ARCHIVED So Lets Add Sodium To The List. Ugh!
scarlett77 replied to Aphreal's topic in Coping with Celiac Disease
OUCH! That really bites! My only suggestion is to try to stay away from processed foods as much as you can and try to use alternative flavorings like garlic and onion and maybe flavored or infused oils. -
ARCHIVED "emergency Food Kit" Question
scarlett77 replied to MindytheOrganist's topic in Parents, Friends and Loved Ones of Celiacs
I remember that post too but I can't remember where it is either. Every time I leave the house with the boys I always make sure I have one or more of the following: raisins dried gluten-free cereal gluten-free crackers corn chips popcorn (typically un-popped microwave bag for times when you are at a friend's or family's house) fruit snacks/roll ups... -
ARCHIVED Gluten, Wheat, Dairy, Soy, Oh My!
scarlett77 replied to tina a's topic in Coping with Celiac Disease
To add really try to go during off peak eating times if at all possible. It really does make a difference in the service and attention you receive. And by all means BRING YOUR OWN SNACKS. We NEVER had a problem with bringing any food into the park. It really does cut down on some of the cost too. Granted we went to Disneyland (not World) and we are within... -
ARCHIVED Help Me, Black Poop Not Related?
scarlett77 replied to brendab's topic in Parents, Friends and Loved Ones of Celiacs
I agree with the PP...go to the doc. Black stool can mean a number of things medically and is usually a symptom of something else. As PP said that symptom led them to a diagnosis of crohn's. My son had the dark hard stool (along with some constipation) because of low thyroid. He's now on medication for it. -
That is wonderful! My family likes to go out to dinner to celebrate birthdays as well and it has been challenging to figure out safe AND kid friendly places for my son to eat. If you don't mind me asking which Spaghetti Factory did you go to?

ARCHIVED Store-Bought Bread?
scarlett77 replied to Superfudge's topic in Gluten-Free Recipes & Cooking Tips
I think this explains why so many of you don't like the pizza crust! I don't use a pizza pan for any frozen pizza. I put it directly on the rack. ALWAYS preheat your oven. Comes out crispy every time (a little too crispy for me since i prefer breadier thick crust pizza). I only use a pizza pan for fresh dough. -
ARCHIVED Help Me, Black Poop Not Related?
scarlett77 replied to brendab's topic in Parents, Friends and Loved Ones of Celiacs
To add black bowels typically mean that blood is present. It could be caused by constipation which can be from a number of issues including Celiac and thyroid hormone issues. Go to the doc. -
ARCHIVED Need Advice From The Seasoned gluten-free Folks
scarlett77 replied to pixespirit's topic in Coping with Celiac Disease
I would check that you aren't getting gutened somewhere because some of those things (like the healing time) may be a vitamin deficiency. I personally am not Celiac (my son is) so I can't really answer the question about becoming more sensitive, but I too have read that many Celiacs do seem to have more acute reactions after being gluten-free for a long period... -
I would try adding more fiber into your diet and maybe trying to alternate other sources of starch like corn and potatoes. As others have suggested try other grain sources like quinoa, flax, millet, etc. Quinoa is a good source of protein as well and pretty tasty so I would try that. If you still find you are having problems, maybe try to shoot for a couple...

ARCHIVED Suggestions For Toddler Party
scarlett77 replied to precious831's topic in Coping with Celiac Disease
Taquitos would be a great finger food option. I'm sure you can find an appropriate recipe if you google it. I typically use chicken (pre-cooked shredded from whole rotisserie chicken or roast a chicken in crock pot ahead of time) sauted in olive oil with garlic, onions, with some salt, cumin, and cilantro. Soften corn tortillas in boiling chicken stock (about... -
ARCHIVED Store-Bought Bread?
scarlett77 replied to Superfudge's topic in Gluten-Free Recipes & Cooking Tips
Like everyone else has said Udi's is the best. Whole Foods carries it and so does some Raley's/Nob Hills grocery stores. You can buy online, but man the shipping is a killer. If no one around you carries it try talking to the manager of your local store and see if they would be willing to bring it in/order for you. About the pizza crust...if you like... -

