. Some of the other foods they got in the box were cookies and flour. So I often wonder if anyone with celiac has ever gone on Survivor...It...
  7. There is no set elimination diet. Everyone sort of does what works for them, but the basic concept is the same. You start out with three or four foods and eat ONLY those for a set amount of time (I have seen people do the beggining foods anywhere from three days to one month but I think one week or two weeks is the most common). Then, if you seem to feel...
  8. Since you posted this a few months ago, I'm just curious, did it get any better? That's a very strange conversation with your aunt. My thoughts were either she is illiterate and unable to read the ingredients herself or she is just trying to annoy you. Some people that think this disease is fake will go to great lengths to tempt you to eat gluten. Then...
  9. I never saw your initial post, but wanted to thank you for the update. I live about 45 minutes from Williamsburg and go there every once in a while. I have not eaten at anyplace there while gluten free except for Uno's Chicago Grill. I didn't have any problems with eating gluten free safely there but it was early in my diagnosis and I just got a salad...
  10. Thanks for the update. This is the first I have heard about them not using flour on the conveyoer belts. This is good to know. I do like some of their other mixed spices, just not the perfect pinch ones. So far I have been sticking ot the single ingredient spices, but I feel a little better about trying a blend again if the label looks safe. ETA the...
  11. If you are in an area where you have a lot of choices for doctors, and your insurance allows, look for a D.O. instead of an M.D.. While the medical training they receive is virtually the same I have found for the most part D.O.'s listen to me more as a patient and take more time getting a full picture of my medical history. Unfortunately I don't know of...
  12. Seven weeks is not very long to reverse vitamin deficiencies. I saw huge improvement in my hair and nail health at around the six month mark. I'm on month eleven now and it's still getting better (most likely because I have long hair so it's taking a while for the healthy stuff to become the majority of what's on my head). Funny thing is I can actually...
  13. Are there any safe restaurants you can eat at in your area? Maybe you can ask them to get you some take out from one of those places instead? That way they can still host a party and cook for everyone else, but you get a safe meal. I know it's a little last minute, but the birthday person should not have to decline food at their own party. Are there any...
  14. I have had good results using goat cheese in place of gorgonzola for salads, quiches, casseroles and even on pizza. My husband loves blue cheese so he used to put it on everything. Although SOME bleu cheese claims to be gluten free, I won't risk it myself.
  15. Thank you for the biscuit recipe. They sound wonderful, I have never seen biscuits with eggs in them, but I bet that helps hold it together.
  16. The previous posters are correct about most gluten free doughs not needing to be kneaded. I'm just curious what recipe you are trying to convert, because I actually never kneaded biscuits when I made them prior to gluten free. Usually the more you knead a biscuit dough the tougher the biscuit will be. I like my biscuits light and fluffy. I'm not sure...
  17. I'm sorry if my first posts sounded harsh. I understand what your are saying about this life change being overwhelming at first. It will get better, I promise. It sounds like you are on the right track in going to see a specialist. As far as having a slice of regular gluten pizza once a year, it's so not worth it. There are tons of gluten free pizza...
  18. I say "I have celiac" although I don't really tell very many people that since I'm self-diagnosed. Mostly I start out by saying I have food allergies (which is true, I'm allergic to shellfish, pork and mushrooms) and only explain further if I need to or they ask. I don't like to add the word disease on at the end and I think if I were talking about several...
  19. I would not be surprised if you got glutened just being in that place. I mean some bars and clubs I remmeber from my college experience had the smell of beer in the air. And they are not exactly clean places, people spill and may spit a little while crowding in to talk to you....It would not take much to get glutened there and you probably have your culprit...
  20. Welcome to the board. I've never heard that about the eye pupils and gluten but it doesn't surprise me terribly. The depression and the fatigue as well as the bloating are certainly signs of a gluten problem. I hope you can stick with it and this is really your solution. You may become a completely different person now that your know how much gluten affects...
  21. I don't know the answers to your questions, but I would like to know. I haven't collected any unemployment nor any disability. I've heard it's really hard to get on disability for celiac. I have seen one poster here that said they were on disability, so hopefully someone can help you.
  22. I also wanted to add your uncle is dead wrong about asymptomatic celaics. Yes it is harder for people who are asymptomatic to know if they are sticking to the diet, but the way they are often "treated" is to get retested every six months or so to see if their antibody level has decreased. For your uncle to say he would not know how to treat an asymptotmatic...
  23. Hi welcome to the board. I hate to tell you this, but your uncle is the type of doctor most of us here HATE to deal with. He is wrong to say that going gluten free leads to depression and reduces quality of life. The truth is depression and axiety can be a SYMPTOM of continuing to consume gluten. What you mentioned about your sons symptoms sound like...
  24. Hi, Try not to be too hard on yourself. It takes time to learn all the ins and outs of the gluten-free lifestyle. You have come to the right place. First, your nutritionist and doctors are great! It's amazing that they helped you figure out some ways your son was getting gluten. They are right about the cross contamination risk. The main things you...
  25. Yes, yes and yes. There are very few foods I really miss because I was practically bedbound after being very sick for a very long time. I went through lots of testing for other things, saw lots of doctoors and not one suspected celiac or food intolerances at all. Keep in mind even if the tests come back negative you can still have a problem with gluten...
