  1. I, too, love Jane Austen. It was wonderful seeing where she grew up and wrote in England. And the Bronte sisters. And William Thackery Makepeace's "Vanity Fair". Anything that genre is lovely in my mind. Oh, and Wilkie Collins, Thomas Hardy... The classics. How could I forget Charles Dickens "Bleak House", "Tale of Two Cities" and so on? Wonderful...

  3. Good catch! They are basically the same thing. Some people (i.e. Lidia Bastianich) calls it Calabrese; others call it Caprese. I've seen it called both in different regions in Italy, too!
  4. We travel a lot but have not been to Greece since my diagnosis. I have, however, been to other European countries. I would recommend frequenting markets for fresh produce. I also highly recommend printing out restaurant cards in Greek to give to those preparing your food. Not only that but take along lots of snacks for airports and flights. The airports...
  5. That's awesome! Pizza is one of those things that we as celiacs can really miss. I, too, enjoy making pizza, especially with the crust that I am able to roll out as opposed to spread - it brings back the enjoyment I used to have making breads/crusts.

  8. Same here - that is a great way to keep tomatoes. We STILL have various pasta and tomatoes sauces I made from last year's tomatoes in the freezer. Oh, and a few jars of salsa.
  9. You get all that from just one plant? Amazing. We only grow four plants and they get ginormous in size. We are growing a cherry tomato, zebra (the gorgeous green), an early girl and a beefsteak this year. I imagine they will produce several hundred fruits and I cannot wait. Calabrese salad, here I come!
  10. Cookies, cakes, muffins, cupcakes, pancakes are all easy to convert to gluten free without very little change. The tricky part comes when you bake breads and other things containing yeast (i.e. pizza crust, croissants, English muffins).   11. Isn't gnocchi great? I love it when I hear of people making it. It's almost embarassing how easy it is but tastes so luscious. And talk about endless possibilities! I make it often. Last week I made it with a local spicy sausage and tomato ragout.

  15. My story is different. I had absolutely no idea I had anything wrong with me! My sister told me she was diagnosed as gluten intolerant so I thought I'd casually mention it to my doctor, knowing there was no way I had it. I wasn't sick at all. Food is top priority with me - always has been. Anyway, the doctor said my bloodwork was positive! Talk about...
  16. Yes - we do this. It is our favourite way (other than in our wood-fired outdoor oven in Croatia, of course ). I make my own crust, though; I have a couple of recipes you can actually roll out which is glorious!

  21. This morning I made glorious roasted poblano potato and corn soup. Delicious with pumpkinseed oil swirled on top.

  23. I made a fabulous spicy Mexican marinade for chicken which will be grilled. We are also grilling red onion. Then, with queso freso, we are making quesidillas which will be grilled until everything inside is ooey gooey. To go with the quesidillas will be zucchini fritters and corn on the cob with chipotle butter.
  24. ...and to think I have not had coffee since my all-nighters at university! I absolutely abhor the stuff. But today I was making a practice run of a gluten-free wedding cake and used coffee in it. That is the closest I have been to it for a very long time!
  25. This exactly. Use your restaurant cards ALWAYS! I have used mine over and over. However, I never did feel sick eating gluten and even now, 15 months post diagnosis, I have no clue whether I have been glutened. That is scary stuff because you kind of need to know but my regular bloodwork shows my numbers are all negative. I am extremely cautious and strict...
