  1. An added bonus to purchasing rice flour in Asian stores is that it is finer than regular rice flour and thus better for cooking and baking.
  2. Honey Garlic Chicken Wings - they were very ooey gooey! Baked potatoes with chives Lots of raw veg with dill dip
  3. Warm potato salad with a lemon caper vinaigrette I made the other day. Fresh plums.
  4. I had an intense craving for shrimp so I simply did a sweet and sour shrimp stir fry with carrots, broccoli and daikon served over vermicelli noodles.
  5. How do these people (and I use the term loosely) sleep at night and live with themselves? Seriously. Do they teach arrogance and cruelty in U.S. med schools? This pathetic story reminds me yet again how fortunate I am to have the doctor I have. Good listener, empathetic, compassionate and humble. Man, I really feel for you. If a doctor told me...
  6. Believe me, I get it. I made myself a list of 70 some things to have for the last time and did not stop eating gluten until the list was done. It was tough because I was not feeling ill from gluten at all! And a year later, strictly gluten free, I feel no different. The odd time I wonder what it would be like to try some gluten but I would never, ever...
  7. That is lovely and meaningful. What an awesome idea!
  8. It is a huge misconception here in Canada that you must make a certain amount of money. If that were the case we would not be claiming, either, as we make too much. I can't explain it very well but my husband spoke at our celiac group and there are plenty of people who make a lot of money there who were shocked that they could claim after all. Their accountants...
  9. Tuna with lemon and caper sauce on toast. Herbes de Provence sweet potato fries with homemade ketchup.
  10. Ham with Spicy Cider Glaze Potato Gratin Roasted Leeks with Lemon Dijon Caper Sauce Something with pears - unsure of what yet. Perhaps poached in white wine and vanilla bean.
  11. We do it successfully but it helps that my husband is a chartered accoutant! Laws are different in Canada so I cannot address procedures. However, as I have many other medical expenses (i.e. weekly massage, physiotherapy, acupuncture, etc.) it is worth our while to do it. I do a simple Excel spreadsheet that takes minutes to do each month. It is not difficult...
  12. It IS good. You can also add garlic to it. Great on pasta and pizza as well. I make all sorts of pesto including sundried tomato, mint, sage, arugula, kale, basil (of course) and use various nuts such as walnuts, pistachios, almonds... I freeze pesto in ice cube trays and once frozen put into freezer bags. When I need one or two little blocks they...
  13. Hi Hannah, Though I have not been to the countries you have mentioned since my diagnosis I have traveled to Slovenia, Bosnia and Croatia without any problems at all. In fact, it is far better than I expected. My biggest problem was at the airports (delays, etc.) so plan ahead and bring lots of snacks along. I do use the travel cards - they come...
  14. My parents hid Easter egg treats all over the house for us to find. But when I was about 10 I requested that they hide a cooking magazine for me instead of candy! Funny. I also made eggs nearly identical to Cadbury cream eggs each Easter when I was a kid. They took a bit of time but fun and worth it. We also made homemade marshmallows. We went to...
  15. We've had them at our house for ages as well. They are excellent many ways but my favourite is simply with a crunchy finishing salt such as fleur de sel. Addictive suckers!
  16. That combo really makes sense to me. It is very balanced - you want every dish you make to be balanced. Sounds delicious! Next time I am making my mac and cheese with pureed carrot to replace some of the cheese sauce.
  17. I did not make it with lobster this time - that is the ultimate. This is not for the faint of heart or those who are worrying about calories at this moment. (There's always tomorrow! ) Caramelize 2 onions until like candy (about 30 minutes). Make bechamel*. Heat the milk and cream and add half an onion with a couple of cloves stuck in...
  18. I toasted some chipotle peppers and ground them with toasted coriander and cumin seeds; blended with some sumac and a touch of brown sugar to balance the flavours. Sprinkled that on a baked potato for lunch. Leftover stir-fried vegetables.
  19. Cold isn't easy to take, is it? I think we put up with it because we have to and we are used to it. Thankfully we do have lovely albeit short summers. Can't wait to move to Croatia!!! Our Mac and Cheese tonight is not any ordinary Mac and Cheese - it will be unctuous and sublime. You know I couldn't just make a normal recipe...
  20. I had both the endoscopy and colonoscopy and was given memory-erasing drugs. The surgeon told me it was not an anaesthetic but it feels like it. The last thing I remember was the surgeon showing me the tube then I was awake and holding my husband's hand in recovery. The prep for the colonoscopy was not all that pleasant but my doctor wanted to rule anything...
  21. It is still below 0 and very windy so I am making Creamy Five Cheese Macaroni and Cheese. We will have broccoli of some sort to go with it.
  22. Doesn't sound weird to me at all! Bacon has an affinity for sweet things such as caramel, ice cream, brownies, maple syrup, jam... It's that salty sweet thing that has people drooling!
  23. Oh, shoot. So sorry. You can make aioli by either whisking or in a blender/food processor. I've attached two recipes below, one for each method: Open Original Shared Link Open Original Shared Link There are tons of versions all over the internet. You can easily add/change flavours. FYI this is not the place to use your good extra...
  24. Thanks! It is one of those things that makes me feel alive. I MUST cook! You're into gardening? What zone? I am a Master Gardener so am into it, too. However, with all my chronic pain I am very restricted to what I can do. So, my husband built me raised beds up to my knee with seating all the way around them. That way, I can still plant my...