ARCHIVED What Does Gluten Free Mean?
scarlett77 replied to discodiver's topic in Coping with Celiac Disease
When I read "Gluten Free" I'm under the impression that a product with such a label is advertising that the product is free of wheat, barley, rye, and oats. Of course I still read the label because there really is no regulation set on labeling something as "Gluten Free". "Wheat free" means just that...there is no wheat but there could very well be barley... -
ARCHIVED New And Slightly Overwhelmed!
scarlett77 replied to nikelodeon79's topic in Coping with Celiac Disease
Welcome and glad you are on the road to recovery! This place is a great resource for information and personal experience. I also like reading blogs by "Gluten Free Girl & the Chef" as well as "Gluten Free Goddess" some great recipes and ideas on those sites as well (just google them for the links). I've also found some great information from "Living Without... -
ARCHIVED Colic And Projectile Vomiting
scarlett77 replied to Chakra2's topic in Parents, Friends and Loved Ones of Celiacs
Only 1 of my children had projectile vomiting and colic as an infant and that is the 1 that definitely does not have Celiac. Our diagnosed son was almost a perfect baby...but I don't think Celiac was triggered until he started solids quite honestly. Vomiting was never one of his symptoms though even though I hear it is common. -
ARCHIVED Do Any Of You Wear A Med Bracelet?
scarlett77 replied to Aphreal's topic in Coping with Celiac Disease
As an adult, I probably would not get one for myself unless I had actual severe allergies. But I do plan on getting one for my son in the near future so that it can alert adults that he comes into contact with... whether at school or at a friend's house. I'm hoping that having the medical bracelet or necklace may give him more credibility with adults when... -
ARCHIVED Breastfeeding-- Does Gluten Travel Through Breastmilk?
scarlett77 replied to BrooklynFamily's topic in Parents, Friends and Loved Ones of Celiacs
A couple of things I want to point out here...#1 as Raven said even if child #2 is predisposed it may not be ACTIVATED. As you said your first son was fine up until certain point. Mine was the same way. Activation could be triggered by just about anything at anytime from what I understand. #2 It was recommended to me by my GI that we introduce wheat and gluten... -
ARCHIVED Need Gluten Free Marinades/bbq Sauces
scarlett77 replied to Grace'smom's topic in Parents, Friends and Loved Ones of Celiacs
I use Sweet Baby rays as BBQ sauce too... very good stuff. I use Tamari for soy sauce and I don't think I would ever recommend using just straight tamari OR soy sauce as a marinade. Here's one that I found recently that my kids ADORE...great marinated overnight on chicken legs (or breasts) as well as to dip french fries: Oh man...I don't have the recipe... -
My 2 year old is Celiac and when he was diagnosed we decided that we would make the whole household gluten-free. We didn't want to take chances with CC. I did introduce some wheat to my 1 year old when he was 7-10 months (on our GI's recommendation) and have on occasion when eating out given him gluten items but I try not to bring gluten into the home. We...

ARCHIVED Poop Question/distended Belly
scarlett77 replied to MacieMay's topic in Parents, Friends and Loved Ones of Celiacs
I can't answer the question about the belly distention but I can tell you my experiences with my son's poo. His could not be deemed as "typical" since it varied so much. He's had all colors: white, tan, green, bright grassy green, dark brown, and black. The consistency has also varied: mucousy, soft and grainy, formed, and small pellets. One thing that was... -
ARCHIVED gluten-free Bisquick (You're Gonna Laugh At This)
scarlett77 replied to scarlett77's topic in Gluten-Free Recipes & Cooking Tips
Yeah I've been hearing about the sweetness so thanks for the head's up on that. I'm thinking I may try to experiment with a form of chicken pot pie. I used to make these chicken pot pie empanadas that my family loved and miss...I may try that or just use the one from the online recipe with the biscuits on top. Thanks for the ideas and feedback! -
ARCHIVED gluten-free Bisquick (You're Gonna Laugh At This)
scarlett77 posted a topic in Gluten-Free Recipes & Cooking Tips
OK so I was shopping at my favorite grocery store the other day and low and behold they had gluten-free Bisquick! Tiny a$$ box, but I wanted to try it out so I bought it. Now I'm wracking my brain on what the heck I could use it to make... any suggestions or votes? I mean there's always the ever obvious biscuits...but I was hoping for something a bit more... -
ARCHIVED Endoscopy And Anxiety
scarlett77 replied to dkelm's topic in Parents, Friends and Loved Ones of Celiacs
Honestly I wouldn't put too much stock into the nutritionist. We saw a highly recommended dietician 2x and the only helpful information I received was about cross contamination, toiletries, and some common names of wheat, barley, and rye. It is a good starting point but I learned much more information online. -
ARCHIVED Sunken Eyes A Symptom?
scarlett77 replied to brendab's topic in Parents, Friends and Loved Ones of Celiacs
It is typical of iron deficiency which is common in Celiac children from what I've heard. May want to get levels checked.
