In trying to determine what food has caused your reaction, you really need to keep a food journal. It wasn't until I did that I realized I was not reacting to foods I had just eaten, but to foods I ate three days earlier. I have also started keeping track of different brands and keeping labels for reference. Some day I will get it all figured out. -

But according to EnteroLab testing I am gluten sensitive, but I do not have either one of the celiac genes. I have two gluten sensitivity genes (one the same as Raven). Until the "experts" get it figured out, I'm gluten free. However, it does make a difference for my son. He was diagnosed celiac as an infant, lived two years on soy milk, rice, bananas... -

Peter, I am not a celiac. I am "just" gluten intolerant. However, I have had vitiligo and peripheral neuropathy for 25 years. I believe both of these are thought to be autoimmune reactions. -

In the books I've read, vitiligo is often mentioned as a symptom of celiac. I have not seen any mention of it on this forum and wonder if any of you have had any experience with it and if so, have you seen any improvement? My vitiligo started about 25 years ago at about the same time as my neuropathy.

I am not super sensitive so that could make a difference. Their box states that each production run is tested to not exceed 20PPM.

I have not had any problem with corn. In Iga testing it was high normal but not a problem. In season, I have had half a cob every day but limit it to that. I have problems with neuropathy in my feet. The burning at night keeps me awake. However, if I go back to my "safe dozen" I have no problem. I had thought that neurological problems would heal gradually, so I am surprised that it can vary so much for me in a few days. This week is good--last week was bad--the week before, good. -

You're right about the agave. It was the first sugar problem I became aware of--it was in one of my supplements. Supplements were the first thing I tested in my elimination diet. -

I have had very little experience baking bread. With all the good varieties avail pre-gluten-free, I didn't see the need to bake my own. Now, in addition to gluten intolerance, I also have a problem with sugars and honey (Udi's doesn't work for me). Is it possible to bake a yeast bread without sugar or honey?

It has taken me four years to get my vitamin D levels up to mid-range taking 5,000 units a day plus an extra 50,000 weekly. I've just been gluten free since January. -

For me, all the symptoms he has been having are a sign that I have been glutened. Fatigue, sleep problems and depression. He needs to check his food carefully. -
