  1. I miss Cheerios! But they are definitely not gluten free.
  2. A month is not long enough for most people to feel completely better, so it may just take more time, but have you had your thyroid checked? Hypothyroid can cause constipation and lack of energy, and often goes hand in hand with celiac.
  3. I was constantly starving the first couple of months. I think it is our bodies screaming for the nutrients we need to heal. Unless you are very overweight, I think it's OK to just EAT. I also had a bloated stomach, looked pregnant - I never figured out what that was about, but it does go away - don't get discouraged! I don't know if you are eating gluten...
  4. If you like to play around with the mixes, I suggest The Cake Mix Doctor Bakes Gluten Free by Anne Byrn. There is some great stuff in there, and once you know the tricks (adding pudding mix and I think extra liquids, you can experiment and invent your own.
  5. I had a bloated stomach (looked like I was 6 months pregnant) for about 6 weeks after going gluten free. No other symptoms, but it was annoying. It went away on it's own. I did use prepackaged gluten-free foods from the start though - didn't know any better - so maybe that was the problem.
  6. I use Better Batter flour. It does clump a little (the xantham gum, I suppose) but tastes SO much like what I used to make.
  7. Thank you. It is the TSH that is elevated. Good to hear no one has had problems with the meds. I am still waiting for my appointment with the endocrinologist. Lactose is not a problem for me.
  8. Velveeta is gluten free. I make mac and cheese with Velveeta and rice or quinoa pasta (or both together, half and half) all the time. Even my gluteneaters like it.

  10. I like Gluten Free Pantry Favorite Sandwich Bread. Even my gluten-eating daughter loves that.
  11. Some people have additional food intolerances such as corn or soy, but I believe most celiacs are safe with corn. If you have just started the diet, you may have stomach problems just because you aren't healed yet; it doesn't always mean that you've been glutened or have additional intolerances.
  12. You can use Redbridge beer in recipes, or one of the other gluten-free ones.

  14. You will find lots of recipes that people will say, "That's fabulous, can I have the recipe?" It just takes time and experimenting. If you don't mention that something is gluten-free, people usually won't notice the difference, and you'll get as many compliments as ever, once you find the flours and recipes that work really well for you.   15. I am celiac; husband and son are not. We have some gluten food in the house - bread, cereal, cookies. That is kept in a separate cabinet. All shared meals are gluten free, as I am the cook and I won't cook food I can't eat. If I had a child who needed to be gluten-free, I think we would all be. Easier and safer that way.   16. Beer definitely has gluten in it; if you are trying to be strictly gluten-free you should switch to a gluten-free formulated one like Redbridge, or New Grist or Green's or Bard's. Or Wine or some other drink. Even if you don't react to something, it may be doing damage.
  17. Do you drink soda or seltzer? My sister's reflux went away when she gave up carbonated beverages - might be worth a shot?
  18. I love the hamburger buns; haven't tried any of their other breads yet.
  19. Wine should be fine. Many restaurants list their gluten-free menus online, so you can decide what to order before you get there; that's what I do. I ask for a gluten free menu and let the server know I can't have gluten so they will be careful, but there is no stress figuring out what I can have since I've already done it.

  21. Citrucel works for me and is gluten free. It is hard to get enough fiber on the gluten-free diet, especially if you have additional sensitivies.

  24. I didn't give up milk. I just switched to Lactaid milk for the first couple of months, and used Lactaid tablets if I was eating a LARGE amount of cheese or ice cream.
