  1. Is Slimfast safe?
  2. For meatloaf I replace the breadcrumbs with half cornmeal and half instant mashed potato flakes. For pasta, Tinkyada brown rice pastas are pretty good. Gluten-free Pantry makes a french bread and pizza mix. I haven't tried that yet, but have had good luck with their other mixes. Good luck, and happy cooking! It's quite the adventure.
  3. My grandmother, my mother and both her brothers, one of Mom's sisters (the other probably has it as well, but doesn't believe it), and probably at least two, if not all 3 of my adult and nearly adult children who refuse to be tested.
  4. I am not that sensitive to cc, so I do eat at restaurants, and gluten free food prepared by friends and relatives (gluten free or not) as long as they understand what I cannot eat. I don't have any gluten free friends, but a number of my relatives are celiac or gluten intolerant. And I have only been sick once, I assume from cc at a restaurant.
  5. My son's girlfriend who loves to bake has been so sweet about making gluten-free desserts for me. She made the pineapple upside down cake with BC mix - I wasn't wild about it, either.   6. I used Lactaid for the first 4 or 5 months, but I don't seem to need it anymore. I am tolerating all forms of dairy - milk, cheese, yogurt, ice cream - so some of us can. Good luck!
  7. Hormel flavored pork loin with oven roasted potatoes and broccoli was last night's dinner. Tonight I am being lazy and having frozen gluten-free pizza. The Betty Crocker liveglutenfreely website is a great resource for recipes. I have used a number of them with great success.
  8. Macaroni and Cheese with Velveeta and Tinkyada pasta. Penne with vodka sauce. Tomatoes with mozzarella. Chicken Parmiagiana. Fruit with yogurt. Strawberries and whipped cream.
  9. I haven't tried the Bisquick one yet, but I will. I actually liked the GlutenFree Pantry Crust, but the Bisquick looks easier.
  10. I agree, these are by far the best hamburger buns I have found. The texture is perfect, nice flavor, and they are healthy too - lots of fiber and protein! So many of our breads seem to fall a bit short nutritionally.

  12. That was my thought also; that Lyme might be a trigger. I was successfully treated for Lyme disease nearly 20 years ago, and as best I can remember my GI symptoms began shortly after that.
  13. I had a lovely Thanksgiving. We went to my aunt and uncle's house - he has celiac, she does not. They made 2 smaller turkeys - one stuffed, one not. Except for the stuffing and a couple breads, everything was gluten free. We celiacs (half my family has celiac) were able to eat mashed potatoes, sweet potatoes, creamed onions, cornbread, cranberry sauce, turkey...

  15. I've gained nearly 10 lbs. being gluten-free; I assume because my body is actually absorbing fats now. And we all know gluten free cookies, etc. are so lo-cal - NOT! If people want to lose weight, why don't they try eating less, or healthier, instead of imitating sick folks? Geez!
  16. I simply say I have celiac disease. No one needs to know it is self-diagnosed. My mother, grandmother, aunt and 2 uncles all have the "official" diagnoses; I share their symptoms, the diet cured me - I have celiac disease and no one can tell me different. Why torment yourself eating something that makes you ill for 6 weeks and go through invasive testing...
  17. You've gotten a lot of good advice here - the one thing I would like to add is that corn flakes and skim milk may not be the best thing to get your blood sugar stabilized in the morning. I feel better if I have whole milk and fruit with my cereal, or have an egg with fruit and toast. A little protein and fat keep me going a lot better in the mornings.
  18. My symptoms (GI) came and went over a period of years. At first, it was just once a month or less, got gradually more and more frequent - once it started being enough to interfere with my life, I realized it was "time". Most of the relatives on my mother's side are diagnosed with celiac, so I pretty much knew what it was and how to treat it. But not everyone...
  19. Whichever she feels comfortable with; I am self-diagnosed (classic GI symptoms, 5 diagnosed family members, lousy insurance coverage), but I say I have celiac disease. Of course half the world doesn't know what you're talking about no matter what you call it!
  20. I enjoy the challenge of cooking and baking new things, and finding and adapting recipes - I am actually liking to cook more than I have in years. I had gotten into such a rut of cooking the "same old things". And I enjoy not being afraid to be away from the bathroom.   21. Not at all traditional (except in my family), but chocolate cream pie for the chocolate lovers. I'm sure someone will bring a more traditional apple or pumpkin dessert.

  23. Is there something you are eating a lot more of now that you can't snack on gluten foods? Some people are sensitive to the increased amounts of corn or soy or other starches in gluten-free breads, pretzels, crackers, etc. If you are mildly allergic to corn, say - and you are eating much more of it, that would account for it. I also notice more itching, hives...
  24. Depends which cheese fondue you choose. Some have flour thickeners which they will substitute w/cornstarch. For the beer ones, they will substitute Redbridge.
  25. We went to the Melting Pot for our anniversary last night, and it was absolutely WONDERFUL! The waiter was completely knowledgeable, the cheese fondue was prepared with cornstarch, and they even brought gluten-free bread for dipping! I've NEVER had gluten free bread in a restaurant before; I usually just expect to do without. (I don't know whether they do...
