  1. Why not check out the desserts thread for awesome ideas? I am making Eton Mess next week. Involves cream, rasperries, raspberry coulis and meringue. Or any other tart fruit. Very easy but lovely. Google recipe. I may have posted it on here but have a houseful of company at the moment. How about pavlova? Panna cotta, pots de creme, semifreddo, creme...
  2. Juniper and Apple Cider (et. al.) Brined Roast Leg of Pork with Maple Bourbon Glaze Rosemary and Thyme Roasted Baby Potatoes Honey Cardamom Glazed Carrots Mixed Greens and Raw Shaved Asparagus with Pecorino, Toasted Hazelnuts, Crispy Capers and Tomato Pomegranate Molasses Creamed Peas and Baby Onions Chocolate Pots de Creme with Cacao Beans WHEW...
  3. We have lamb often and I always trim as much visible fat off that I possibly can. It is definitely true that it is also in the preparation!
  4. This could be taken both ways but some would question a makeover voucher.
  5. Wow. I just read about this, too. This is absolutely horrific.
  6. Yes - I LOVE eggs. How many can I expect to have each day? We get out eggs from a local farmer and I would not have it any other way. If I could, I would raise a few chickens but alas - I live in the suburbs where that sort of thing isn't allowed. I grew up on a farm so was used to cows, chickens, sheep, pigs, horses, ducks, geese...
  7. I'm as good as there. Works out well for me this weekend - my husband can take care of his family while I'm at your house! Not only that but I LOVE rain. We have two seasons here - winter and construction. So, we don't get many rainy days. Just stupid old I mean lovely snow.
  8. Thought I should rip myself away from constant thoughts of wondrous food to focus on something else. I need a breather - my in-laws are coming for the weekend - not the happiest thought. But at least we'll have amazing eats! Oops - there I go again. It is currently snowing AGAIN (we have about 2.5 feet of snow) but it has warmed up to a balmy...
  9. I do a lot of long-haul international flights. Up until our most recent trip, the meals I had were abysmal. Once the airline completely forgot so I did not get a single thing to eat on a nine-hour flight! Thank goodness I bring snacks along in a carry-on bag. However, on our last flights I was pleasantly surprised; in fact, my food actually looked BETTER...
  10. Scrub your can opener - those suckers can harbour a ton of icky stuff. And yes to replacing the toaster. You can purchase toaster bags but it is easier to have your own. We bought a new toaster oven for me which is also nice for a host of other things. And remember - it is your home so you will have to explain your situation to guests. We are having...
  11. Vichyssoise Soup and if I feel extra energetic, maybe some homemade crackers to go with that BACON jam.
  12. Tonight is: Chicken Marsala (of course with my usual C and S) Baked Potatoes with Maître d'Hôtel Butter Tangy Red Cabbage Slaw At the moment I am making vichyssoise soup for lunch again (a staple at our house).
  13. We were in Paris in September and to be honest had a difficult time eating there. However, that was because we were there for my husband's AGM and meals were pre-arranged (though the hotel and restaurants were notified that I had celiac - it was still very problematic). We managed to skip out of a few events to do our own thing. At one restaurant we went...
  14. Cellophane noodles with spicy Thai sauce and toasted peanuts and scallions sprinkled on top.
  15. Speaking of risotto and perkiness, tonight we are having encore risotto from last night (porcini and red wine and fresh thyme risotto) with steamed broccoli. Sometimes a big ol' bowl of risotto is enough! Irish, how are you feeling today??
  16. All my baking blends contain at least 3 flours. One bread recipe I make uses 9 kinds! That is unusual, though. Each flour offers something different: you need different ones for browning, rising, lightness, strength, elasticity, loose or tight crumb, flavour and so on. It is actually quite interesting. For example, pizza and bread flours contain more...
  17. Potato salad with lots of capers and such.
  18. OK - some C and S involved tonight. Leftover lamb ribs with a wondrous smoky rub and sweet and spicy barbecue sauce Risotto Milanese White-Wine Braised Celery Guess what? I just made a roasted red pepper, escabeche, roasted tomato, et. al. chunky sauce with no specific plans in mind - it will be good on anything.
  19. I don't blame you - I am, too. Risotto is one of my favourite things. 20. I guess sometimes I state the obvious, huh? C&S fans - I like it! That's great news about the bacon jam. There is a REASON that it is making the rounds! Wonder if there is anyone who dislikes bacon?
  21. Karen, please help! That guy is scaring me. IH, obviously great minds are thinking alike tonight! I, too, love lamb. I made a batch of the delicious sauce and about 1/3 of it is already in my gut (it didn't quite make it to the lamb). I am a condiment and sauce animal!
  22. Yes, that's true! I've done it with both at the same time - quite decadent and rich to say the least.
  23. Oh, IH. Where the heck do you find these things? He's scaring me. You should see and smell the ribs. Lamb ribs are amazing. Not tons of meat but I LOVE gnawing on the bones, too.
