  1. Today I had some leftover quinoa and I bought some spicy cilantro pesto and added them together and it was DELICIOUS. I don't like quinoa plain but it just takes on the flavour of anything you add to it. I was thinking with some grilled veggies and a salad, this would be really good.
  2. No, he likes healthy food, just tok great offense at this particular one And I don't even use gluten modified recipies any more, I typically just use naturally gluten-free foods.. I just thought that I could write this cookbook! (Recipe: Apple. Wash and Eat)
  3. you may still have some trouble digesting fat, cashews have a lot of fat in them. As well, they may be contaminated if they are processed on lines that also contain wheat...Hard to tell and not everyone is that sensitive.
  4. Hello One month is not very long....I would definitely give it some time...I have been at this a year and still have stupid neuro problems that come and go but am much better..It takes us a long tmie to get this sick so it can take some time to feel better...
  5. What did your Dr. tell you? The negative TTG indicates that you do not have celiac, but false negatives are common. I believe TTG can be very high if there is lots of villous damage, but can be negative in true celiacs as well. The gliadin antibody indicates some sensitivity or antibody production against gluten, but I believe it can also be positive randomly...
  6. 1) Yesterday I made some energy bars with peanut butter, coconut, honey, oats, flax seed and chocolate chips. I didn't have any oats, so I actually cooked quinoa and added it. Did not have honey, so added maple syrup. They were really tasty. I gave 3 to my husband, he ate one and said "you POOR thing! Is THIS what celiac has reduced you to??? Thinking this...
  7. In a standard sense, the basics are pretty simple...I cannot imagine a dietician or Dr that can't even give you the basics (ie fruit! vegetables! meat!). The newbies can't possibly know this but I bet most people HERE could give better food advice than we are getting from professionals. I think they need to get away from REPLACEMENTS for the foods and start...
  8. Which is absolutely f*@%ing crazy AFAIC because the province could save themselves sooooooooo much money by properly diagnosing Celiac disease rather than continuing to misdiagnose it as IBS and treat its symptoms and just make people sicker.
  9. Hi I am from Burlington Ontario...My celiac was diagnosed by accident by a neurologist who, even after seeing the SKY HIGH antibodies I had insisted it wasn't celiac. Unfortunately, as far as I can tell, in Canada we do not seem to have these Celiac hospitals or centers that I see in the US. The GI I saw basically said " yeah, you have Celiac. See a dietician...

  11. I don't have a lot to contribute to the other intolerances except that I hope you find out what it is and soon...That is horrendous. Newbee, 6 weeks isn't a long time at all. You could have been sick for years and not really known it. Give yourself time. Some people feel better quickly. Many many more I suspect struggle. Good luck!

  13. Once i got glutened i had D for 6 weeks, insomnia, anxiety, nerve pain, joint pain... last week i did something stupid and had nerve/joint/muscle pain and anxiety but it only lasted about a week...No D this time.

  16. Yes, you are both right. I think it is lovely that they asked, I just know how stressful weddings can be! I have just never seen this before nor have I been to a wedding since I became gluten-free, so I really didn't know the protocol and wanted to avoid causing any inconvenience.

  20. In short, blood tests can often have false negatives. Your GP is correct about the gene test in that if you have the gene, you can develop celiac but won't necessarily. If you have the genes, close relatives with celiac, symptoms of celiac (vitamin deficiencies likw B12 and folate) which resolve on a gluten-free diet, then chances are you have celiac.
