  1. I do chicken pot pie empanadas which my old recipe called for pillsbury refrigerated pie crust. I have found that I can do a very good replacement using Chebe mix. I think they have a pie crust recipe using their mix too but I have not tried using it in that way.
  2. In & Out if they have them there. Ask for protein style burger and a separate box for your fries. Tell them you have a wheat allergy and to change their gloves. Usually they are pretty good about this. Try to make sure it is not peak hours because it will take more time for your food.
  3. I've heard Progresso has an condensed cream of mushroom but I've never used it. The one recipe that I have that originally called for cream of chicken soup I've found this way to get around it: 1 tbsp of butter 1 tbsp of flour mix of choice 3/4c-1c of chicken stock or broth If you want it to be actually creamy, I would try using 1/2c-3/4c of chicken...
  4. No & No actually. My husband and I have had very similar issues. We were especially upset with my family because at first they didn't take it as seriously as we did. We were told that we were being overly protective and taking it way too seriously. I have major issues with this way of thinking. It is my JOB as a parent to ensure the safety of my kids...
  5. Our faves: Fried chicken w/mashed potatoes & gravy (and sometimes biscuits)- use Pamela's baking mix, salt, garlic powder, and parmasean for breading Chicken pot pie empanadas - use chebe mix to make the empanadas and pamela's mix, butter, & chicken stock for the filling along with leftover chicken, potatoes and frozen mixed veggies "bagel...
  6. Absolutely experienced this with my son. The first thing we noticed going gluten-free is that his energy level went through the roof. His attitude changed a bit and we had a bit more difficulty with getting him to follow direction, not talk back, etc. But this all coincided with the "terrible two's". I was expecting him to start throwing more tantrums not...
  7. I use J&J Head to Toe should be fine. I use it on my boys. I can't answer about DH, but I try to make sure most of our products are gluten-free because I think that my son actually has a wheat allergy on top on the Celiac. I even make sure my makeup is gluten-free so I don't have to worry about him kissing my cheeks and getting a reaction.
  8. I haven't used it for bread, but I've baked mini cupcakes and a giant cupcake in them. I found that the mini cupcakes did not need extra time. The giant cupcake did need extra time, but I think that had more to do with the fact that I forgot to move the rack to the right position for optimum baking. My suggestions is to make sure that you are using the...
  9. Been in a similar situation and our Pediatric GI doc told us the window of opportunity to introduce gluten is between 7-9 months old. I don't agree with the 4-6 month old since it really isn't recommended to give solids before 6 months. I would wait and see how your baby grows and develops. Some babies are ready for solids earlier than others so use the age...
  10. Wow I learn something new everyday...I had no idea that vitiligo was a possible sign that you have an auto-immune disorder. My celiac son has a patch on his upper thigh since he was about 4-6 months old. It has never moved or grown though.
  11. I use Pamela's pancake and baking mix. Might not be the most cost effective thing to use, but I always have some on hand and I like the fact that it has almond meal in it. Works great...I've had no complaints. gluten-free Bisquick would be another alternative if you can find it.
  12. Formula has a higher nutritional/caloric value than cow's milk I thought so I'm not sure that doctor is right. I would check the formula though seeing as I've heard of issues with formula not being gluten free. If he is over a year old and it is available in your area you might want to try some Pediasure which is a high calorie drink that is supposed to help...
  13. Yeah we generally do fruits, cereal, and yogurt (obviously you can't do that one). But like someone else said I wouldn't limit to just "breakfast" foods. I'm not above rice & beans for breakfast. Does he like sausage or bacon? Spanish tortillas, frittatas, and omelets are great for breakfast AND dinner. Can he have any nut butters? If so maybe try some...
  14. The first thing we noticed was his energy level increased and his naps got shorter. It was a couple of weeks when he started looking healthier (skin complexion, darkness under eyes lessened). It was about a month to see real weight gain and growth and ...chubbier cheeks! Be patient, it can take a long while to heal and recover.
  15. No it isn't always yellow from my experience. I've seen just about every color: white, tan, yellow, green, bright green, brown, black, and a couple of times a tiny bit of blood (with black stool). The consistency has been all over the place too from mushy, grainy, formed, and hard pellets. Some floated and some didn't. My son ruined just about ever cloth diaper...
  16. How old is your son and are there any other symptoms that he is experiencing? Have you done an elimination diet? have you check for things other than Celiac & allergies (like thyroid for example)? This probably won't help you because I'm still having trouble with this myself. My son is only 2 years old so it is difficult for us to tell whether or...
  17. Personally, I would talk to school administrators and see if there was an alternative instead of taking the cooking class. I'm sure that they would not have a problem because his allergies are so severe. One of my best friends is a bone cancer survivor and for much of her adolescent and adult life she was either on crutches, or had a brace and was unable...
  18. I didn't see that episode but by what I'm hearing it seems that she was just incredibly dumb. I have seen an episode where one chef was actually allergic to one of the secret ingredients...I think it was eggplants. I felt bad for the poor guy because they didn't even give him gloves for it. He didn't back down and continued on even though he was having a...
  19. Rashes aren't always allergies so if he does have Celiac his allergy panel would likely be negative. My son was failure to thrive at about 20 months. He was diagnosed by positive celiac blood panel and positive endoscopy. If your son is off gluten then testing may not be accurate. Genetic testing from what I've read only show the gene trait but not if you...
  20. I seriously agree!!!! Would love to see some commercial gluten-free rolls out there or even a gluten-free wrapper alternative to rice paper. I love baked/fried spring rolls but don't make them often because they are a pain...or maybe I'm just lazy
  21. Awe I just want to give you a great big hug. I wish there was a hugging emoticon.
  22. Hmmm...maybe enzyme deficiency? How are you with meats and other starches like potatoes? I've read some of your other posts and I know this has been a long stressful battle for you. I hope you figure it out and start feeling healthy soon.
  23. Haven't tried this yet, but apparently Chebe has a recipe using a couple of their bread mixes for making perogies. I have some of their all purpose and original mix in transit so I can try out and experiment with some of the many interesting recipes they have.
  24. What exactly are the "high calorie" foods you are consuming? It sounds to me like there may still be a problem here. have you checked your thyroid at all?
  25. You do have to be a bit careful with this place though. We try to go during off peak times and ask that they change gloves for the protein burger meals and fries. One time we told them of the "allergy" and they handed us the regular burger with the bun in the same box touching the gluten-free ones. The were apologetic and did re-make the order. We still eat...
