  1. Yeah I didn't really have to do anything either once going gluten-free. But I am not a big exercise person, so that's how I want to improve, and I think it will help me lose all my excess flab.   2. On a related note, I have to brag about my coworker. Not that she is on a gluten-free diet or nuthing, but its same subject. I am so proud of her, she has lost 80 pounds and looks AMAZING! But even more astounding is the fact that she is off her meds and such for heart problems and things of that nature. (Not sure all the health problems she had) But...
  3. Okay, just wanted to say that in the three months I have been gluten free, I have lost 33 pounds. I am currently at a mostly healthy weight of 127, after for a year and a half of HORRID health and rapid weight gain up to 160 pounds (I gained the fourty pounds in just two months, which is crazy, since most of the time I am worrying about LOSING weight.   4. Okay, so instead of eating what everyone else was having, I ate a salad... Yeah, lettuce, spinach, and sundried tomato vinagrette dressing. I had chicken and vegetables to go with it, but I just wanted salad... Is that crazy or what? (And of course, I never heard the end of it from my siblings.   5. So the other day, I decided to be dumb and not plan ahead what I was going to eat for lunch. I also was counting on the fact that it was one of THOSE days, and I am never hungry on THOSE kind of days. But at about 2:45 I got dreadfully hungry. So I went to the food court. Went and got some mexican food, (special order of course) and not five minutes later...
  6. hahahaha well jest, I did end up telling her today to bag the whole thing when she got frustrated when she couldn't find xanthan gum. (To which she replied, but I want you to be able to eat what we eat... I said, "Mom, I am used to not being able to eat what you guys eat." So she then told me fine... But she did seem a little disappointed.... Oh well...)
  7. So I work in a law office in the copyroom/mail room. We may be the runts of the firm but we sure get one heck of a lot of presents when Christmas comes around. Only one problem.... All the presents come in the form of food. And even if I could eat the things I am intolerant too, its way too much... Oh and did I mention... SWEET Choco9lated covered pretzels...

  10. So on Saturday, I finally succumbed to my pizza cravings. But I didn't make it homemade like I should have. I bought it from a local restaurant that assured me that it did everything to ensure it would be gluten free, from changing gloves to washing hands, to putting it on its own special tray.   12. I haven't found canned chili beans yet that are safe. Walmart's says that they may contain wheat so I don't trust them. I personally just prepare my own beans from the packs of dried ones. Lemme know what you find though!
  13. I am not sure about the Kroger Brand items. Although I did at one point find a list of their products that are gluten free. I will look for the link again and post it. I personally wouldn't trust chili powder though because it is a spice mix, and that is usually where you get into trouble. If you have a whole foods near you, their chili powder is okay...

  15. So as you may remember from other threads I have made and posted in, I have lost a lot of weight and am still losing a lot of weight after being on a gluten free diet. Which yes is a good thing as just in a couple months I gained 40 pounds. This is something that is highly unusual for someone who has never gained more than 5 pounds in that amount of time...
  16. I normally don't use flour in my chili either, as like many above me have said, I don't really add water, most of the liquids come from the tomato paste. But if you want to thicken something, I swear by my arrowroot starch. (Warning, a little bit goes a long way and don't heat it too fast.)
