  1. Simona, it is more than "pretty good" - it is VERY good! You should be very, very proud of your major accomplishment. Really and truly. That soup looks delicious. Is it a Slovenian recipe? I am really enjoying our Croatian meals! We leave for Istria in two weeks and cannot wait.

  3. Sounds like you put that poor bread through the wringer! I have tried Schar bread and was so disgusted I spit it out and cried. I tried it again when we were in Europe in May and unfortunately it was not any better. ANYTHING would be an improvement over that icky stuff.
  4. Thanks for the description. The only edible commercial bread I have tried thus far is Udi's (Rudi's not available here). Whilst Udi's is ok it certainly is not exactly enjoyable. In my opinion it is merely a vehicle for toppings - I certainly would not enjoy it on its own. I usually make my own but do look forward to trying Genius.
  5. Simona, my husband is not home from work yet but I know he will like it, too. He was so happy when I showed him your photos! I agree with GFM - I would probably like it either more sweeet or more savoury (but I lean towards savoury as opposed to sweet, anyway, and that is such an easy thing to change!). That is not your fault - you did specify adding more...
  6. No offense but I absolutely detest beer. So, why am I posting, you ask? Wondering if there is such a thing as good gluten-free Guiness in Canada for British Steak and Ale Pie. I can handle it in that but definitely not to drink.
  7. OK - FINALLY out of the oven. Only half is with sugar water because I wanted some savoury bread, too. It still looks beautiful, it rose nicely and is golden brown. I ripped a chunk off (couldn't stand it) and am just now devouring it with ghee (the non-sugary side). I really like the texture and flavour. Will be able to tell more after it cools a bit...

  9. Is it ever. I love coconut milk - always have and even more so now. Bread is only at 170 - must wait a few minutes longer, darn it.

  12. Yum! I just bought some butternut squash for the same reason - roasted butternut squash and carrot soup with ginger and spices and maybe some pepitas. In my dairy days I would have added some peppered creme fraiche! Man, this bread thing is so exciting! As soon as it is out of the oven I am tearing off a big old chunk.
  13. We're having vichyssoise soup with it tonight (but I will most certainly be having my share before dinner).
  14. Likely 50 minutes but I always set the timer for about ten minutes less then work my way up. I cook/bake to temperature so I am looking for an internal temp of 190. Only about 12 minutes left!
  15. Can you please describe Genius bread in detail? I have read about it but want to know what it REALLY tastes like for when we go to the UK.

  18. French toast - awesome idea! I was thinking of making a butterscotch French toast and this bread looks like it would be perfect. It looks so good rising. I will cry tears of happiness if it tastes as good as it looks - I see other possibilities for this dough such as cinnamon rolls. A savoury version would be awesome, too, for things such as bruschetta...

  20. Simona, my Simona Challah Bread is now rising! I did not have a chance to make it yesterday, either, but today was the day. I cannot tell you how wonderful it felt to form the bread rather than spread it out into a pan. It wasn't sticky at all. I subbed some sorghum flour for some of the white rice flour - will see how that works. I also love using bacon...
  21. I made some hummus this morning to go with my falafel chips; I also scrambled two eggs. An unlikely combination, I know.
  22. Pneumonia nearly did me in last winter. It was absolutely dreadful. I still cringe when I think about it.
  23. Just finished canning a batch of basil, lemon thyme and mint jelly. Next...salsa.
  24. This happened to me this summer after eating a lot of raw fruit a few tiimes. My dietitian told me to restrict my raw fruit intake, sadly, but the symptoms have not happened since.
  25. Which flavours are your favourites? I have tried a few and have been sadly disappointed. However, I really like the Kind bars recommended by members here. Just personal taste!
