scarlett77 replied to jaimek's topic in Parents, Friends and Loved Ones of Celiacs
Another thought is has his thyroid been checked? My son is hypothyroid as well which symptoms were constipation and growth issues. -
ARCHIVED Grain Fed Poultry And Meats
scarlett77 replied to Katy88's topic in Gluten-Free Foods, Products, Shopping & Medications
Well hay is usually alfalfa not wheat. Alfalfa is gluten free...but some farmers to rotate their fields to grow alfalfa during one season and wheat during another. So alfalfa can be CC'd. -
Since I have limited time I usually reach for convenience of mix instead of individual flours, but I do have some on hand. The most used of my stash is Millet, Brown Rice, Cornstarch, Tapioca starch, and potato starch. Here is my list of things I absolutely cannot live without: Tinkyada Pasta Pamela's Baking & Pancake Mix Pamela's Bread Mix...

A friend of mine was hired to make a cake for my nephew's birthday. My sons are gluten free and my nephew has milk & nut allergies. This is a new realm for my friend so she is asking me for help with a cake recipe. I have only done cupcakes and have no recipes to give her. Anyone have any really good ones? Eggs are OK if that helps. I really appreciate...

ARCHIVED 1St Gluten Free Holiday Coming Up - Need Pep Rally!
scarlett77 replied to sahm-i-am's topic in Coping with Celiac Disease
I'm wondering... how does your cousin make his turkey? Do you know for sure it isn't gluten-free? Other than that I like the idea of bringing yourself and DD a plate of food so you can eat with the family. I would also suggest that you bring a gluten-free dish to share as well. I'm trying to keep Thanksgiving simple and just stay home with hubby and the... -
ARCHIVED Yet Another Flour Question

Oh great now I have to add a doughnut pan to my never-ending list of wanted cookware and bakeware. Sounds delicious! For those who don't have a pan in the meantime try the Pamnela's recipe for quick doughnut holes. It is a quick and easy cheat if you have a huge craving for doughnuts.

ARCHIVED Yet Another Flour Question
scarlett77 replied to 4boysmom's topic in Gluten-Free Recipes & Cooking Tips
I use Pamela's Baking mix as my all purpose. Use the chocolate chip cookie recipe on the bag and use butter flavored crisco in place of butter and you almost cannot tell the difference. The muffin recipe I use was actually a regular recipe from a magazine calling for "pancake mix" and have never had any rise issues with it. Since Pamela's already has xanthan... -
ARCHIVED Doctor Won't Confirm
scarlett77 replied to bellac's topic in Parents, Friends and Loved Ones of Celiacs
OK, my take on the situation is this: she tested positive for BOTH blood and scope. How can the doctor not diagnose based of those results? If it acts like a horse and looks like a horse it is a horse. My suggestion is to take the results of the positive labs and endoscopy to another GI and see if s/he can give an official diagnosis. There is NO WAY in... -
ARCHIVED How Long To See A Difference On Gluten-Free Diet?
scarlett77 replied to ToHelpMySon's topic in Parents, Friends and Loved Ones of Celiacs
Johnson's head to toe wash is gluten free. Generally my rule of thumb is that it is OK if processed in the same facility but NOT on the same equipment. Food products do have to list wheat, but they do not have to list barley, rye, or oats. This can get tricky because you would be surprised the amount of things that barley/malt is hidden in like yogurt. I... -
ARCHIVED Bagels
scarlett77 replied to AlysounRI's topic in Gluten-Free Foods, Products, Shopping & Medications
They are by far the best I've had. Like the bread, you don't even need to toast them. I will warn you though they taste more like bread than bagel. But still good. -
ARCHIVED Caramel Apples
scarlett77 replied to JCastro's topic in Gluten-Free Foods, Products, Shopping & Medications
Quite honestly I wouldn't trust any caramel apple company to not CC their products. I recently ran across a recipe for "apple nachos" (I believe it was either in Better Homes & Gardens or Taste of Home) and it was just taking apple slices and drizzling melted caramel on them and top with marshmallows, mini chocolate chips, nuts, and sprinkles. My boys... -
I typically buy 6-8 loaves frozen and keep in the freezer. I will pull one loaf out and let it defrost in the fridge and just store it in the fridge. If I need to defrost quickly I will just use the microwave.

ARCHIVED 10 Month Old Son With Gluten Or Wheat Sensitivity?
scarlett77 replied to bswmama's topic in Parents, Friends and Loved Ones of Celiacs
The blood test (called a RAST) for allergens is notorious for being inaccurate. But that being said, if it is an ALLERGY you do not need to be pumping him full of anything for his blood to test positive. My Nephew tested positive for nuts and milk and he does have a serious nut allergy. I don't see how it would hurt to run a RAST test on him. It does sound... -
ARCHIVED Typical Weekly Menu?
scarlett77 replied to blondie1985's topic in Gluten-Free Recipes & Cooking Tips
I'm just going to do dinners since breakfast & lunch vary widely at our house due to me working and kids stay home with Dad. These are kind of broken up by type which is basically how I plan my meals and rotate. Dinners: Stew (beef or chicken) Pasta- either homemade mac & cheese or homemade meat sauce, with salad or steamed veggies and gluten... -
ARCHIVED Help Please. My One Year Old Has Been Diagnosed With Celiac Disease.
scarlett77 replied to Sammys-mom's topic in Parents, Friends and Loved Ones of Celiacs
My special gluten-free staples are: Chex Pamela's Baking & Pancake Mix Chebe Mix (Original or All Purpose) Tinkyada Pasta (I prefer the spiral and shell shapes for little ones) Udi's bread Van's gluten-free waffles or french toast sticks San-J Tamari (soy sauce replacement) Annie's or DeBoles box Mac & cheese Other than that everything... -
ARCHIVED Kraft, Conagra, Unilever
scarlett77 replied to nikaku's topic in Gluten-Free Foods, Products, Shopping & Medications
To add to this discussion I think that Unilever may have made some changes in the last year or so. I know this was brought up in another thread but the regular original Lipton Onion soup mix USED to be gluten free but now has barley listed on it. For the record, it is not the kosher brand i was looking at either. I have started experimenting by making my... -
That is helpful information, thank you!

It looks like their "rib rub" is the issue with the pork (ribs and other pork): Molasses Powder (molasses, wheat starch, soy flour) On the Beef it looks like not only is the "molasses powder" in it but also soy sauce. The fish has soy sauce in the glaze and I'm not entirely sure you can order it without the glaze since is may be prepped for cooking...

ARCHIVED Made In A Facility That Also Processes Wheat
scarlett77 replied to sherrylynn's topic in Coping with Celiac Disease
This is what I go by...I will buy stuff made in the same facility, but not on the same lines. -
We just got a Famous Dave's BBQ place in San Jose, CA and so I emailed the company to find out if they have any menus or gluten free items safe for my son and I received an email with an ingredient list for their entire menu. After skimming the whole thing it pretty much looks likes only chicken,a few of the burgers, and some of the sides are gluten free...

ARCHIVED Toddler's Diarrhea?
scarlett77 replied to westernblotmommy's topic in Parents, Friends and Loved Ones of Celiacs
I wholeheartedly agree!!! Colic is a catch all "diagnosis" that is utterly useless. I've never heard of "Toddler's diahrreah" before but it sounds like a load of crap to me (LMAO). -
ARCHIVED Help! - Biopsy Preparation
scarlett77 replied to Taryn's Mom's topic in Parents, Friends and Loved Ones of Celiacs
I can't remember the specific levels but she looked at the levels IgA anti-gliadin antibodies, IgA anti-tissue transglutaminase, and Deamidated gliadin peptide antibody. Those levels were supposedly consistent with Celiac along with the fact that his iron levels were extremely low and pointed to malabsorption which is pretty common in Celiac. She was pretty... -
I use Pamela's a lot too. It works very well in some recipes. I also use it for gravies, roux, and dredging. As long as you don't mind the almond meal it works very well. I even use it to make mac & cheese. Like above says make sure you omit the baking soda/powder and salt. I've never reduced the fat in my recipes though.

ARCHIVED Help! - Biopsy Preparation
scarlett77 replied to Taryn's Mom's topic in Parents, Friends and Loved Ones of Celiacs
If your GI suggests that she should be off gluten regardless of the biopsy results then I would go with that advice. Our GI said that things looked fine when she was in there, but the results ended up being positive. She already had a strong suspicion based on the blood results that my son had Celiac Disease so she was not deterred by what she "saw".
